Pasta salad, probably? I normally don't care for pasta salads, but the one my mom makes is delicious and pretty easy.
Or maybe the vegan rum cupcakes (with rum glaze and rum buttercream) I bring to parties that everyone always loves. You can't even tell they're vegan and they're so moist and yummy. The recipe is from Vegan Cupcakes Take Over the World if anyone wants to try it. I make them with Captain Morgan rum (it adds a nice subtle spice cake note even though it's not the best rum in the world) and Earth Balance for the margarine component.
-1 package of bacon cut into 1/2 inch pieces - 1 big bunch collards, washed and cut into strips - 2 tbsp dark brown sugar - 2 tbsp cider vinegar - 2 tsp hot sauce - 1/2 cup chicken broth
sautée bacon until done, add collards for a few minutes until wilted, add remaining ingredients and mix. Close lid and set to 30 min on manual/High.
Ooh this is a good one! I love getting ideas for this kind of stuff. I usually will bring a dip or a dessert. My go to dips are guacamole and pico de gallo or some other homemade salsa. I either bring roasted veggies: Add veggies, any kind you want to gallon zip lock back with olive oil and seasoning of your choice. I prefer Montreal steak seasoning. Shake until all vegies are covered, roast veggies on a cookie sheet for about 20 minutes on 400, turn about half way. I love doing colored carrots and zucchini amd cauliflower as well.
Or, I will make my mom's cream cheese pound cake, which is literally the best cake in the world! It's an old fashioned recipe with only like 6 ingredients.
My family always asks me to make Buffalo Chicken Dip for any family get together. I use Franks Red Hot Buffalo dip recipe and add a few tweaks of my own and it turns out yummy yummy yummy.
Frito and bean salad. Sounds weird, looks gross, tastes amazing! I've never found a recipe for it online the way I was taught to make it and i make it mostly to taste:
Brown sugar baked beans Chopped red bell pepper Cherry tomatoes (halved) Diced green onion Chopped cilantro Ranch dressing And then mix in Fritos right before serving
I gave this the major side-eye before trying it the first time, then happily admitted I was wrong.
I love all you guys' ideas. I'm usually pretty simple in what I take. Chips and guacamole or a cut up fruit bowl. I do love to bake so sometimes I'll take dessert, Cannoli poke cake, cheesecake, and chocolate chip cookies are my go-to's.

The last cookout I went to, I took homemade baked beans and this No Bake Summer Berry Icebox Cake, which was a huge hit! There were no leftovers to speak of.
Usually a pasta salad. Noodles, mini pepperoni, black olives, cucumber, fresh mozzarella, tomatoes, (whatever other veggies I may have on hand), italian dressing.
Hmm... this is a hard one since it usually depends on what others are bringing. For appetizers, I would probably make my spinach & artichoke dip or if I really want to impress, brown sugar bacon wrapped lil smokies. Side dish, maybe a cold bean salad for something different (would have to find a recipe or make it up).
I make a mean mango guacamole where I use mangoes instead of tomatoes and all fresh veggies. I also don't mism up the avocadoes, I prefer to dice everything instead.
This thread is making me SO HUNGRY, and I just finished breakfast!
@middleschoolmommy That bean salad sounds so intriguing. Mmm! @vrj0522 Do you have a recipe for the cannoli poke cake? I cannoli and have never had it in cake form.
Since @pink_polkadots already chose buffalo chicken dip (my fave!) I'll go with an angel food cake with lemon glaze. It's a nice, light dessert for the summer. I only ever make angel food cake with the box mix and it always turns out really yummy. Then I poke holes in the top of the cake with a fork and pour the lemon glaze over it. The glaze is lemon juice, lemon zest, and powdered sugar.

@pink_polkadots and @offtoneverland it is more of a dessert than a salad! You use pretzels as a crust and top it with a layer of jello and a layer is whipped cream and cream cheese mixture.
It is so good and so addictive! Here is a basic recipe but I always jazz mine up!
We usually make Chamorro style pork ribs.... basically ribs marinated in soy sauce, vinegar, and onions. They're delicious. Or I will make a dessert we want to try out. Sometimes they're disasters, but oh well!
