  • I got an Instant Pot for Christmas and I'm a big fan of it. I can put in frozen chicken breast and have them cooked and shreddable in like 15 mins (excluding the time to get to pressure and the quick release). I'm a big fan of Instant Pot recipes so please share if you have one.

  • @catmommac We make this BBQ chicken in the Instant Pot and its SOOO yummy! We serve shredded on buns with coleslaw.

    My go to for easy dinners are super simple. Meatloaf, mashed potatoes, and a vegetable. Spaghetti with meat sauce (which I can’t eat anymore becuase tomato based anything gives me wicked heartburn), chili (again, can’t eat it), baked chicken thighs with rosemary, thyme and lemon, roasted sweet potatoes, and a vegetable.

    I love doing a pork butt or shoulder in the slow cooker and having pulled pork sandwiches. I use this recipe and I love it! I put in more bbq sauce in the end becuase I love it saucy!

    I also make fajitas by cooking a steak with chili powder rub and then I sauté onions and peppers with chili pepper too and serve it with tortillas and sour cream.

  • this thread is making me hungry...I'm a horrible cook or better yet a very unmotivated cook so I probably won't add much to this thread but I do love getting ideas! mostly I cook the same thing over and over or we have take out🤦🏻‍♀️

  • DH is a pescatarian and is gone next week, and now I want to make all of the recipes above to take advantage of my freedom to cook meat! 

    We love this smoked Mac & cheese and baked BBQ tofu dish. I haven’t made it in ages because I’ve had an aversion to cheese, but that’s slowly getting better. We sub smoked Gouda for the cheddar and use Bone Suckin’ Sauce for the BBQ sauce.

  • I make this poppyseed chicken and serve it over rice. It takes awhile to bake the chicken and then bake the casserole, but there’s not a whole lot of actual prep time, so it’s nice when you have time but have other stuff to do around the house.

  • @luckystar28 I know how to cook (I swear I do!) but rarely actually make the effort to put together an entire meal. I’m soooo lazy.

  • DH cooks but I bake. I made these over the holidays but used two eggs instead of one and three cups oats instead of two. I also added cinnamon and used Ghirardelli chocolate chips. It could stand cloves or molasses too, as well as finely chopped nuts. I made about two dozen from this recipe. They turned out great.

  • This is my all time favorite lasagna (I almost double the shredded cheese when I make it so maybe that's why) but it's great to prep on a weekend and then bake on a weeknight if we have company coming over.

  • @carleym93 I struggle with daily meal planning so much. I feel like I lack total creativity for it. Plus my toddler refuses most of what I make. Do you like the instant pot? I have read so many mixed reviews. also YGPM!

  • I have like 4 things I cook well other than that DH does the cooking. In all fairness he gets off work at 330 and I dont get off till 5 so it makes more sense for him to cook but I also am just not good at it.
  • Full disclosure (as mentioned above) I don't cook so I can't confirm the ease of cooking most of these. Also, we have been on and off weight watchers for a few years, so you will notice a lot of these come from those blogs. We also currently have no kids in the household, so they may not be kid friendly. Here are some favorites from our household.

    - Philly Cheesesteak Stuffed Portobello Mushrooms. You want to cook these on an oven safe rack on a cookie sheet or they will get mushy.
    - Chicken Pot Pasta. One of my favorite comfort foods when its cold outside. It reheats well, so sometimes we make it on Sundays and take it for lunch the whole week.
    - Chicken Saute with Peppers and Goat Cheese. Hands down one of my faves (I LOVE goat cheese). We serve this over 1/2 cup of quinoa.
    - Cheesy Chicken, Broccoli and Rice Casserole. Another household favorite that saves really well for leftovers.
    - Roasted Veggie Balsamic Chicken Grain Bowls. My favorite recipe to meal prep for lunches for the week.
    - Nacho Stuffed Shells. A fun take on your typical stuffed shells recipe.
    - Sweet Potato and Turkey Skillet. We usually add mushrooms to this as well.
    - Malaysian Shrimp Salad. Pretty easy (enough for me to do) and delicious over Arugula. We do not add the sugar when we make it.

  • I looooooove to cook (and do our weekly meal plan/shopping -- if I could make a full-time job out of grocery shopping, I totally would). Admittedly I hate chicken unless it's slathered in something to hide its actual taste (i.e. I like BBQ pulled chicken but don't ask me to eat a baked chicken breast, UGH) but for the past year or so I've cooked almost exclusively from CleanFoodCrush, a blog of "clean" recipes with easy-to-find ingredients that are fairly quick/simple to make. Some favorites there:
    - Pizza-inspired lean meatballs
    - Cauliflower pizza bake
    - Buffalo chicken cobb salad
    - Greek shrimp salad
    - Southwest quinoa salad
    - Mexican style cauliflower rice with guacamole
    - Turkey taco skillet
    - California cobb salad
    - Veggie packed fried rice (I add shrimp and swap rice for cauliflower rice)

    Some other favorites:
    - Cheeseburger Salad from Pioneer Woman -- I make this on the regular, except I'm lazy and use bagged croutons (if I use them at all)
    - Slow-Cooker Butternut Squash Soup -- one of DH's favorites, although I usually use actual chicken broth (sometimes homemade, yay for Sam's rotisserie chickens!) rather than water + bouillon, and sometimes I'll add apple juice if I had it left over from something
    - Slow-Cooker Carolina Pulled Chicken -- an exception to the chicken-is-gross rule. I serve this with coleslaw and potato salad.
    - Chicken Salad Stuffed Tomatoes -- easiest chicken salad ever. If the actual tomatoes don't look great that week, I'll get cherry tomatoes, quarter them in a strainer to get all the juices for the chicken salad, and serve the salad over lettuce with the quartered tomatoes on top.
    - Moroccan Meatballs with Eggs -- kinda different but SUPER good
    - Turkey tacos -- usually served over a salad. The raisins are weird but totally make it. I also just use regular ground turkey with no extra oil instead of buying lean turkey breast.

    I've got a few from cookbooks I use regularly too, but can't find them online...will have to go back later and actually type them out here!

  • This thread is both fantastic and terrible- love new recipes, but now I'm drooling.
    Tonight: bruschetta (garlic bread topped with fresh tomato, basil, fetta, parmesan, red onion and balsamic glaze).

    When I'm feeling lazy- for the odd time I don't want to cook, this shredded bbq chicken is great. I don't use as much sugar though- prefer the tang.
