I know we sometimes do a meal plan Monday thread, but does anyone have any quick and simple go to dinner recipes they are willing to share? Since returning to full time work in August I have sucked making meals at dinner time and I really need to get better at it. I am stuck though because I seem to never have ideas or I get stuck in ruts where we eat the same thing every week. Please help me out with some tried and true dinners!!

So...honestly, 90% of my weekly menu comes from skinnytaste...that woman has never led me astray.
-chicken or steak salads, we usually just grill or broil chicken, throw it on a salad, etc.
-baked sandwiches and veggies or chips.
-crockpot dinners (chicken and dumplings, stew, etc.)
-breakfast hash
-homemade pizzas
-loaded nachos

1 box of Uncle Ben's Original wild rice
1can of cream of mushroom soup
1 can of cream of celery soup
1 can of water (or more if you like it creamier)
package of chicken breasts or thighs
Bake in over at 350 for 2 hours covered with foil
*i use chicken thighs and take the foil off for the last 20 ish minutes to let the skin crisp up.
It's definitely a once in awhile dish but so yummy!

other quick go-tos are: pasta and meatballs, black bean burgers and fries, taco salad, grilled chicken salad, pizza..
Last night I made bow tie pasta. I baked bacon in the oven for ten mins and added it to the pasta with some onion and frozen spinach. I just put an olive oil and Parmesan cheese on top and it was really good!

Brown a pound of ground beef, pour in a can of ranch styles beans with juices, heat, and serve over white rice. We always put jalepenos or Louisiana hot sauce on it.

Pasta with whatever veggies are left in the fridge with butter, herbs and parm cheese.
Mexican dump casserole: rice (or quinoa), black beans, corn (always have frozen corn from the summer in my freezer), tomatoes, onions (or whatever veggies look like they could go in). Season with cumin, salt, pepper, chili powder and some salsa. Dump into a casserole dish and sprinkle cheese on top. Bake until cheese is melted and dish is warm. Serve with chips or tortillas...whatever I have!

We always have chicken breasts in the freezer. Throw a pack of chicken breast in the cockpot with a jar of salsa and a packet of taco seasoning and cook for 5ish hours. We scoop it into a Tupperware and put a tortilla or 2 in a zip lock bag. So simple and yummy.

- I buy a rotisserie chicken, shred it, and use it to make all kinds of chicken flautas which are super easy. I use ground turkey and chicken sometimes as wel.
- Breakfast for dinner: bacon, pancakes, eggs
- Keilbasa sausage sautéed with peppers & onions
- Homemade meat sauce for spaghetti: I make enough to freeze some too.
- Tilapia filets in a skillet with EVOO & creole seasoning. They cook in no time. Squeeze some lemon juice on top when finished. We serve with rice and a vegetable.
Our favorites:
Beef and noodles ( I buy precooked Hormel beef in au jus sauce)
Tacos, meat loaf, sloppy joes, spegetti
Stroganoff. At the most basic, it's just ground beef cooked with chopped onion with a couple cans of cream of mushroom soup on hand poured over noodles. I've made cream of mushroom soup from scratch before when I didn't have any. Sometimes, I throw in some cream cheese to make it creamier. Also pepper, some garlic powder, etc. It's supposed to be over egg noodles, but I've done it over elbow, penne, even fettuccine I think.
Baked chicken. Just any kind of chicken - thighs, breasts, wings, cutlets, whatever - and then sprinkle with salt and pepper and bake in the oven. 350 or so for 45-1 hr. Add other spices if you want. Then just serve with rice and salad or a veggie for a complete meal.

My version of crock pot chicken tacos:
I noticed a lot of ladies are recommending putting a couple chicken breasts in the crock pot with salsa and a packet of taco season to make chicken tacos. I do this too, but I also add a can of black beans (drained) and frozen corn and mix it all together. Delicious! I seriously make this about once a week.
Crock pot BBQ chicken:
Put a couple boneless skinless chicken breasts in the crock pot and season both sides with salt, pepper, and Worcestershire sauce. In a separate bowl, mix together BBQ sauce, lemon juice, Worcestershire sauce, and Italian seasoning (I never measure, I just eyeball it, you can't go wrong). Spread the mixture all over the top of the chicken breasts and cook on low for about 6 hours. Shred before serving. I usually serve this with a salad, microwave baked potatoes, or mac n cheese.

Large glass Casserole dish, oven at 425.
One box of medium shells (not cooked), jar of sauce, fill empty sauce jar with water and add. Cover with foil and cook for 30 minutes. Add cooked ground beef, a little bit more sauce and mozzarella to top, remove foil and cook another 10 minutes.

Also, if you don't totally need a meat a quick vegetarian dish I make is sauteed spinach, mushrooms, and tomatoes tossed is pesto with a side of garlic bread. It's actually really filling. A glass of wine or two really completes it
