  • I am really excited that DH is finally on board with planning, and I am feeling well enough to execute!

    Monday: Turkey Bolognese
    Tuesday: Leftover Turkey Bolognese, DH is working late and we both love bolognese so much we end up eating it two days in a row. 
    Wednesday: Roasting a chicken: eating the legs and thighs with rice and broccoli
    Thursday: shredding the breasts from previous night for chicken tacos. 

    I know this is not some crazy meticulous meal plan, but its big for us to plan the whole week in advance and shop for it all at once :)

  • We love planning meals! Makes grocery shopping so much easier! Our plans for the week are: 

    in no particular order 

    meatloaf (ground turkey not beef). Steamed veggies and mashed potatoes 

    lime chicken tacos 

    turkey Mac skillet. Yummy fast and easy. Elbow pasta. Salsa. Tomato sauce. Corn. Ground turkey. 

    Chicken meatballs, steamed veggies and rice. 

    That will get us thru Thursday. We do meal planning and grocery shopping on Fridays!

    Of course!! I snapped a pic for you! I leave the celery out. And add a little frozen corn instead!

  • We had vegetarian burrito casserole last night. Tonight is breakfast for dinner. We will be out of town the next three nights. Friday will probably be that turkey Mac skillet but with vegetarian meat!
  • Favorite chicken recipes and go. Lol I am SO uncreative with meat, I grew up with a vegetarian mom! Then married a carnivore... I feel like I make boring chicken meals and I have a few breasts I need to use tonight!

  • I am the absolute worst with meal planning. There is a company in our area called Chefs Plate that delivers the ingredients and recipes for meals 2-4 times a week. Right now they are offering 50% off the first week and you can cancel anytime so I think I might try it!

    We eat a lot of chicken. Some of our go to. 

    Marinade a few hours in taco seasoning and lime juice. Grill and chop for tacos. 

    Chop chicken and sautee with freah fresh chopped tomatoes, garlic, onion, mushroom, Italian seasoning. Serve over rice. Could even serve over pasta. I have also added black olives to it and it's delish. 

    Chop up for kabobs! Add veggies and sauce if choice. 

    Mix italian breadcrumbs with parm cheese. Apply a thin amount of mayo or Greek yogurt to chicken. Coat in seasoning mix. Bake. 

    Marinade a few hours in pesto and lemon juice and bake. When approx done add mozzarella cheese to top. Melt and eat. 

    Season with salt pepper. Bake with sliced tomato and mozzarella cheese. Can also do a variation of tomato and avocado. Don't cook avocado entire time. Add balsamic for a little variation.

    I made my mom's spaghetti sauce on Sunday and had spaghetti and garlic bread on Sunday. My friend made hamburger helper beef stroganoff yesterday and I LOVED IT - I haven't had that in years! Today is leftover spaghetti. Wed through Friday... maybe cereal or a bagel since that's what I have left haha. 

    Side note: I think my MS is starting to go away, HOPEFULLY, since this is 3 nights in a row I didn't toss my cookies after dinner, hooray!!  

    Edit: I don't know the days of the week apparently.
  • Mon - Chicken, cheese, red bell pepper quesadillas with a BBQ Ranch Chopped Salad (this was premade, and all I had to do was mix  everything together)
    Tues - Turkey Mac Skillet (thanks @keshupe29for the recipe! I will modify and add beans instead of celery)
    Wed - leftovers from Tues
    Thurs - we have dinner plans
    Fri - Trader Joe's Spinach Tortellini (I'll add some chicken in there too)
