Meal Plan Monday - New Year's Edition

Reviving this thread for the New Year - I always enjoy seeing other people's meals and getting ideas from you ladies!!

Share your meal plan for this week. 

GTKY: What is your go-to when you don't feel like cooking? Could be fast food, PB and J sandwiches, whatever!!

  • Monday - White bean chili served with sour cream, tortillas and mozzarella cheese

    Tuesday - Enchiladas verdes (Skinnytaste) and rice

    Wednesday - Giant Turkey Meatball (Skinnytaste), green beans, mashed potatoes

    Thursday - Popcorn chicken and mac and cheese

    Friday - Dinner at in-laws

    GTKY: I'm a sucker for a deal, so I like Chicken Express #1 meals on Mondays for $5.50 or Rosa's Cafe Taco Tuesday plates for $5. Sometimes I even plan to have those meals!!! Otherwise we like Taco Bell Cravings Boxes which are cheap, easy, and so bad for you - although, they've changed the box contents up a bit and I prefer the old version...why mess with a good thing?! GOSH

  • My entire kitchen is getting packed up tomorrow and then we’re traveling for about 12 days, so I will be living vicariously through all the ladies here who get to eat real food, not gas station or fast food.

    As far as when I don’t feel like cooking, generally fast food! Usually a burger place or somewhere I can get chicken tenders at.
  • I don't have things planned by day but today will be brunch- 
    bacon, almond flour pancakes, blueberry sauce, sausage gravy and biscuits, cheesy potatoes... hopefully this will be brunch and between this and leftovers from last night I won't be cooking dinner.
    -  Beef short ribs, brown rice, veggies
    -  burgers and fries
    thats as far as I got so far... I went overboard on holiday food shopping so I am hoping to keep grocery shopping to a minimum this week.

  • Today is the first day of the new year and my mom taught us to eat sauerkraut for luck. We live in Cincinnati which has a predominantly German heritage but.. I'll be making sausages with kraut tonight. The rest of the week, I don't know lol
  • I'm hopping on this train, hoping that meal planning a bit will help me with my gestational diabetes.  :|

    It's not planned out day by day, but so far this week we'll be having...

    Instant Pot meals: chili, broccoli cheddar soup, pot roast with veggies

    Chicken breasts with mashed potatoes and instant pot garlic green beans

    Tuna melts on sourdough 

    I got the instant pot for Christmas and I'm kind of addicted already. Super easy to use and I love that I don't have to actively attend to dinner.

    GTKY: We do a lot of sandwiches when DH and I don't feel like cooking, occasionally we'll do a KFC bucket meal... kinda like home cooked food but without all the work, lol. DH stops by Hy-vee on his way home from work once a month or so for their $5 take and bake pizzas, too.

  • @ashleyf911 Please share some recipes for your Instapot! I got one for Christmas last year and still haven't used it. It's super intimidating. But i know they're becoming really popular again.
  • @ashleyf911 pizza has been a no go for me with GD. Not enough protein for the carbs.

    @ashleyf911 Please share some recipes for your Instapot! I got one for Christmas last year and still haven't used it. It's super intimidating. But i know they're becoming really popular again.
    Here are the ones I'm using and/or have used! It was really intimidating at first, but after following a few recipes it's pretty simple. Just pushing a couple buttons and then you forget about it til it beeps.

    @megpeg I haven't tried pizza yet, I figured it would be bad for my numbers.  :/  luckily DH has been super supportive so far and hasn't suggested anything too bad yet.

    I sucked it up and paid for a year’s worth of a meal planning/grocery list service. I would spend way more per week with Hello Fresh or something like that and I just need to jumpstart my menu planning and doing better about grocery shopping. It took me two hours yesterday total to customize a meal plan ((I added sides and veggies)), make a grocery list, add coupons to my Smiths card and do an online order. And it was longer adding coupons than planning meals. :smile:
  • @mdfarmchick Do you do clicklist? I’ve been wanting to try it, but I’m afraid they’ll give me the worst meat that’s on the edge of expiring. Are you happy with it?
  • @missnc77 I have. They actually do a pretty good job. I needed tomatoes and you can specify things- like I was making blts so I wrote I needed large ones for slicing for sandwiches.

  • @missnc77 omg I love my clicklist. Like @megpeg said you can specify things you are looking for as far as produce, the deli counter, meat, etc. I also just in general love my Smiths. They constantly add in extra coupons and two orders ago they sent us two pounds of ground beef as extra with no charge because they were out of a few things. 
  • I need to try it then! I had to pick up some things yesterday with DD1. I saw a mom in the store with a toddler in the cart and an infant strapped to her, and it was so intimidating. I started thinking about the level of effort getting both of them in the car, then out of the car, in a carrier and a cart, then back in the car along with groceries, then everything unloaded at home. I may never go to the grocery store again after March.
  • @missnc77 you will just adapt and it will become the new normal. I always had one in the carrier and one in the cart and it wasn't too bad. But with that being said- while it's chilly out I will probably utilize clicklist more.

  • @missnc77 I love Click List!! I am a major control freak and didn't initially jump on the bandwagon bc of that, but once I did I prefer it to shopping myself! And I save SO MUCH money bc I'm not impulse grabbing everything I see that I want. You can add special instructions to each item and I've been pretty satisfied with their substitutions. Try it!! I got my first three orders for free and then it is $5 after that, but totally worth it to me.
