Go to Dinner Recipes

I know we sometimes do a meal plan Monday thread, but does anyone have any quick and simple go to dinner recipes they are willing to share?  Since returning to full time work in August I have sucked making meals at dinner time and I really need to get better at it.  I am stuck though because I seem to never have ideas or I get stuck in ruts where we eat the same thing every week.  Please help me out with some tried and true dinners!!

  • If you have a crockpot and like those types of meals, Skinnytaste has a great chicken and olive tagine recipe that I make probably twice a month.  I serve it with couscous or a salad!

  • Some of our quick dinners consist of: 
    -chicken or steak salads, we usually just grill or broil chicken, throw it on a salad, etc.
    -baked sandwiches and veggies or chips.
    -crockpot dinners (chicken and dumplings, stew, etc.)
    -breakfast hash
    -homemade pizzas
    -loaded nachos

    also, this recipe is delicious.  We use rotisserie chicken instead of breasts, cheaper and quicker:

  • This is probably the most unhealthy thing ever and it takes two hours to bake but...
    1 box of Uncle Ben's Original wild rice
    1can of cream of mushroom soup
    1 can of cream of celery soup
    1 can of water (or more if you like it creamier)
    package of chicken breasts or thighs
    Bake in over at 350 for 2 hours covered with foil
    *i use chicken thighs and take the foil off for the last 20 ish minutes to let the skin crisp up.
    It's definitely a once in awhile dish but so yummy!
  • Thanks ladies!!  @Wearmi1 I love breakfast for dinner but my husband is lame and is a breakfast hater!  I appreciate all the feed back and will be making a list of some of these tonight!!

    Yessss! We love a lot of her stuff. Chicken Parm, chicken enchiladas, and fried chicken are some of our most repeat meals!
  • I made an awesome pulled pork in the crock pot yesterday and it's enough for 2 plus nights or to freeze.  Take a pork shoulder and rub with your fav BBQ seasoning run and add a 12oz can of Dr. Pepper.  Cook on low for 10 hours.  I add a bottle of BBQ sauce the last hour ish to add flavor but it doesn't need it either.  I used sweet baby rays sauce.  It turned out amazing! Im

  • We do breakfast for dinner at least once a week... this time it's cinnamon roll waffles with bacon..
    other quick go-tos are: pasta and meatballs, black bean burgers and fries, taco salad, grilled chicken salad, pizza..

  • We love hot ham and cheese sandwiches. My mom makes them on potato rolls but I like to use a sour dough bread. Spread butter and mayo (I know) on the bread, season with garlic powder and Italian seasoning add ham and cheese and bake in tinfoil for 20 mins. I usually serve them with a bagged Caesar salad.

    Last night I made bow tie pasta. I baked bacon in the oven for ten mins and added it to the pasta with some onion and frozen spinach. I just put an olive oil and Parmesan cheese on top and it was really good!

  • My dad grew up with 10 brothers and sisters, so their family was all about feeding a lot of people for cheap. One meal that they always ate, and my mom always cooked for us as a kid, and now I make like every other week is descriptively called "meat, beans and rice." I don't know why it's so good, but it's SO good.

    Brown a pound of ground beef, pour in a can of ranch styles beans with juices, heat, and serve over white rice. We always put jalepenos or Louisiana hot sauce on it.

    yall, I promise it's the best. But you can't do substitutions!
  • I make Mexican food a lot becuase it is cheap and easy. I do quesadillas and put them in a panini press to make them crispy on the outside. Enchiladas are cheap and easy as well. I also make like a taco pizza thing. Layer tortillas, taco filling of your choice, top with cheese, and bake for 20 minutes at 350. 
  • Sautéed broccoli, breaded chicken cutlet, paremesan couscous or rice. Very quick and easy.

    @krex  Heliumgirl717 totally a Skinnytaste lover here too! She has basically taught me everything I know about cooking. Chopped Asian Chicken Salad, Banging Chicken Salad, Sweet Potato Chili, Broccoli Mac & Cheese... I could go on!

  • Also, the frozen brown rice, quinoa, and jasmine rice from Trader Joe's is seriously a life saver. I'll cook cubed chicken breast, steamed broccoli, and throw in the quinoa and cheese, or cook a quick curry over the jasmine rice. It rules.
  • I love to cook and we meal plan for most days of the week but our quick "go to we have nothing left in the house" are: 

    Pasta with whatever veggies are left in the fridge with butter, herbs and parm cheese. 

    Mexican dump casserole: rice (or quinoa), black beans, corn (always have frozen corn from the summer in my freezer), tomatoes, onions (or whatever veggies look like they could go in). Season with cumin, salt, pepper, chili powder and some salsa. Dump into a casserole dish and sprinkle cheese on top. Bake until cheese is melted and dish is warm. Serve with chips or tortillas...whatever I have!

  • I have a chicken taco recipe for a quick meal when I realize we don't have anything to take to lunch the next day.
    We always have chicken breasts in the freezer. Throw a pack of chicken breast in the cockpot with a jar of salsa and a packet of taco seasoning and cook for 5ish hours. We scoop it into a Tupperware and put a tortilla or 2 in a zip lock bag.  So simple and yummy.

