Re: Meal Plan Monday 7/1

  • I think mine is basically recycled from last week because we had a ton of leftovers to eat and I cooked basically nothing 🤦🏻‍♀️

    Monday: nachos
Tuesday: instant pot rotisserie chicken with mashed potatoes
    Wednesday: chicken enchiladas
Thursday: crescent roll hot dogs, baked beans, red white and blue poke cake
    Friday: leftovers

  • @mrsjesss crescent roll hot dogs sound delicious for the 4th. I may have to do that since dh is working. Ds would love them!

  • @kbrown2385 yes! MH wanted to grill after he got off but that would mean not eating until at least 7 so I voted no. We really need to try grilling pizzas
  • All you ladies have it so together with your meal plans. DH works from home and doesn't let me in the kitchen anymore so my input is solely in requests for food. I feel guilty about that especially when today I made him run to the store to get more eggs because I thought we were having a really good egg, kale, potato, corn hash and we didn't have any eggs. Nothing else we had sounded good...

So I peruse your meal plans to get ideas.

@kbrown2385 your Korean beef bowls sound yummy!

@MrsJessS what is red, white, and blue poke cake?

Monday: Cajun chicken and sausage pasta
    Tuesday: Aloo Gobi with naan
    Wednesday: butter chicken with rice
Thursday: grilled chicken, baked Mac and cheese, and a veggie
Friday: who knows--this is where I stop meal planning
  • @biolprof and they are super easy too! I double the sauce because I like more.

  • @kbrown2385 I make the exact same Korean beef bowl recipe at least once a week! I sub fresh ginger for the powdered but it’s so fast and easy. It’s nice as leftovers the next day with a fried egg too!
  • @kbrown2385 that looks so good! im definitely going to try it!

  • @mama_stef a fried egg sounds delicous on it! Maybe ill add it to when i make it for dinner.
  • @biolprofhttps://www.shakentogetherlife.com/2017/06/red-white-blue-poke-cake.html

This is the one I’m making. It’s basically a white cake then you poke holes in it, pour jello on, then refrigerate. Topped with cool whip. It sounds soggy and gross but I promise it’s not! Link above has pictures that explain better than worlds lol

Thanks @kbrown2385 for the recipe. Might try it!

@MrsJess that sounds so crazy it might just work 😉 I wonder how it will handle GF cake. It's so delicate...maybe it will make it stand up more with the Jello. Will have to try and see!

    ETA: words
  • We fend for ourselves for breakfast and lunch...Dinner is usually made by me.

M-Cold pasta salad and portobello burgers
T- Veggie tacos with quinoa and corn
W- Grilled Veggie kabobs with Veggie Burgers and Slaw
Th- Cauliflower salad and chickpea sliders
F-Veggie Pizza with crushed cashews and  nutritional yeast

We are vegan..and most likely I will be going gluten free within the next month which will complicate things

  • @justsuzie what's your rationale for GF. I'm a Celiac so I'm forced to be GF. I can't imagine being vegan too. Gotta eat something!
  • @biolprof I would think it might do well? I’ve never baked GF but my understanding is that it usually doesn’t “fluff” as much? I would think the jello might not spread as well and the texture might be a little different. But not necessarily in a bad way. Maybe also experiment with more, smaller holes? This recipe says to use a wooden spoon handle but I usually use the fork thing in my two prong knife block (totally a professional chef)

We wound up buying a Costco cake today so I got off the hook and don’t have to make a cake for tomorrow after all lol
  • @MrsJessS yeah I will try it sometime. I told DH about it and he was like oh I've heard of that. How come I taught him everything he knows about cooking and he knows that one 😂 I'm glad you are off the hook especially considering you have an extra person hanging around today!
