Paleo September - 9/5

Morning Ladies - 

How did the weekend go?  I was finally able to get a grocery run in, which has helped my meal prep situation.  All stocked back up on my coconut milk.  Lately, two of my go-to meals have been coconut curries chock-full with veggies from the garden, and coconut-chia overnight breakfast puddings.  I top the breakfast pudding with a dollop of quick "jam" - raspberries, red beets, chia, and local honey pureed together.  The fact that apple season has also hit is making me very happy! I have 2-3 apples a day right now.  I have compliant fruit and nut bars at my desk for emergency pick-me-up snacks, as well as almond butter.  

I have been dealing with some low-grade headaches, both with pregnancy in general and in the Paleo transition.  I had this when I kept W30 during my first trimester.  That time, I realized it was a carb-deficiency headache.  Weird sounding, considering all the fruit I was eating, but I found for my pregnancy W30 I needed a small amount of gluten-free grain/cereal carbs to keep the headaches at bay.  I'm really hoping to stay away from breads and pastas right now.  Heaven knows I have had enough of both this pregnancy! I added some quinoa to my curry for dinner last night.  

I made these zucchini fritters for dinner on Sunday: https://stupideasypaleo.com/2015/03/28/paleo-zucchini-fritters/  They were very easy to make, and pretty good.  I definitely drained the zucchini before mixing (I swear I got a whole cup of zucchini juice out!), but I must not have drained them enough because the fritters were a little mushy.  Otherwise, the recipe was great and I'll likely adapt it for sweet potato, carrot, or other root veggie fritters as the fall veggie season gets underway.

  • I forgot to mention, one snack that I have found good to have on hand are the dried meat bars by Epic.  My current go-to are the Venison, salt, and pepper bars.

  • The epic bars are so good! Do you feel safe eating them? I know things like jerker are considered on the "do not eat" list because of packaging and not heating? 

    I love keeping Lara bars in my bag for on the go as well as the Rx ones that are basicallt egg whites and cashews/almonds and then the flavors. 

    We keep things oretty skmole most nignts with just grilled protein and fresh veggies. I am caving and eating corn because it's in season and soooooo good right now.

  • @DungeonTrollMel - I don't have a problem with RxBars or Epic Bars and pregnancy.   My understanding has been that products like deli meat and other cured meats are on the do-not-eat list because of listeria and other improper processing risks.  I do not otherwise eat deli meats.  I'm temporarily giving up my much loved runny egg yolks (even though i've sourced all my eggs from local free-range farmers this pregnancy).  Basically, I already do not eat the foods that have the highest likelihood of causing health problems in preganancy, so Epic and Rx Bars in moderation do not give me cause for concern.

  • The week has been decent for meals.  I'm still working through my coconut chia breakfast.  Lunch today was leftovers from last night's chili served over roasted sweet potato wedges, along with 2 hard boiled eggs.  I have 2 apples, a peach, and a few wild plums for snacks.  I have appointments all afternoon, and so am counting on the last of the Thai green curry leftovers from the other night for dinner when I ultimately make it home.

    I'm finding so far that I end up with hankerings for salty items in the afternoons.  Not really full blown cravings, just a desire for something salty.  Maybe it is all the fresh fruit and veggie intake.  Usually, a salt preference for me indicates that I need more water.  I'm trying to stay hydrated.  My go-to non-water beverage these days is fresh iced tea made with my pregnancy tea blend: nettle leaves, raspberry leaves, peppermint, and ginger.  
  • This recipe popped up in my newsfeed today, and is both W30 and Paleo compliant.  It also looks like a perfect freezer meal to prep! I'm going to add it to my meal prep list for freezer crock pot meals.
  • Just made one of my favorite recipes. Paleo fried rice. I wish I had more space in my stomach. I don't even like take out fried rice, but I can't get enough of this. 

    1. Scramble 3 eggs, chop up and set aside

    2. Heat olive or coconut oil. Sauté 1/2 chopped onion, 1 1/2 cup peas and carrots, 2 cloves minced garlic until soft

    3. Mix in 12-16oz bag of cauliflower rice, 3-4 T braggs aminos, 1-2 T oyster sauce and cook until hot

    4. Mix in egg, top with dash of toasted sesame oil and green onion


    you can in protein of choice at the end. We mixed in pork tonight
