This week we have sausage tortellini spinach soup, fajitas, and need to figure out something good to do with some bone in chicken breasts I bought yesterday.
I am like half and half on meal planning. I may have a meal or 2 for the week that I plan and the rest is just, I buy the produce and meat that is on sale and looks good for the week and try to whip something up with what I have. Plus my pantry looks like it's ready for the zombie apocalypse so that helps as far as just winging it.
I love coming to this thread when I can't come up with something.
This week the menu is vegetable soup w/ground turkey, chicken tacos, turkey chili, pot roast and corn bread, pork loin w/potatoes and green beans, and pizza.
Today I'm making this delicious sodium bomb called Crockpot Chicken Stuffing Certainly not the healthiest (boxed stuffing, canned soup) but it's so yummy and easy to throw in the crockpot. Hubby loves it and calls it "thanksgiving in the crockpot".
I had to change it up my normal salad with the whole romaine situation and this one uses bagged coleslaw mix (red/green cabbage, carrots) as the base so its easy. And to make it even easier, I use Trader Joe's Peanut Vinaigrette instead of making my own dressing.
@katelynrae86 I made a Thai chicken salad this week too! The one from howsweeteats. I like it but I messed up the cabbage (put it through the food processor with a grate that was too small so it's mush) and the peanut sauce was too sweet for my taste, though the overall crunchy effect in the bowl with the other raw veggies is nice and fresh.
Also have ingredients for 2 other meals: ginger salmon with mashed potatoes and carrots, and Brussels sprout bowls with avocado and coconut rice.
But I don't always manage to actually cook the things I plan, so...fingers crossed. @Austenista do you cook every day??? How?!
@=caenis= I’m a SAHM. I try to pick things that have less than 3-4 steps right now because I’m pregnant and I have a toddler to keep an eye on. For instance the pork loin is marinated in the package. I’m going to pop that in the oven as is, make some instant mashed potatoes by running water through the keurig, and sauté some frozen green beans. Pot roast is going to go right in the crock pot one morning (I bought a bag of baby carrots and small potatoes I’ll rinse and dump in as is) and at dinner time I’ll bake a cake of cornbread and that’ll be dinner. Pizza was take and bake from the deli section which is what we made tonight. And so on. Things that aren’t quick and easy are currently avoided.
I don’t always cook either, sometimes DH comes home and makes something. We just try not to eat out much right now.
We've got pre-marinated pork chops and mashed potatoes, tacos and rice, breakfast for dinner, pizza and soup and grilled cheese on the menu this week. I'm in the same boat as @Austenista with simple, minimal prep meals. H went back to 2nd shift this week so he works 2PM to 10PM. He helps with some of the prep work in the mornings or just makes the meals. He baked the pork chops yesterday and today he made the taco meat so I just have to heat up and make sides/veggies when I get home with DD.
@Austenista @harveyabbey77 Simple meal prep or not, it still takes time and energy. Your LOs are super lucky.
I was supposed to marinate the salmon tonight but after my LO's bedtime and straightening up the house, I chilled on the couch instead. So we will probably have grilled cheese tomorrow too. Luckily LO gets a warm vegetarian meal for lunch at daycare, so that means I can slack on dinner a wee bit without depriving him of his veggies.

@elsie42 I make Korean turkey (not beef) but basically an almost identical recipe and I find it so versatile. I freeze portions and can use it for tacos, nachos, served with rice, burrito bowls etc. Both DH and I love it and he is more of a red meat kind of dude so I find it a great way to sub out the red meat in his diet! It's so quick and easy to prepare, too.
@Llamamama14 it depends on what I'm going for. I like the digiorno stuffed crust if I'm really feeling something doughy and cheesy. Home Run Inn is good too. I live in Chicago though, and we have some of the best pizza ever, so I eat frozen, but it's just kind of like a taco bell vs Mexican food thing to me. I like both, but they are 2 separate things to me. I think some of our places around here will ship frozen to bake at home.
I don't think Home Run Inn is sold in our area. Digiorno's is. I wish we had good pizza places near us. Our best delivery option is Vocelli's which isn't bad (better than Papa John's or Domino's IMO) but not as good as a good local pizza place.
