Heres another simple and healthy meal I have on heavy rotation lately: https://www.theendlessmeal.com/one-pan-bacon-apple-chicken/. FYI, I add dates and extra bacon (duh) and use butternut squash instead of sweet potatoes.

Tuesday: Chicken fajitas on whole wheat tortillas

M: shrimp fajitas with guacamole (but in lettuce cups instead of tortillas)
T: chicken with zucchini noodles and mango slices
W: Turkey Stuffed Bell peppers and roasted broccoli
T: sloppy Joe’s over baked sweet potatoes (my absolute fave)
we we generally eat paleo for dinner but I make up for it with about 700 English muffins throughout the day
Monday: Chicken Chili with Cornbread topping
Tuesday: Cool Ranch Shredded Chicken (will probably eat it as a "taco salad")
Wednesday: Sesame Short Ribs with stir fry veggies
Thursday: Grilled Lemon Garlic chicken with grilled zucchini
Friday: Leftovers
Then leftovers of these things for lunch the next day. Today for lunch I have some leftover Chicken Tikka Masala with peas that I made last week... And I just swiped some mac and cheese made with chickpea pasta from the toddler for... brunch? Second breakfast? Pre-lunch? Apparently pregnant me who isn't puking her guts out (yet? *knock on wood*) is super hungry.

@MrsDho11 do you have a recipe for sesame short ribs? those sound amazing! We do a delicious pomegranate short ribs in the crock pot in fall. I will find the recipe and post. The sauce itself is delicious on anything...we've used it on turkey meatballs too!