  • - Chicken tacos: chicken breasts in the crockpot with a packet of taco seasoning + a jar of salsa. Shred & use for tacos.
    - I buy a rotisserie chicken, shred it, and use it to make all kinds of chicken flautas which are super easy. I use ground turkey and chicken sometimes as wel.
    - Breakfast for dinner: bacon, pancakes, eggs
    - Keilbasa sausage sautéed with peppers & onions
    - Homemade meat sauce for spaghetti: I make enough to freeze some too.
    - Tilapia filets in a skillet with EVOO & creole seasoning. They cook in no time. Squeeze some lemon juice on top when finished. We serve with rice and a vegetable.
  • Turkey tacos, grilled cheese sandwiches, quesadillas, spaghetti with jarred sauce and Costco meatballs, cheesy garlic bread, sautéed shrimp and steamed broccoli. I love to use frozen prepared foods from Costco and Trader Joe's for things to just throw in a pan and it's done.
  • Something that helped me prepare dinner during the week is not over thinking it. I don't have to make something elaborate each night ( I felt like I did). Grilled cheese and soup is Okay! Hot dogs and Mac and cheese is a family hit. They are not super healthy but it stops us from getting take out and over eating.

    Our favorites:

    Beef and noodles ( I buy precooked Hormel beef in au jus sauce)
    Tacos, meat loaf, sloppy joes, spegetti

    Tacos assuming you're chill about the toppings. My H is not. We frequently don't have fresh tomatoes or olives in hand, and we can't have tacos without those, according to H. 

    Stroganoff. At the most basic, it's just ground beef cooked with chopped onion with a couple cans of cream of mushroom soup on hand poured over noodles. I've made cream of mushroom soup from scratch before when I didn't have any. Sometimes, I throw in some cream cheese to make it creamier. Also pepper, some garlic powder, etc. It's supposed to be over egg noodles, but I've done it over elbow, penne, even fettuccine I think. 

    Baked chicken. Just any kind of chicken - thighs, breasts, wings, cutlets, whatever - and then sprinkle with salt and pepper and bake in the oven. 350 or so for 45-1 hr. Add other spices if you want.  Then just serve with rice and salad or a veggie for a complete meal. 
  • We eat vegetarian, which I didn't grow up doing, so it was hard for me to adjust my dinner expectations. Google is my friend. These are three of my easy "go-to" meals. The first is super easy, the last is a little more involved, but still can be done in 30 ish minutes. I also make quesadillas with beans (refried or black) inside and cook them on my panini press. Super easy and a kid pleaser.

    My version of crock pot chicken tacos:

    I noticed a lot of ladies are recommending putting a couple chicken breasts in the crock pot with salsa and a packet of taco season to make chicken tacos. I do this too, but I also add a can of black beans (drained) and frozen corn and mix it all together. Delicious! I seriously make this about once a week.

    Crock pot BBQ chicken:

    Put a couple boneless skinless chicken breasts in the crock pot and season both sides with salt, pepper, and Worcestershire sauce. In a separate bowl, mix together BBQ sauce, lemon juice, Worcestershire sauce, and Italian seasoning (I never measure, I just eyeball it, you can't go wrong). Spread the mixture all over the top of the chicken breasts and cook on low for about 6 hours. Shred before serving. I usually serve this with a salad, microwave baked potatoes, or mac n cheese.

    package of refrigerated tortellini (any flavor) - cook and mix with jar of warmed alfredo sauce
    throw in some frozen peas or broccoli while cooking if you want a veg
    serve with garlic bread or breadsticks

    OMG I do this ALL.THE.TIME.  This is my "I need to make something and I'm the only one home for dinner, so I'm going to throw something together and call it a night" meal.  DH has this idea in his head that dinner ALWAYS needs a meat of some sort, so he expects at least some sort of chicken with it.  I usually don't bother making that when it's just me.

  • @awillis13 My DH is the same way! A meal isn't complete without some kind of meat. It drives me crazy sometimes because I don't always want to add meat to everything I make!

  • Baked Ziti:
    Large glass Casserole dish, oven at 425.
    One box of medium shells (not cooked), jar of sauce, fill empty sauce jar with water and add. Cover with foil and cook for 30 minutes. Add cooked ground beef, a little bit more sauce and mozzarella to top, remove foil and cook another 10 minutes.

  • Salsa chicken - combine 2-3 chicken breasts with a jar of salsa in crock pot cook 5-6hrs on low shred, serve with rice.

  • @awillis13 My DF is the same way about NEEDING meat with a meal or it's not a real meal. It's annoying. My grocery bill was much less expensive before he was around. 

    Also, if you don't totally need a meat a quick vegetarian dish I make is sauteed spinach, mushrooms, and tomatoes tossed is pesto with a side of garlic bread. It's actually really filling. A glass of wine or two really completes it :(
