This may not be the right thread, but for those of you who take your lunch to work, what do you pack? Yesterday I made a batch of soup and will have that 4 days this week (bean soup mix, can of tomatoes, broth, carrots, celery, onion, spices). I'm hoping to make similar things that are filling and nutritious through the winter!
@MyNamesTaken it depends on what we have. Sometimes leftovers (today I had spaghetti and meatballs), usually chicken sandwich/wrap (we buy a rottiserie chicken every week), sometimes soup or salad. And usually once a week I'll buy lunch...usually chipotle
Y'all... the struggle will be real this week, lol. I haven't even made it to the grocery store, but I'm loving all these healthy ideas!
Tonight we're watching the National Championship game at my parents house and having cream cheese chicken chili... not at all good for you, but so good!
@ashley2824 Yum! Chipotle is finally making its way to Canada. One opened in my city but not near work, so I haven't tried it yet. Everyone I know in the States loooves it though! I'll have to make the trip soon

I usually make a meal plan every Sunday so that I can get groceries Monday after work. The last two weeks that just hasn't happened haha. You guys are awesome motivation! Monday: mac and cheese w/mixed veggies Tuesday: pizza (Papa Murphy's sends me text coupons and I need groceries) Wednesday: creamy tortellini soup Thursday: BBQ beef w/ coleslaw Friday: leftovers Saturday: whatever is at my parent's house Sunday: chicken fajitas
@Msashley2010 we use cashew sour cream. It is a dairy alternative. I get it at my local farmers market. It is a local company that makes it. She also makes amazing dips for things like crackers and veggies. Also side note went home from work and made a green smoothie then totally did not feel like the kale salad I had planned so I had half a baked sweet potato and a grilled cheese smothered in homemade horseradish. I was craving horseradish!
I can't believe I'm just discovering this thread! I meal plan & even try to meal prep when I'm not so fatigued.
Monday - Stuffed Peppers Tuesday - Taco Tuesday! Chicken soft tacos with homemade pico di gallo & homemade qaucamole (leftover chicken can be used in lunches like chicken quesadilla or a burrito bowl) Wednesday - Chili (leftovers for lunches) Thursday - Spinach & Sausage Stuffed Shells with Marinara & Mozzerella Friday - Either Breakfast-for-Dinner (Corned Beef Hash & Eggs) or Take out & place online grocery order for next week (pick up Sat morning)
Monday - chicken cutlet, bacon, avocado, tomato, homemade honey mustard sandwiches Tuesday/Wednesday - porkchops baked in mushroom gravy over mashed potatoes, corn, applesauce Thursday and Friday I'm still working on. I get so turned off by some food that it's getting hard to plan ahead!
@HollyGolightly09 sure! I found it online, supposed to be similar to Outback Steakhouse's sauce and it was. 3/4 cup mayo (I used a vegan mayo as my son can't have eggs and it worked fine) 1/4 cup honey 2 tblspoons Dijon mustard mix well and enjoy!
