My first contribution to our meal planning thread is an increddddible bacon onion dip by the one and only QWEEN Giada De Laurentiis. We've made it for holidays (and lazy weekends) and it never disappoints. I love it with plain kettle potato chips, but you could do it with classic ruffles potato chips. I just love the extra crunch of the kettle chips. NOMNOM

Is anyone else craving sweet and salty? I’ve had this Cuban Piccadillo every week for the past 3 weeks and then leftovers for lunch. It really hits the spot without being unhealthy. I serve it over the Birds Eye frozen cauliflower rice.

Lunches this time around are considerably easier since I am home with DD! So far baked sweet potato with some black beans and white cheddar cheese has been quick, tasty and healthy.
