I've said it before...and I'll say it again: Meal planning SAVES me. It keeps me eating healthy, and I never have to scramble an hour before dinner time, frantically trying to figure out, "What's for dinner?!?" I cook four dinners a week. We go out on Friday/Saturday nights, and we eat at my parent's house on Sundays. I drink a green smoothie for breakfast, and lunch is always leftovers from the night before (I make enough at dinner time to accommodate this). I'm having a hard time with meat lately, and it's supposed to be a bit chilly this week, so I'm feeling like soup! Here's our menu for the week:
Monday: Fajita bowls Tuesday: Roasted cauliflower soup with homemade whole wheat honey bread Wednesday: Taco salad Thursday: Best ever chili
Ugh, I have no clue. I know we're doing steak and salad tonight but other than that no clue. I think we're doing sloppy joes again one night this week and I want to do tomato soup and sandwiches one night.
It's so hard to meal plan when nothing sounds good! I've got no idea what to do for lunches this week either. I had a PB&J today and I'm starving now and am about to have to get something from the vending machine.
Looking forward to seeing all of the ideas on this thread to see if anything doesn't make me want to hurl
@cyanope Homemade whole wheat honey bread?? That sounds amazing. Can you share the recipe? Is it an easy weeknight thing?
I don't have a plan together yet for this week. I find it hard bc I'm trying to eat more veggies/less carbs but I'm a vegetarian and DH is not and basically hates vegetables, so at the center of the Venn diagram of our diets is mac & cheese.
I did all the cooking for breakfast + dinner for four days this week for the whole family... even typing what I made or thinking about it makes me want to vomit

I usually make something for dinner for him and I take my portion for lunch the next day and eat a salad since it's better to have the lighter meal for dinner. Thursday: leftover meatloaf with green beans Friday: butter chicken (which I'll actually eat since I don't have to work Saturday) Saturday: leftovers or if I hang with my family, we usually have a late lunch which tides me over
Sometimes I pretend like I'm not sure what I'm doing so that DH will take over the cooking but it doesn't work with meatloaf because he likes the one I make.
@bainidhedub, this is my first time making it, so we'll see how it goes! It seems SUPER easy though (which is why I'm willing to try it). Here's the recipe:
HOMEMADE HONEY WHEAT BREAD
Makes 10 servings
125 calories; 2g fat; 27g carb; 5g protein
2 cups white whole wheat flour
¾ Tbs. quick rise yeast
¾ tsp. sea salt
1 cup warm water {100-115 degrees}
2 Tbs. honey
¾ Tbs. olive oil
1. Stir together dry ingredients. Add wet ingredients and mix for one minute. Dough should be sticky. If dry, add more water.
2. Knead for 5 minutes using a bread mixer, kitchen aid or your hands.
3. Form dough into a ball. Place on a baking sheet lined with parchment paper. Cover with a dish towel and let rise 25 minutes. Preheat oven to 350 degrees.
4. Make an X ¼” deep with a sharp knife on the top of your dough. Bake for 22-25 minutes or until golden brown. Remove from oven and cool on a wire rack.
Mon- grilled chicken, brussel sprouts, snow peas Tue- pork chops, green beans, red potatoes Wed- raviolis, garlic bread, salad. Thats all Ive got. I meal plan Thur- Wed. Even this is super tentative since the thought of meat makes me want to vomit
Monday - We had a rice & sausage concoction with beans on the side. Apparently my PG mind thought those three things sounded good together tonight.
Tuesday - I'm thinking venison Spaghetti.
Wednesday - Maybe chops & potatoes.
Thursday - Possibly Roast if I happen to get to the store for veggies.
Friday - TBD. This is already way more planning than I usually go for but I know I *need* to plan and subsequently cook more, especially with another full-time mouth to feed on the way!

Chicken cordon bleus with something for a side TBD
Meatloaf, mashed potatoes and green beans
chicken fried steaks, mashed potatoes and gravy with green salad
pasta carbonara (no peas because I HATE peas)
And now I need to figure out something to do with the sirloin steak I bought to originally make the fajitas...
