Tonight- Buddha bowls Tuesday- Veggie and Chicken Stir Fry Wednesday- Left overs Thursday- Veggie penne pasta with Parmesan and salad Friday- undecided but something with venison and red potatoes Saturday- whatever we feel like (or inspiration from this thread!) Sunday- Pizza and salad
Monday- crock pot baked potato soup Tuesday- leftover soap and a baked sandwich recipe I found on pinterest Wednesday- dinner at my in laws Thursday- probably leftovers from earlier in the week Friday- haven't got that far yet.... Saturday- going out to eat for my moms birthday I believe
Monday - DH is working, so leftover stuffed turkey burger for me Tuesday - Coconut curry lentil stew with naan Wednesday - Panko tilapia with quinoa/brown rice blend and a vegetable Thursday - Spicy turkey chili on cornbread waffles Friday - Meet DH for dinner somewhere between our jobs Saturday - on my own, so probably leftovers?

I am so jealous I just saw a crock pot potato soup recipe on Facebook and it looks so good. I don't have any potatoes so that's going on the menu for later this week!!

I'm trying to stay more organized and structured this week... but here is the plan for now...
M - Kale, Lentil, Chicken Sausage soup T - Roast turkey breast, sautéed spinach w/ garlic, roast sweet potatoes cubes W - Breakfast for dinner (twin's choice) R - Winter squash, shiitake mushrooms, polenta F - Homemade pizza S - Roast whole chicken, Hasselbeck Yukon gold potatoes, collards S - Tom Kha Gai
Breakfast - overnight oats or banana bread muffins I made this afternoon Lunch - leftovers or spinach salad
@mamaelle27 love the idea for a quiche... I might have to do that either this week or next for my lunches... one of my boys is allergic to eggs (well many things) but I love eggs and quiche!!

M/T/W: I made a bunch of turkey/veggie stuffed peppers last night so we will eat leftovers a couple more nights, with a side of zoodles and marinara. Thurs: Cod with quinoa/veggie pilaf Fri: Chicken, kale and butternut squash soup with pumpkin quinoa cornbread
In addition to dinners this week, I'm also trying to be more structured with my lunches. We have a pretty great cafeteria at my work, but it also makes it very easy to put food on my tray that isn't the best for me. So I'm going to make myself bring lunch every day this week. Today I brought collard wraps (stuffed with ground turkey) and a side of sweet potato/kale/black bean hash. Tomorrow I'll do collard wraps stuffed with egg salad. Haven't figured out Thurs & Fri yet.
Mon- mushroom risotto and shrimp Tues- the same chicken casserole we had last week and green beans Wed- meat loaf and broccoli Thurs- lasagna and Cesar salad Fri- chicken fajitas
