Lol- I swear, you and I are in the same mind set today. I'm planning to make cupcakes, and I've been organizing Eva's clothing bins all day. Cheers, due date buddy!
I can put the recipe up, they're seriously easy to make and come out great every single time. I've gotten so many compliments on them since I started using this recipe, I wish I could take credit for it! I was so tired of having my Tollhouse recipe cookies coming out flatter and flatter every time.
I use parchment paper to line my cookie sheets (I've actually never done this before, but I had a box of paper I'd never opened, and never heard of greasing a cookie sheet before, so this sounded like a better option).
I've made them straight from the mixer, or refrigerated the dough first, and they turn out fine either way. I also made a batch with nuts (1 cup of chopped walnuts), and those were great, too. I only get about 15 cookies per batch, so I usually make a double batch, but they come out great if you make them standard cookie size, too. If I make them the big size like the recipe calls for (1/4 cup scoops of dough), I bake them for 18 minutes instead of 15.
