I have mentioned in a few other threads but I am on a crazy strict (self-imposed) anti-cancer diet. I am actively avoiding sugar, grains, red meat and processed foods and am trying to stay away from dairy which can be a bit tricky. We made this last night for dinner and it was REALLY good. If you're trying to do healthy and don't mind meatless meals here and there, this was really good. It would also be good as a side dish:
@RainyDays86 I have been a vegetarian and vegan respectively, many times in my life, and love the minimalist baker. I look forward to trying that recipe!
last night I made sweet potato fries with a grilled chicken and broccoli slaw wrap. Yummy
This week i'll probably make some pulled pork and some sort of baked chicken. Many vegetables on the side. Its so cold here, I miss grilling. Food tastes so much better on the grill.
Monday: pork tenderloin, broccoli and rice Tuesday: ravioli and bread sticks with alfredo for dipping Wednesday: baked chicken, sides undecided. Thats all I've come up with for the week! Not the healthiest but they sound good
H was too sick this weekend to do our weekend grocery trip. I just ordered bare minimum for curbside pick up which means no meal prep this week. So....my plan is: B: Cherry or Blueberry poptart L: TBD, maybe something from home, maybe I'll run out for a sandwhich Cheese sandwiches (bread, cheese, mustard, mayo), salt n vinegar chips and a yogurt
I know none of it's very healthy and it's what I ate last week as well, but I'm craving it so bad! I have also been throwing in green smoothies, berries, and protein bars...if that helps
Next week I'll have meal planned for healthy lunches/ dinners
My husband is SO picky when it comes to food, that I only have a small "menu" that I can make food off of. Sometimes he randomly tells me he doesn't like a certain food anymore, thus making my menu smaller, and increasing my desire to stab him in the eye with a utensil. That being said here is my menu this week: spaghetti and meatballs tonight baked chicken with pesto, tomato and mozzarella cheese, broccoli and Alfredo pasta tomorrow omelettes with potato on the side Wednesday Thursday is leftover or something easy like frozen pizza
Idk about tonight. Probably fend for yourself night, since I wasn't supposed to be home (I work until 10:30 p on sundays and Mondays. Called out today due to migraine/sciatica pain so bad I could hardly walk). Tuesday will be Elk Steak with mashed potatoes and a veggie. Wednesday will be this potato casserole dish that is mindlessly simple, not at all healthy, and DH loves it. I usually use ground beef in it, but will be using ground elk. (We finally got my husbands elk back. We have about 300 pounds of meat, so we'll be eating it for awhile haha) that's as far as I've got.
I have like no appetite, so cooking just seems like so much work. I thought being pregnant was going to make me starving, I eat like 1/2 of what I used to... I have been gaining weight so I'm not too concerned. Today I have leftover stew, or I might do cereal Tuesday- fish, veggie, spaghetti squash Wednesday- maybe steak salad. That's as far as I've gotten
I'm a horrible meal planner, and since it's usually just me and DD I tend to make too much toddler food - pasta, fish sticks, nuggets, hot dogs. I did make a one pot chicken risotto last night that was pretty good. I had leftovers of that and gave DD pasta leftovers (she won't try the risotto even though she likes rice) and still have enough risotto for a couple more meals.
The rest of the week is unplanned as of now...

I haven't joined in on these yet, but really need to get better at meal planning. It's been hard with our oven being on the fritz. The part has been sitting in my entry way, and the repair guy is finally coming tomorrow. It's been out since before Christmas! Anyway, here is my plan for the week.
Monday: Beef stroganoff Tuesday: Chicken and pasta Wednesday: (I should have an oven!) Pork chops and rice Thursday: Barbacoa tacos Friday: Bubble pizza

skinnymom.com has some good stuff. I've made the fettuccini Alfredo (with a little extra cheese) and it was good. I've tried a couple other things on there but of course I cant remember now...
Turkey meatballs with orecchiette pasta, tossed in olive oil and fresh mozzarella Chicken tacos Chili with cornbread baked on top Steak with a small, baked golden potato. Grilled chicken with homemade baked fries Taco braid
I made it with red bell pepper and asparagus. It was good, considering it was my first time making risotto and I'm not positive it was just right. It makes a lot of risotto.
Thanks for the additional short ribs link, I'll compare them and try one!

Anything on skinnytaste.com!! I have never made something of Gina's that wasn't amazing. And her recipes are pretty easy for the most part. Everytime I make something new that my DH loves he asks me if I got it from her site. Some of my regular go-to recipes:

my husband has been getting on me about not eating enough protein.. apparently when your pregnant you should consume 70 grams of protein per day. Anyone have any suggestions for high protein snacks/drinks/bars that are actually good? im getting sick of almonds and string cheese...
Lentil chips!! They are super delish & a good source of protein. We eat them daily. They are 200x better than tortilla chips b/c there's way less salt. You can eat half a bag for 8 g protein. Look in your regular grocery store.
@lrwardrop I really enjoy Luna bars (protein bar) My favorite is chocolate peanut butter, they have like 12g of protein quick easy and very tasty snack! They have other flavors as well

This is my life. I'm horrible at protein, awful. So with the increase needed for pregnancy I severely struggle. I do try to do a huge green protein smoothie once a day (I have tons of recipes). The grocery has these little things by the lunchables that have cheese, salami, and crostini that has 16g of protein, I'm going to try to eat that for a snack more often. I am trying to have a greek yogurt for a snack once every day or so. Eggs for dinner, eggs in anything really... As you can tell, I'm trying to do a lot of snacking. I know come 3rd tri that my stomach is going to run out of room and I wont be able to easily eat 3 regular meals so I'm trying to get myself on a schedule of lots of snacking/grazing. Especially since I'm already getting full quickly and having indigestion.
ETA: Yes, bars! I'm a big bar eater. For years I carry one in my purse because I get hangry. I like Luna's protein (shout out to the Blueberry one and honey peanut!), Cliff Builder (smores, pb, hazelnut, etc) is really good too and has 20g protein.

I have been been on a soup kick personally. Lots of chili and this week pierogie soup which isn't quite as healthy but hey baby seems to enjoy it.
Tuesday: ravioli and bread sticks with alfredo for dipping
Wednesday: baked chicken, sides undecided.
