  • Oatmeal chocolate chip cookies. The recipe is on the Quaker Oats container. I’m a slacker. 

    I also love snickerdoodles. It’s my moms recipe from home Ec in high school, and they’re amazing. I don’t have the recipe here at work, but if anyone is interested, I can add it when I get home.

  • I love the Quaker recipe, I prefer raisins, though. (DH likes chocolate chips.) DS and I are gonna roll out sugar cookie dough today. I'll take pics and post recipe if they're good. I don't have a go-to recipe I just Google each year for a basic sugar cookie recipe.
  • @katykat03 Oh yeah, a good chocolate chip oatmeal is my favorite go to year round. My favorite to make for the holidays are these:

    They are a yummy sweet shortbread and they look so pretty on a Christmas treat tray. 

    The thing that everyone raves the most about when I make my trays are "cake truffles" (just like cake pops but I don't mess with the sticks). It's funny because it's just crumbled box mix red velvet cake mixed with canned frosting tipped in white chocolate candy coating. But they are time consuming so I only make them once a year but people go crazy :)

  • Oreo truffles are amazing and always big hit.  I don’t have a picture but:

    - 1 package of oreos crushed in the blender so they’re dust

    - Mix in with 1 package of softened cream cheese 

    - Melt white chocolate in the microwave (be sure to stir often as it will look unmelted until you stir it)

    - Make small balls of the cookie mixture and dip them in the white chocolate

    - place on wax paper and refrigerate until hardened

    ** You can trickle dark chocolate over them for looks, use sprinkles, ag Halloween make them look like jack-o-lanterns using orange chocolate, ghosts, put them on sticks...the possibilities are endless.
  • @Miz_Liz my sister makes those every year and calls them Snowman Poop. They are addicting!!! SO GOOD!

  • @krashke they are AMAZING!!  My mom said she discovered that if you boil a small pan of water (not too full) then place your bowl of melted chocolate on it while you’re making them it keeps the chocolate melted, which is so much easier!
  • My favorite cookie: Italian Ricotta Cookies

    They are so soft, just sweet enough without being too sweet, which lets me eat more of them. Really it's the pillowy softness that gets me.

    Some people add lemon zest to the cookie or almond extract to the glaze, but I like them plain vanilla. I may try a batch of lemon, in addition to vanilla this year though, because I've been digging all things citrus. 
  • I love this thread! Baking cookies is one of my favorite parts of the holiday season!

    @Miz_Liz I love those oreo balls (that's what I've always called them). My aunt makes them every year for Christmas, but for some reason every time I try, I can never get the consistency right. I have a really high quality food processor but they either don't incorporate all the way or it gets too liquidy to roll into balls. I've kinda given up on them.

    I made these for the first time last year and they were amazing. 

    Favorite cookie/candy/treat: Eggnog snickerdoodles

    Why you love it? I personally love the taste of eggnog, especially in desserts and these were perfect! Not too big and still super soft and chewy.

    Eggnog Snickerdoodles - made with eggnog and a splash of rum extract in the dough then rolled in a nutmeg and cinnamon mixture SO yummy

    for the cookies:
    • ½ cup butter, softened
    • 1 cup sugar
    • 1 egg
    • 1 teaspoon rum extract
    • ½ cup eggnog
    • 2¾ cups flour
    • ½ teaspoon salt
    • ½ teaspoon baking soda
    for rolling:
    • ½ cup sugar
    • ½ teaspoon nutmeg
    for the icing:
    • ¾ cup powdered sugar
    • 1-2 tablespoons eggnog
    INSTRUCTIONS
    1. Preheat the oven to 350. Line two large baking sheets with parchment or spray with cooking spray.
    2. In a large bowl or the bowl of a stand mixer, beat together butter and 1 cup sugar, until light and fluffy. Add the egg, rum extract, and eggnog, and mix to combine. Add the flour, salt, and baking soda, and mix until a soft dough forms.
    3. In a small bowl, whisk together the ½ cup sugar and nutmeg. Scoop the dough into one inch balls and roll in the sugar mixture. Place on the prepared baking sheets.
    4. Bake 10-12 minutes, or until lightly browned on the bottom. Let cool on pan for 5 minutes, then move to a cooling rack.
    5. While the cookies are cooling, whisk together the powdered sugar and enough eggnog to make an icing that is easy to drizzle but not too runny. Pipe snowflakes onto the cooled cookies, or drizzle with the icing.

