Re: Meal Plan Monday! Breakfast included! 2/20/17

  • @JustBored10 You put me to shame!! I am going to work on this week's menu and go to the grocery store today because I am off work, but I have been so wiped out, my meal plan usually consists of frozen breakfast sandwiches for breakfast and something like hamburger helper or whatever my husband brings home on his way home from work for dinner, lol! You have inspired me to (aka ashamed me into) trying to do better this week!

  • We eat pretty much the same thing for breakfast every day, so my dinner plans are:

    Monday: Tortellini soup
    Tuesday: Fajita-style quesadillas
    Wednesday: Chicken pot pie
    Thursday: Slow cooker bolognese
    Friday: Italian chicken burgers

I reserve the right to replace any night with leftovers if we have three or more meals still in our fridge.

  • @stephy_p Aww don't feel ashamed!  I was able to stock up on a ton of meats and veggies at our local farmers market this past weekend so I was not worried about what the grocery store would or would not have this week! I shop and meal plan but DH is the cook.

Honestly, I have no idea what we will be eating this week. Between packing and moving into our new house, it may be take-out for dinner most nights until I have my kitchen settled.

  • Pretty much have the same breakfast daily. Generally cottage cheese and fruit or cereal and fruit.
Sunday: Lemon chicken with broccoli rabe. Egg noodles.
    Monday: Slow cooker chicken chowder
    Tuesday: Chicken Chili
    Wednesday: Tacos, black beans, zucchini
    Thursday: Red Lentil Stew
Friday: My mom is in town, so we'll likely go out. Finally get to tell her our good news!

  • I wish I could meal plan. But with two preschoolers only in school for 3 hours a day and me working from home full time - yeah, dinner is usually a last minute throw together. Sometimes when I get to the store and stock up in meats, I kind of ball park the weeks meals but I am not ashamed to give the kids Annie's mac n cheese, myself a big bowl of Cheerios and let my hubby fend for himself. We've been married for 10 years and have yet to starve him - lol it's okay for me to slack off some days ;)

Today's dinner is luckily something super easy - I have some mushroom sauerkraut pierogi filling that I froze several months back. Thawing that and will be making a quick batch of crepes - fill those with the filling, add sour cream, done!
  • I'm just impressed by everyone who has the energy to cook, or the stomach to eat meat! My breakfast every morning has been a few bowl son cereal, and fruit.

Monday: grilled cheese and tomato soup
Tuesday: salad with strawberries, blue cheese, walnuts, crasins, raspberry vinaigrette
Wednesday: pasta salad w/veggies and cheese, and maaaaybe salami or pepperoni if I can stomach it
    Thursday: baked potatoes
    Friday: homemade pizza

  • I try to meal plan and fail miserably most weeks.
    Tentatively:
Sunday -- fried rice and teriyaki chicken, grilled veggies
Monday -- Mississippi slow cooker pot roast with carrots and green beans, baked potato
Tuesday -- garlic alfredo shrimp bake, asparagus
Wednesday -- smothered pork chops, scalloped potatoes
    Thursday -- leftovers
    Friday -- breakfast for dinner

  • I really don't know how yall are meal-planning!! I wish that worked for me. My nausea is so bad I have to decide right before dinner time what I think I can tolerate lol!

Trying to use up the last of whatever we have in the fridge as we are leaving to China early Thursday morning....have to get create as I refused to shop over the weekend.

Monday- Palak Paneer with garlic naan

Tuesday- Spaghetti carbonara with a salad

Wednesday- Probably a frozen pizza or soup, whatever's easiest as I work late and have zero motivation to come home and cook after working 11 hours

Thursday- 7am flight to Seattle, then Beijing so whatever is served on the flight or what we can find in the airport (side note- I always call ahead and request a vegetarian meal on flights, I find it's always something way more appealing than the standard meal, and bonus-you get your food before everyone else

Fri/Sat/Sun- breakfast in the hotel and lunch and dinner out.

I eat the same breakfast every day- one over medium egg with two slices of toast, one with butter and one with butter and gruyere. And one small glass of OJ

I'm getting to that point.  There are days (last night was one) where tortellini soup turned into plain tortellini for me and the kids, with a plain salad on the side; DH had his tortellini sauced and a loaded salad.  The nice thing about meal planning is you know you have the stuff to make something, even if it's not exactly what you planned.

  • I've been slowly dropping days off my meal planning. I used to plan for 10 days at a time, now I'm lucky to plan 5 meals!
This week DH is gone so I just made a random list of meals that sounded good (on Sunday):

    Pizza & salad
    Chicken & broccoli Alfredo
    Chicken noodle soup
    Frozen chicken stir fry
    Stuffed pork chops

My DD doesnt have the patience to wait for breakfast to be made, so we have cold cereal every morning.

@amandarene112 usually we eat beef everything because my parents give us free beef from a steer they raise every year. The only meat aversion I've had was chicken. Obviously thats over haha

@BookitBoo how do you do your pot roast? I'm always looking for different roast recipes!
