Easy dinner is chicken meatballs that we buy already made and cooked from the store, they come in different flavors but the caramelized onion is our favorite. Saute up with some spaghetti sauce and serve over pasta for DH and the kids and zoodles for me. In fact I think that's what we're having tonight!

Lately I’ve been snacking on nuts, particularly cashews.
I’m all about crock pot dinners. Tomorrow I’m making buffalo chicken.
I seriously just had the best Starbucks barista. He started singing “You can have whatever you like” and when I asked if they had blueberry scones (cause you know the whole menu isn’t on the drive in screen) he said “Of course we do, it’s Starbucks! Come on down!” He knows what a pregnant lady likes to hear.
Snacks are usually fruit, string cheese, crackers etc. Nothing insane.
Im happy I’m back to normal eating meaning like fish and veggies.
Ground chicken tacos are good kid meals in my house, or taco rice which is just rice topped with whatever ground meat mixed with taco seasoning. Top with black beans, cheese, sour cream and eat with Tostitos, no fork!. Or cheese omelettes. Breakfast for dinner of any variety haha.
2nd breakfast: strawberry yogurt with a little granola sprinkled on it
lunch: leftover Korean Beef Bulgogi lettuce wraps from last night's dinner
I recently signed up for Gobble delivery service so I'm seeing if it helps me with cooking dinner while trying to manage a 14M old running around yanking things out of my cabinets.
Easy healthy dinner we do a fair amount is zoodles with ground beef or ground turkey and canned crushed tomatoes. We have two different zoodle tools but lately I have just been buying the premade ones and then all I have to do is brown the meat and add in the crushed tomatoes and some seasoning and pan fry the zoodles for like 5 minutes and dinner.

Lately my go-to snack is mini candy bars leftover from Christmas. Being back at the middle school every day is kicking my ass, and I need the energy boost from the sugar. When I can manage to walk in the grocery store without gagging, I want to get some Belvita soft oatmeal bars.
For quick, easy, relatively healthy dinners that even DH can make, I pressure can spaghetti sauce with ground venison. I make a big batch, like 16-24 quart jars at a time. For spaghetti I just boil the pasta, drain it, add the jar of meat & sauce, and make sure it’s heated through. For a non-canning alternative, you can heat up frozen meatballs in the microwave. Cook & drain the pasta, throw the cooked meatballs back in the pan with the pasta, and pour a jar of marinara sauce on top. Make sure the sauce is heated through and serve.
Another quick dinner is chicken noodle soup. I use a pre-cooked rotisserie chicken from the grocery store. I chunk up a bunch of the cooked chicken, add it to chicken broth. Add seasonings like garlic powder, onion powder, celery flakes, parsley, whatever you like. I also add a bit of Worcestershire sauce and paprika. When it boils, add egg noodles. When the noodles are done it’s ready to eat.
breakfast is normally oatmeal, lunch is whatever, I had a Big Mac today. Haven’t had one of those in years.
snack was a bagel.
Dinners that are easy are being made made by my husband so corn freak dogs or frozen pizza. Ugh. I can’t wait to feel better and eat normal again. Oh our kitchen is being remodeled so that doesn’t help lol.
Lunch was jimmy johns because they deliver and I had no time to leave at work today.
Snack was part of a Rx bar and hummus with carrots and chips. It’s usually that or rice cake with almond butter, or plantain chips.
Go to dinners are tacos - burrito bowls sometimes, but I typically do the chicken in the instant pot with salsa verde, pulled pork in the instant pot, burgers on the grill, loaded baked potatoes. I’ll make ground turkey mixed with bbq sauce, spices, crushed tomatoes, onions, kind of like a ‘sloppy joe’ Mix and put it on top of the baked potato. It’s delicious.

What is your go-to snack? I’ve had a fruit cup and/or can of soup almost daily. Hydration is an issue this pregnancy, so I try for items with higher water content
Kids make life busy after work/at the end of the day. What's your easy-but-relatively-healthy go-to dinner? Bonus points for recipes. Tacos, quesadillas, and sloppy joes are often in the line up. I add frozen bell peppers and onions to up the veggie content, as well as a veggie side and guacamole or potato side. With leftover taco, sloppy joe, or pulled meat, I’ll sometimes mix it with breastfast potatoes, extra veggies, and topped with a little cheese for a ‘leftover hash’ of sorts.
Lately I have been mixing lightly salted almonds with Life cereal. So good!
Go-to dinners are easy things like tacos, spaghetti, burgers. I usually buy the lower-fat ground beef and watch portions as best I can. We also do breakfast for dinner quite a bit.

Next week we are going for meatless meals, so a veggie minestrone soup, roasted vegetables with tortellini and pesto, and rice and bean tacos.

All hail the Instant Pot for pregnant dinner cooking! Although last night I made hamburger stroganoff the old fashioned way on the stove, and it was delicious.
