This week I'm making rice bowls for most lunches for DD and I. Brown rice mixed with a different combinations of: mangos, avocado, pico de gallo. Shredded cheese, black beans, lettuce, tomatoes, chickpeas, spinach tomatoes.
Also premade baked egg cups made in a muffin tin with an egg, spinach, chopped tomatoes and shredded mix for breakfast.
Right now now my favorite source for easy healthy recipes is Goodful on Facebook. They do those aerial view "hand over a mixing bowl" videos.
Gah. I used to love meal planning but not so much since getting pregnant.
Asian honey chicken with rice and broccoli for sure. Other nights are a guess - Probably breakfast for dinner, homemade pizza, meatloaf or spaghetti & meatballs, black bean burgers.
We've been doing home chef lately. So we buy three meals a week, so those are friday-sunday dinners. The ingredients are shipped to us and it's date night to prep/ cook the meals. This week: fried chicken w mashed potatoes, filet mignon w balsamic onion marmalade, and healthy takeout Mongolian beef. The rest of the week we kind of wing it: tacos, go out, top ramen anything easy.
