Good morning! So this week I got inspired from a cookbook I picked up at the library over the weekend. It is all about one dish meals in the cast iron skillet so I will be trying a few of those out! Also, I started to buy chicken breasts and making them ahead of time for lunch prep. I have been craving chicken salads with peppers and cucumbers and homemade honey mustard dressing and it is so easy to just come home for lunch and throw it all together really quick!
Monday- Sirloin steak tips with charred peppers and onions(one dish meal) with quinoa Tuesday- Baked pasta with tomatoes, garlic, sun dries tomatoes, fresh basil and cheese (one dish meal) Wednesday- Honey baked salmon with a veggie side (one dish meal) Thursday- Breakfast for dinner! Omelets and bacon! Friday- Curry baked chicken with veggie side Saturday- Out for date night!

Monday: Almond crusted chicken breasts, red potatoes, asparagus Tuesday: Chicken pot pie, salad Wednesday: Gnocchi with mushroom sauce, greens Thursday: Beet and Salmon salad, bread Friday: Leftovers or out to dinner.
You guys are so organized. I'm jealous. i only have three meals planned out, but have no idea what days.

@CoastalMomma DH found a recipe for it from one of his cooking shows. I guess it has grapefruit, lemon, and star anise in it. So hopefully it turns out to be good!

@JNR6510 Nice! I'm not usually a fan of anise, but that sounds good. My husband bought me a subscription to America's Test Kitchen for Christmas, so I have been getting most of my recipes off of their database recently.
@CoastalMomma where are you getting corn on the cob this time of year? That sounds so good!!
No corn on the cob for me, unfortunately. I think that was @JNR6510. We do get avocados, citrus, and strawberry all year around at our Farmers markets though. I'm in Southern California.
Feeling a little uninspired this week Monday (aka last night): French toast, bacon, and eggs Tuesday: tacos! Wednesday: Steak and baked potatoes Thursday: pasta of some variety Friday and Saturday: out...I will be "running" a Ragnar relay so dinner will be whatever is around when the time comes