    Tips or tricks to make them come out perfect?
    I've always preferred cinnamon to nutmeg and have made these cookies with both. I prefer the cinnamon, but the nutmeg was still good. Also I am way too lazy to pipe snowflakes, so I just drizzled the frosting on top and they still looked nice enough to bring to a party.

    Peanut butter blossoms!

    Why you love it?
    I don't know why I associate these with the holidays. I think it's because my great-aunt would make little Xmas cookie boxes for everyone with lots of different kinds of cookies, and she always included peanut butter blossoms. Those were the ones I went for first...

    I don't have my great-aunt's recipe, but I have tried this one and it's pretty good. And I've tested LOTS of peanut butter blossom recipes.

    Ingredients:

    • 2 sticks butter, softened
    • 1 1/2 cups creamy peanut butter
    • 1 cup sugar
    • 1 cup packed brown sugar
    • 2 eggs
    • 1 teaspoon vanilla extract
    • 3 1/2 cups flour
    • 2 teaspoons baking soda
    • 1/2 teaspoon salt
    • 2 tablespoons milk
    • 1/2 cup sugar, for rolling
    • 2 bags Hershey Kisses (you only need ~48), unwrapped

    Directions:

    Preheat oven to 375 degrees.

    Cream butter and peanut butter together until smooth. Add sugars and cream for 2-3 minutes. Add eggs, one at a time, beating until combined. Stir in vanilla. Add flour, baking soda and salt, just mixing until combined, then add in milk. Cover and refrigerate dough for 30 minutes or up to 2 days.

    Roll cookies into 1 inch balls and roll in sugar. Lay on baking sheet about 1 inch apart. Bake at 375 for 5 minutes. Remove from oven and push Kiss down into the middle of each cookie. Return to oven and bake for 2 1/2 more minutes. Remove and let cool completely.


    Tips or tricks to make them come out perfect?
    - I personally prefer these with dark chocolate hershey's kisses, but you can do either dark or milk chocolate.
    - Now that I live abroad, I can't get ahold of hershey's kisses so I just use chocolate squares. Works just as well!

    Ingredients

    • 1 cup white sugar
    • 1 cup dark corn syrup
    • 1 tablespoon vinegar
    • 1 tablespoon baking soda
    • 1 pound chocolate confectioners' coating

    Directions

    1. Butter a 9x13 inch baking dish.
    2. In a medium saucepan over medium heat, combine sugar, corn syrup and vinegar. Cook, stirring, until sugar dissolves. Heat, without stirring, to 300 to 310 degrees F (149 to 154 degrees C), or until a small amount of syrup dropped into cold water forms hard, brittle threads.
    3. Remove from heat and stir in baking soda. Pour into prepared pan; do not spread. (Mixture will not fill pan.) Allow to cool completely.
    4. In the microwave or over a double boiler, melt coating chocolate, stirring frequently until smooth. Break cooled candy into bite-sized pieces and dip into melted candy coating. Let set on waxed paper. Store tightly covered.

    Tips or tricks to make them come out perfect?
    I will use a mix of different milk and dark chocolates for the coating. I don't like regular confectioners chocolate. They are a pain in the ass. You have to use a candy thermometer to get the right crack when their hard. You have to mix the baking soda really well otherwise you will get little chunks of it in the candy and that is not pleasant. My aunt is the only one that can do this perfectly. I made it probably 5 times and have yet to make a perfect batch.
