Anyone have the energy for cooking this week? I'm mostly just into eating myself but I'm trying to still keep it healthy, so I HAVE a menu, we'll see if I stick to it.

I have no energy to cook and no desire to eat diner by evening time. I'll throw together some easy stir fry this week, mostly for DH. Otherwise I don't know. I mostly just want apples and smart water for dinner.
Monday-Eggplant parm Tuesday-Instant Pot Indian butter chicken Wednesday-Shake n bake pork chops, green beans, starch of some sort Thursday-Beef tips, zucchini, baked potatoes (going to make in the IP) Friday-???? Saturday-Wedding so just need to have kid friendly meal for my mom to make SS and DS
@amdftw I think mine is probably easier than most variations on the internet. I'm what you would call a "lazy cook" lol.
I brown the hamburger (usually about 1.5 lbs) with a little seasoning and red onion (I use salt and pepper but you can use whatever you would normally put on your burgers). Once it's done I drain it and mix in some ketchup (I eyeball it but I'm guessing 3/4 cup), mustard (probably about 1/4 cup), chopped pickles, and 2 tsps worcetershire. Pour all of that into a casserole dish, top with slices of american cheese, and a layer of frozen tator tots. Bake for 30 mins at 450 (or until tator tots are browned/done).
Super easy and it's one of the only things my 5 year old ever asks for seconds on

I did so horrific last week- didnt stick to my meal plan and DH was like starving for 2 days bc he refused to cook #spoiledbrat
Sunday- Did a roast with onions, carrots and baked potatoes Monday- Ranch Brown Sugar Chicken thighs, mashed potatoes and green beans Tuesday- Hot dogs on the grill with broccoli slaw Wednesday- Zucchini Noodles and Shrimp with an avocado pesto Thursday- Shake and Bake Pork Chops with broccoli and rice pilaf Friday- Thinking of doing BBQ Chicken legs on the grill to get in the Holiday weekend spirit maybe with come corn on the cob. Hopefully itll be nice out.
I made 6 chocolate chip muffins yesterday thinking it would be a good "on my way to work sort of breakfast" and ended up eating all 6 last night shameful!
We love tator tot casserole! I’ve never tried that version though!
M- we had meatball subs with French fries T- plan is steak salads but H mentioned going out before we run some errands so you can bet your booty I’m game for that. W- meatloaf, mashed potatoes, veggie T- Hawaiian marinated chicken thighs, Mac salad, chips, veggie F- didn’t plan for this day.
