Recipe Share Thread!

I wasn’t sure if this should be a weekly, monthly, or one-time thing we can keep going back to. So let’s play it by ear! I’m always stumped on what to make for dinner so I figured it’d be nice for us all to swap recipes, whether it’s something healthy, easy, kid-friendly, or just super delicious!

Mainly because it’s delicious and I can get DS to eat it! It’s fairly simple to make as well, and I usually have everything I need for it lying around!

  • @mrs_drc_rn Thanks for starting this! Do you normally make the small loaves, or do you think it can all be made into one regular size loaf (in a regular loaf pan)?

  • We are having left over chicken tacos tonight, but planning to make this Tater Tot Casserole tomorrow night.  DD has been refusing everything, so I'm struggling to find something she'll eat.  Will report back on how it is! 

    I'm normally a chicken or white meat kind of gal, but this pregnancy has me craving all things red meat.  Here are some favorites we've made recently.

  • @juliebird6 I’ve always made the small loaves because I like to package the leftover ones for individual lunches. When I first made this, I was afraid they’d be really dry since they’re small but I’ve never had that problem with there being cheese mixed in!
  • That tater tot casserole looks delicious! That might be on the menu this week! 

    DS has been on a huge egg salad kick lately which has been great because it’s hard to find protein that he’ll eat. @juliebird6 has she tried that before?
  • @mrs_drc_rn No, but I actually pinned a recipe for it because I was craving it a couple weeks ago, so maybe we'll try that for lunch this weekend!

    I'm also making tzatziki, which I don't have an exact recipe for, I do it all to taste- I take a big container of plain Greek yogurt, and mix in chopped cucumber, dill, minced garlic, lemon juice, and salt and pepper. I like a lot of dill and garlic in mine.

    I'm having one of our staples tonight, Oven-"Fried" Pork Chops. They're so good and cook perfectly every time. I usually serve with mashed potatoes and a green veggie. 

    I'm all about easy. I make a lot of BBQ Chicken and salsa chicken in the crock pot. They're easy and the kids like them.

    BBQ Chicken:
    4 or so chicken breasts
    Cover generously with Sweet Baby Ray's BBQ Sauce (my fave)
    1/2 cup of Italian dressing
    Cook on low 5 hours or until done. Shred.

    Salsa chicken:
    4 chicken breasts
    One jar of store bought or homemade salsa
    Green chilies (optional)
    Can of black beans (added after shredding - also optional, but delicious)
    Cook on low 5 hours or until done. Shred (then add beans if you want them).

  • ^^^ I make that salsa chicken recipe often! I love it and I feel like there’s a lot you can do with it. I’ve used it in enchiladas, tacos, salads...
  • I make this recipe way too much. It's stupid easy and oh so tasty, even my husband who doesn't like pasta, likes it. :)

  • I've been doing Hello Fresh meals twice a week for the past couple of months and it helps my "what the hell do I feed 6 people every day" problem.

    My kids LOVE this recipe I throw together:
    1 pound ground beef seasoned with lawry's & onion powder
    2 cans of tomato sauce
    1 can of green peas

    Serve it with a side of yellow rice and on an open faced sandwich, hella cheap and really tasty.

    We also make the mini meatloaves in a muffin tin. I can tell DS2 it's a hamburger so he'll eat it. It's the same recipe as any other meatloaf but instead of in a loaf pan it goes in a muffin tin and cooks for a less amount of time.

    I made it last night and it was SO GOOD! DH is trying to cut down on carbs and he even went back for seconds! 
  • We're doing pita pizzas tonight, which is mostly made up. Basically I take flatbread pitas (I like the multigrain ones) put some Italian dressing as "sauce" add pieces of chicken cooked in Italian dressing, tomatoes, zucchini, broccoli and a bit of feta then do a quick broil. 

    My mom does something similar except she uses pesto instead of dressing and mozerella instead of feta.   
  • I’ve been the worst with making dinners recently and have been falling into the meat + sauce in the slow cooker or stove top w/ a veggie and maybe also carb/starch/salad.

    I’m hoping to get back into Rachel Ray’s Week in a Day cookbook. Before m/s, I’d prep three meals from there each week and it’d be enough for 6 dinners for DH, DS (toddler), and I.

