If baby is growing well there shouldn’t be any reason to monitor food intake. If her milk intake is a concern your ped should be able to do a weighted feed (weigh baby before and after on a precision scale). Not everyone pumps the same amount they would otherwise be able to feed their baby.
That said, you can start pumping whenever you want.

Milk intake can be monitored by the amount of wet diapers baby has per day, usually around 6. Kellymom.com suggests starting to pump around a month. For now baby will cluster feed to increase your supply as needed.
