Gestational Diabetes - what are you eating??

Hi moms! I’ve been struggling with new ideas for what to eat and I’m getting tired of the same things over and over! 

My go-to’s are usually 0% Greek yogurt sweetened with some Splenda and vanilla extract, about 1-1.5 cups mixed berries with some unsweetened coconut and chopped pecans (to trick myself into thinking there’s granola!); and breakfast I almost always eat 2 pieces of sprouted wheat toast with 2 eggs and 1 cup of milk. 

What are you making for meals or snacks that is your go-to but also doesn’t spike your sugars?
