Meal Plan Monday 10/21

IDK if we've ever done one of these-- and if so, it hasn't been for a while, which makes sense since First Tri is such a roller coaster. Anyway, I know I will benefit from planning more in terms of meal-stuff, so hopefully this thread will be helpful.



What do you meal ideas look like this week? Bonus points for follow-ups that include recipes/pics when something works out well! Extra credit for things that are both delicious and healthy.

  • I basically eat SOMETHING every 2 hours, so usually there is a small meal in-between lunch and dinner, but I’m not going to guess ahead what I’ll eat for that. I am just thinking ahead about what I might cook, and how I might utilize leftovers effectively. Here we go 

    Monday/Tonight: faux nuggets with ketchup (bc I already ate couscous leftovers at 5:30pm) and leftover cucumber salad

    Tuesday/Lunch: leftover Potato soup, probably?

    Tuesday/Dinner: Butternut Squash soup with kale (interchangeable with Wednesday dinner)

    Wednesday/Lunch: Not sure yet! If there's still potato soup, maybe that. Maybe faux nuggets... 

    Wednesday/Dinner: I have been wanting to make a grain bowl—with quinoa probably, egg (I need more eggs in my life), avocado, edamame, and something else-- probably using one of the recipes on that link as inspiration, but trying to stay within my "heartburn friendly" diet (interchangeable with Tuesday dinner). Also, I like this site's grain bowl formula!

     Thursday/Lunch: Leftover Butternut Squash Soup

    Thursday/Dinner: We will be on the road, but there’s a Trader Joe’s on the way, so I will probably have a shrimp spring roll w/ peanut sauce, OR tofu spring roll w/ peanut sauce on the way to our friends’ house, and/or maybe whatever they are making depending on what time I get there? 

    For breakfasts, I alternate between yogurt bowls w/ granola, matcha, chia seeds, protein powder and bananas OR cereal with milk OR oatmeal w/ added stuff like the yogurt bowls, but less added stuff + some brown sugar, and I've been making tea lattes lately. 

    For in-between snacks, my main go to when not leftovers is an apple with peanut butter. I really want to make rice krispie treats, which I know isn't healthy lol, but still. I also have whole wheat crackets and colby jack cheese for snacks!

  • Ahh @kagesstarshroom I love this idea! I haven’t done my plan yet, but I made some BOMB chicken pot pies for dinner tonight! I’m finally starting to feel like cooking again. 

    Also I loooove quinoa bowls. I used to make them every other day when I was Gf/df/vegan! My favorite is a pesto bowl with veggies and a vegan pesto I found at Trader Joe’s. Yum!! 
  • Ya’ll, I’m gonna let you in on my little meal planning secret (or could be not so secret) but the meal delivery service, Blue Apron, has all of their recipes posted online here: www.blueapron.com/cookbook. Their recipes almost always use seasonal produce and similar ingredients, so I just pick out 4-5 each week for dinner and buy the ingredients at the store instead of ordering them delivered! Cheaper than the service but I have one go to place to find great meal ideas.

    For breakfast I do portable stuff I can take to work: oatmeal cups, yogurt, or muffin, with whatever fruit is in season/on sale. 

    For lunch I used to do the typical sandwich with baby carrots, fruit and chips, but now that lunch meat is out and I haven’t felt much like packing lunch, I’ve been doing Healthy Choice bowls, Amy’s or Love frozen meals, soup or ramen, still with fruit on the side.
  • Love this thread! I meal plan every week for the following week on Tuesday or Wednesday night. On Sundays I do all the meal prep for the breakfasts we eat during the work week. Pre pregnancy this was just one thing but I have found that isn’t enough in the morning now I usually eat breakfast around 6:30, snack around 10, lunch noon, after work snack at 3 and dinner around 6/7. That’s a lot of eating lol.

    This week for breakfast we have egg “McMuffins” with Canadian bacon and skinny taste pumpkin cream cheese muffins. For lunch I eat leftovers from last nights dinners. My snacks include yogurt, protein/granola bars, fruit, and cheeses. Sometimes I switch that up depending on what we have. Here is a pic of this week’s meal plan. It’s almost all from different skinny taste cookbooks this week but sometimes I use recipes from the internet (usually WW stuff that others have tried and loved).

  • Thanks for bringing this thread back! I have fallen down a black hole of convenience foods and take-out and I need to get it together. So you ladies have inspired me to make a meal plan and get some groceries.

    I got a rotisserie chicken to make apple chicken salad wraps, and I’m going to air fry a turkey to do a mini thanksgiving style dinner so I can have leftover thanksgiving sandwiches, which are my favorite. Guess I’m going to be on a sandwich kick! And then I’m going to make potato, broccoli, cheddar soup. Hopefully these meals will follow the “cook once, eat multiple times” philosophy and we can have healthful meals with limited effort. 




  • @momoftoddlers love leftover turkey sandwiches. I have to know, do your kids eat the food you cook? Asking bc mine will not!

  • @AAAG13 It’s a toss up if the toddlers will eat everything I cook because their opinions change every hour. I try to make something they love, like spaghetti and meatballs, at the start of the week so there’s leftovers of that if I end up making something later in the week they truly don’t like. But generally I keep serving them things in hopes that they’ll eventually develop a taste for them. And ketchup always helps, like for the turkey. And we eat different lunches, I tend to do more kid foods for them at lunchtime like mac and cheese, nuggets, or pizza bagels, with fruit or veggies. 🤷🏻‍♀️
  • Oh I love this!  I do the planning of my meals every Sunday morning and then go to the store that day to get everything we need for the week.  My partner has been helping out so much since I got pregnant, so he comes to the store too and it's fast and easy peasy for the rest of the week.

    My lunches are always the same -- some variety of a turkey sandwich with cottage cheese.  I don't really eat leftovers, but luckily my partner will.  I'll eat snackies throughout the day (I need to get more fruit and less nutri-grain bars). 

    Dinners for this week have been:

    Sunday - jalapeno chicken popper spaghetti, which was surprisingly amazing!  My partner made it so I just got to enjoy it.  I helped with the homemade cheesy garlic bread, though!

    Monday - Green bean chicken casserole, which is sooooooo easy and soooooo delicious.  Reminds me of Thanksgiving.

    Tuesday - Taco Tuesday!  Except it was cheesy chicken quesadillas, which I have been craving so much.  Also homemade queso dip and tortilla chips.

    Wednesday - Spaghetti with more cheesy garlic bread. :) 

    Thursday - Tomato soup and grilled cheese night!  I'm so ready!  I need to swing by the store though because I forgot to get more oyster crackers.  They were all sold out on Sunday because everyone makes chili these days, lol.

    Friday - Pizza night!  We used to order pizza from various places, but we've started making our own pizzas instead and (1) it saves a lot of money, and (2) it's extremely delicious because you can make it however you want and add as much cheese as you want without a silly up-charge.  (Can you tell I'm all about cheese?)

    Saturday - This is the one night a week that we usually go out for a date night so I have no idea what we'll do this Saturday but I'm hungry for it already.

  • Lately for breakfast I’ve been into cereal (current favs are special k red berries and Raisin Bran) and I make DH sausage and egg breakfast sandwiches. 

    Lunches are usually leftovers or sandwiches and fruit. 

    I meal-plan on Thursdays for Friday-Thursday. This weeks dinners are:

    Friday: Homemade pizza and salad
    Saturday: DH’s dinner (he makes one dinner a week)
    Sunday:Tortellini bake with zucchini and red pepper
    Monday: chicken pot pie (thanks to @“miss.sally")
    Tuesday: Brinner
    Wednesday: Goulash
    Thursday: leftovers
