If you're into grilling, this Jerk Chicken marinade is SO GOOD. There's a lot of ingredients but literally just throw it all in a blender/food processor, dump over chicken, and you're good to go. If you're not big on spicy food, leave out or reduce the peppers. We make this often for guests, so I'll usually make some spicy and some not spicy. Personally I love the spice but it's still amazing without. We have made this with chicken thighs and drumsticks. I love grilling since I can just leave it up to DH to actually do the cooking part lol
@vlillyv it really is such a refreshing taco! And I am going to have to try that rice, probably this weekend. One of my favorite dishes is a simple caldo de pollo and I load it with avocado and Mexican rice...NOM!

UPDATE: You guys. Mac and queso is amazing. I don't know where it's been all my life. My husband was starving and ate a ton, and even my toddler who's going through an insanely picky phase ate about half of what we served him. Here's the recipe (plus a few notes):
1) The recipe says it's ready in 35 minutes, which is a little misleading unless maybe like all your ingredients are already measured and it doesn't take you two minutes to find the chili powder hiding in the spice cabinet. It took me closer to 50 minutes from start to finish But overall, still a great and relatively quick weeknight dinner—I don't feel an insane level of mom guilt over letting my son watch TV while I was cooking.
2) I recommend doubling the recipe and baking it in a 9x13 dish. You'll have fewer awkward remnants of ingredients (who would ever need a half block of Velveeta at any other time?), and you'll have plenty of food for leftovers!
3) If you don't love super spicy stuff or you're serving this to picky toddlers, swap out the hot sausage for mild. That's what I did and it still had enough spice for me and my husband

I really like this one. It's super quick and tastes just like the insides of the eggroll. If you want to be ambitious, you could use it to actually make eggrolls. Or, be like me and eat it with tortilla chips or over drained ramen noodles.
This one's on heavy rotation in our house. I like to use the lime-flavored tortilla chips with it, add a can of corn, and use iceberg instead of romaine lettuce. Happy eating!
I really like this one plus the pic on the recipe is pretty. It has chicken, spinach, sun dried tomatoes, and a creamy cheese sauce and it tastes good with noodles of your choice. Not too many ingredients either which is nice.

@bluejeanbabi05 omggggg. I made that beef and broccoli tonight and it is a WINNER. DH wants it in our normal rotation and DD ate it up too. So good! You're awesome.
And this baked spasagna is based on the Cheddar's dish if you've ever tried that before. If you haven't, it's like lasagna, but with spaghetti noodles.
I have become obsessed with soup since becoming pregnant! In the first tri all i craved/could eat were carbs and I was getting worried abut my veg and fruit intake and have found soup is a great way to incorporate more veg into my diet in a way I seem to be able to handle lol. I have been making this minestrone soup a lot in massive batches and pretty much eating it all week. I like having a bit of pasta in there to satiate my carb addiction. I also add half a head of cabbage to the recipe to add even more veg. it is so declious and easy and even better the next day!
Reviving this recipe thread! We are going to the beach in a few weeks and I'm bummed about not having my adult cocktails. So instead I didn't know if you ladies has some yummy alcohol free drinks that are your go to when you want to feel fancy or any great smoothie recipes you want to share? especially since it will be a million degrees with a million percent humidity. Oh, and I'll be the size of a whale!
@curlyq423 I've been drinking a lot of soda water with a heavy splash of cranberry. Not the most exciting, but delicious. You could also mix in pineapple, orange, etc.
I make a lot of breakfast/snack smoothies but don't really follow a recipe. I do about 6 oz of milk (or water), yogurt or avocado depending on what I have, a bunch of fruit, a handful each of carrots and greens (if you use greens also include some sort of citrus to cut the bitterness), and 8ish ice cubes. That makes 2 large glasses.
A few of my other favorites are an Avocado smoothie (Avocado, milk, yogurt, honey, ice) or Watermelon smoothie (Watermelon, Ice, and if you have it mint/basil/whatever else sounds good - I usually also add vodka, but it's still delicious without).
And don't hesitate to ask bartenders what fun drinks they can make you. Most good bartenders enjoy the challenge or already have a few favorites.
Is that what that's called @OliveOyl2014 ? I got DD1 one ( virgin of course) at her World Dance Championships/ Paeant over be summer. I just asked for half daq, half pina , haha.
