Tonight we're having kale tacos. Saute a diced jalepeno and yellow pepper, add a can of black beans. Mix whatever seasoning you like with water and slowly add that and about 3 bunches chopped kale until it's all wilted and cooked. Then eat it as you would a regular taco.
My fridge is overflowing with food. My mom and nana have been delivering at least one (usually two) meals a day. Each with an insane amount of leftovers. I will not be cooking for quite some time.
We subscribe to Gobble (similar to Blue Apron) and that's been huge for us. Dinners take like 10-15 minutes, and the quality is pretty good. I figure I'll start actually cooking again in a couple months when we get on some sort of schedule, because I actually like cooking.
DH has decided to go on a low carb diet for the new year and I'm struggling for dinner ideas. I'm not doing it except for dinner because I'm definitely not cooking two meals.
I now realize my above comment isn't entirely helpful. I've been buying at least one pre-cooked rotisserie chicken per week. I made chicken and dumplings last night, chicken pot pie last week, enchiladas, pulled chicken BBQ... makes life easier to shred a whole cooked chicken rather than defrost and cook a protein every night.
My husband cooked a whole turkey (he didnt get to for thanksgiving since LO came so early!) and made turkey stock with the bones. We also made stuffing and mashed potatoes and Pioneer Woman creamed spinach. We'll make turkey pot pie later this week, then maybe turkey soup. Should be good times!
We all just ate grilled cheese sandwiches for lunch. Lots of frozen chicken nuggets and fries have also been eaten while DD has been home from daycare since the 24th.
I plan to start doing better tomorrow when DD and DH get back on normal schedules and it's just the baby and I at home.
It's really tough to get cooking but now at almost 4 weeks I'm trying to kick it up a notch ! Babywearing helps for me since right now DD wants to be held constantly. I am making a big batch of Rachel Ray'a BLT pasta (bacon, leek &a tomato mac and cheese) that should last us a few days. I plan to start it around 3 p.m. So we can take lots of breaks haha. Then for the rest of the week I will break out the one frozen meal I prepped! (Chili). Told DH he had to bring in soups or frozen meals to lunch at work so each recipe can last at least two days.

Last nights dinner was cheesy crunchy ranch chicken, green beans, and mashed potatoes. Tonight it's brown sugar pork chops, pasta salad, and fruit. Wednesday, it's chili, Thursday is homemade chicken noodle soup. Friday -Sunday, we have meals being provided due to those days being visitation and funeral days.

Thanks for thinking of me. Honestly, not too great. It's been a rough few weeks. There is more things going on with me, on top of losing my poppy and brother. I just try not to be too much of a debbie downer on here.
I hope your boys are better, or getting there. You had a rough time there for a bit as well.
