Re: Twatwaffle Tuesday

  • Nobody has a TWT today? Lol.
  • Loading the player...
  • My TWs are our apartment complex's landscape guys. They ALWAYS do behind our building (right outside our apartment) during naptime. Doesn't matter what time I put her down, without fail they go by with all their loud lawnmowers and weed whackers and wake her up. I'm currently letting her cry in her crib hoping she'll go back to sleep.

Seems like everybody else is having a good Tuesday so far though :D
  • My TW is IT *again*
So I get this call to my work cell that is blocked but says its from Romania. So obviously I do NOT pick up. Its IT telling me I need to call them back "as soon as I hear this message" because they can't do the next step to unlocking my password without me giving them verbal permission over the phone while I try out resetting the password from my work computer on a work network. Annnnnd I'm out of the office until 3 pm tomorrow without my laptop...
Oh, now its a friggin emergency because *you* can't do your job???? Sorry IT, not my problem.
Except I better call them back now so they don't mark me as done just because I didn't reply (because they tend to do that).

  • My TWT shout out goes to the county courts and foster care system. Get your sh*t together, process my paperwork in a reasonable amount of time, and help these kids get the help they need. Taking 2 months to process paperwork that needs to be completed once every 6 months is pathetic...I know you're busy, but Get. It. Together. people.
  • Tongues.

If I never find another tongue tie or lip tie for the rest of my working/parenting life, it won't be long enough.

  • My TWT is homemade Mac and cheese. I felt guilty about opening a box so I went to the effort of making some. And it was NOT the same and NOT worth it. Apparently I need a different recipe.

@auntieraindrop sorry, but your post made me LOL.
  • @libbberty Oh, I have a yummy mac n cheese recipe. Its super easy and you bake in the oven until its golden brown and nothing but amazing awesomeness. I'll share if you're interested.
  • @GraceUponGrace09 yes, please! Thank you!

    @libbberty

    Easy Macaroni and Cheese
    3 Tbsp. Butter
    2 1/2 c. Uncooked macaroni
    1 tsp. Salt
    1/4 tsp. Pepper
    1 qt. Milk
1/2 lb. Velveeta (I used shredded Cheddar Jack)

Preheat oven to 350. Melt butter in baking dish (7x11 or something similar). Pour macaroni into melted butter and stir to coat. Slice cheese and cut each slice into fourths. Add salt, pepper, cheese and cold milk to macaroni. Bake uncovered for about an hour or until golden brown. Do not stir while baking. Enjoy! ;)

ETA: I sometimes add a little more s&p bc I'm bad that way!

  • @libbberty I have one too! It's one pot on the stove but you could absolutely put it in a pan and bake it with a crumb topping to fancy it up! If you want it, let me know!
  • Yes, please @ryannenikole. Definitely interested in a one-pot solve.

Thank you @GraceUponGrace09. Any chance you think this is freezer meal worthy if you use the shredded cheddar?
  • @libbberty I really don't know? Milk, cheese, noodles - mighty be grainy and watery but again maybe not. Sorry, I'm no help!

@ryannenikole I'd love your recipe too. I don't love my stovetop recipe. And although the one I mentioned above is ultra easy, it bakes for a long time so isn't always a good last minute option
  • @libbberty @GraceUponGrace09

    Here you go!

    1/4 cup butter
    1 tsp salt
    Onion powder, to taste
    Pepper, to taste
    1 1/2 tbsp flour
    3 cups milk
    8 oz macaroni
1 1/2 - 2 cups shredded cheese (I use mild or sharp cheddar)

Melt butter and add salt, onion powder, pepper and flour (I use a 3 qt pot). Whisk until smooth and bubbly. Add milk, whisking constantly. Add macaroni and bring to a low boil. Stir occasionally to keep the macaroni from sticking! Cook about 15 minutes until milk has thickened and noodles are tender (I tend towards al dente) and add the cheese. Mix well until cheese is melted.

I sometimes bring the milk to a simmer before adding the noodles but I haven't figured out if that makes any difference. It reheats well too!
  • @libbberty I bet baked it would be fine.
  • @ryannenikole silly question, but I assume you add macaroni in uncooked? Asking only because I've seen so much variation in those "one pot" recipes and don't want to F it up! Onion powder seems like a good add!

I promise to try both macaroni versions and return with feedback sometime in the next month! lol.
  • @libbberty yes! Add it uncooked and it cooks in the milk. :) the starch from the noodles helps to thicken the sauce.
  • I'm so pumped on these mac and cheese recipes. Thanks ladies. My TW is always making dinner so now I've got nothing to complain about.