    I have a good recipe for extending leftover meat-

    Cook frozen diced potatoes with any frozen veggies of choice (usually we use sliced or diced bell peppers & onion). Add leftover meat (such as shredded pork/chicken, taco/sloppy joe meat, etc). Cook until hot. Serve and top with cheese.
  • Our go to, lazy meal is “taco rice”.

    Basically it’s ground beef, or whatever you want. Add a jar of salsa. Throw it on top of rice of your choice. Top with cheese, lettuce, diced tomatoes, sour cream, guacamole, etc and then eat with Tostitos. Mmm
  • I am making this tonight: It's a shredded tofu stir-fry. DS eats it, which is a bonus (although I pull some out for him and then add some sriracha into the sauce to heat it up.)

    It's pretty light and healthy and I am trying SO HARD to eat lighter (and also pretty much failing.) But if I plan ahead and buy the ingredients and meal plan, I definitely do better.

    Taco Pie

    1lb lean ground beef
    Taco seasoning packet
    Large flour tortillas (8" size)
    1/2c Salsa con Queso (I used Tostitos brand)
    1.5-2c shredded Mexican cheese blend

    Possible garnishes:
    Chopped tomatoes
    Chopped green onions
    Chopped cilantro
    Chopped radishes
    Shredded lettuce
    Sour Cream
    Sriracha

    *I like to add things to spice it up, so I added probably 1/2c of rinsed and drained black beans and 1/2c fire-roasted frozen corn to the cooked meat and queso

    Preheat oven to 350°F

    Brown the meat, crumbling as you cook, and drain the excess fat
    Add the taco seasoning per the directions on the packet, adding the amount of water called for
    Once the meat is ready, add in the 1/2c of the queso, stirring to evenly distribute
    Add in the beans/corn if you chose to try them at this point.

    Spray an 8" pie/baking dish with nonstick cooking spray and lay down a tortilla
    Layer about 1/3 of the meat mixture on top, topping with shredded cheese
    Continue layering, like a lasagna until you end up with meat and shredded cheese on top

    Bake 12-15 minutes at 350°F until the cheese is thoroughly melted and the edges kind of golden brown. 
    Allow it to cool for a few minutes to let the cheese set up a bit, then slice as you would a pie and serve, garnish with your choice of garnishes. :]








  • found this the other night and tried it... it was so good! we used 2 lbs of ground beef and it made enough for dinner and lunches the next day for DH & I

    Anyone else plan on trying to get some freezer meals done before baby? I really want a deep freezers

  • I LOVE this thread. 

    DH has been doing Keto for almost a year (well - moreso a variation of Keto - low carb/sugar high protein/fat) so with that and pregnancy, I haven't been in the kitchen in a while. DH usually meal preps for himself on Sundays and makes containers of ground beef with taco seasoning and green beans to eat for lunch and dinner throughout the week (I envy his ability to eat the same thing every day and not get tired of it). 

    But when I HAVE cooked this has been one of my favorites: https://therecipecritic.com/2016/06/creamy-parmesan-garlic-mushroom-chicken/  It's Keto-friendly (minus the flour, which I've found isn't super necessary - when I have it, I substitute with Almond Flour) even though DH prefers red meat because chicken is too lean apparently *shrug*.

    I also love a recipe that my dad made for the longest time and I finally found out that most people call it a "Mississippi Pot Roast"! 

    - Chuck roast
    - (1) Jar of Pepperocini Peppers
    - (1) Packet of Brown Gravy mix
    - (1) Packet of Ranch Dressing mix 
    - (1) Stick of butter (1/2 cup)

    Put everything in the Crockpot on low for 7-8ish hours and enjoy! I like to throw in some baby carrots and sometimes some potatoes as well just to add a little bit. This is also Keto-friendly (obviously without the potatoes) and absolutely freaking delicious!


    @scottishlass1213 that taco rice recipe sounds WONDERFUL and I'm definitely making it next week. 
  • The Mississippi roast is crazy good. I feel really weird adding the prepackaged dressings and a ton of butter, but it's so good.
