  • I really haven't gotten past Monday and Tuesday (spaghetti and meatballs) because I desperately need to go grocery shopping. Better make my list.

  • @kns1988 we haven't gotten past Wednesday because: It is. Too. Hot. To. Cook. Tonight we're doing Mahi Mahi with rice and veggies. Thursday I'm making chicken sausage with peppers, onions and mushrooms. I'm at a loss for the weekend. 
  • We're going to have a mexican casserole thing one night. And we'll grill another (burgers for H, sausage for me).  That's all I've got so far. But I wouldn't be surprised if H only makes it home for dinner 1-2 nights anyway.

    I'm excited for slow cooker soon (when things cool down a bit more).

  • I’m traveling for work this week so eating out every meal. I just have to watch myself and make sure I try to stay decently healthy. So far lots of Chopt!

    I admire your self control! I'm not a big salad person, so eating healthy on work trips can be a big challenge.


  • @AshVA it’s still early in the trip!  We’ll see how I actually do by Thursday night haha. 
  • Rotisserie chicken (Costco!) with salad, eggplant lasagna, couscous chicken bake, broccoli cashew chicken with cauliflower rice, cauliflower pizza
  • I made fish tacos tonight with fiesta lime rice. Tomorrow I'm thinking about a chickens asparagus stuffing casserole. Other than that I'm not really sure. Friday night we are going glow golfing with some friends and will just have a cookout with them.

  • Breakfast sandwiches, chicken stir fry, keilbasa and potatoes, asparagas pasta, and that's all I've planned so far.
  • Got stuff to make some bison meat sloppy joes (with no-salt seasoning and extra veggis chopped up in it) later in the week too as an extra dinner option.

  • My SO is out of town until this weekend, so I'm mostly just snacking throughout the day instead of full meal planning. Lots of fruits and veggies, some grilled chicken and grilled burgers, and that's pretty much it. We do Sunday lunch at my mom's (our Italian tradition lol), so I'll have plenty of leftovers to start off next week, too.

    Thanks for giving me the idea! We had mexican casserole tonight and it was delicious!! First time making it. I’m not much of a cook (DH is) but this recipe was so good and fail proof!

    Good to know!!! I just microwaved leftover piece yesterday and it still tasted so good! I did put a lot more chili powder and cumin since I added minced beef!
