I got a slow cooker for my birthday and I'm dying to use it! Please share your favorite recipes or sites for slow cooker recipes. It seems like a lot of the recipes I'm finding online use a bunch of canned stuff or are super creamy or cheesy...I'd rather have some fresh and healthier ideas too! TIA!

My mostest favorite thing in the world to make in our crockpot is a slow cooker beef brisket w/ onions and cilantro. We always shred it up and make tacos out of it.
Depending on how much you like onions you can do more or less, but they really cook down so I'd go with more than you think you'd need. We typically do 2 good size onions.
Chop onions and place in bottom of pot
Remove thick layer of fat off back of 2-3lb brisket (unless it's already pretty trim) then cut brisket into sections if it won't lay nicely in the bottom of your pot).
Rub a little chipotle powder onto the meat, then lay over the onions in the crock pot.
Finally chop up about half a bunch of cilantro and sprinkle on top.
Cover and cook 6-8 hours on high (we normally do 6 and it's fine). Then shred and it's all done!!
Seriously, this is SO freaking good. The meat has the best flavor.

Last night I did chicken and dumplings-not as unhealthy as it sounds!
Chopped up a bunch of carrots, celery, potato, and onion (chop onion super fine), and cubed cooked chicken (the recipe I had said uncooked, I cooked it-it probably doesn't matter either way). Then add chicken broth (low-sodium) with a little bit of flour and spices in it. I used thyme, savory, and marjoram, pepper and a dash of salt. Cook on high for about 6 hours, then drop biscuit batter (or refrigerated biscuits) on top-cook until biscuits are done!
Can you tell that I'm not really the follow-the-recipe sort of person? It was delicious and there were no leftovers!
