I just want to stop in here and tell you all how impressed I am that you all have time to make real meals during the week, especially those of you with full time jobs and kiddos at home. I pick up DD at daycare around 5:15, and by the time we get home at 5:30 she is HANGRY so I basically throw something together for her ASAP...chicken fingers, grilled cheese, sandwiches, pasta, etc. DH isn't even home yet when she finishes dinner. And then once I put her to bed at 7:30 I actually make food for myself. I'm generally so tired by then (having been awake since 5am) that I make a bowl of cereal or a Trader Joe's frozen convenience meal and call it a day.
I do cook on weekends though, and we have at least one family dinner, usually on Sundays. DH and I generally prefer to have dinner between 7-8 but we'll eat at 6 with DD once a week. Two weeks ago I made essentially baked ziti in the crockpot, and this past week I made a chicken/rice/veggie casserole that was pretty tasty. I'm having those leftovers for lunch today :-)
I remember the days before I had DD (and when my commute was a 15 minute walk instead of a 45 minute drive) when I made dinner for me and DH at least 4 days a week (he prefers to make his own food a few times a week because he loves red meat and I hate it, so he wants to grill himself steak or a burger or something). I am told that at some point my children will be able to stay up until 8-8:30 and wait until 6:30 to eat dinner. That will be exciting because I might have time to cook actual meals again at that point.
Have you tried a crock pot? There are new ones out there that you can set on a timer and everything!
We pretty much live out of the crock pot during the swim season. I'm at practice through the evenings four nights a week and DH can't deal with the two girls and prepare a meal. There are so many blogs now with crock pot recipes or tips on how to spend one day a month preparing a months worth of fast meals. I have two friends who work full time with two older kids who swear by the former method.
@delujm0 I do only work 2 days per week so it's easier...Weusually do a crockpot meal on Tuesday (work day) and eat the leftovers on Wednesday (work day). I also really love to cook so it's a chill out moment for me. I prep a lot the night before and try to make meals last an extra day (or at least use some of it for the following day).
I only work until 2:00 which makes it a little easier to cook but yet I still don't do it very often?
Monday we had chicken quesadillas with corn and black beans. I usually buy a rotisserie chicken and shred it for the week. Quesadillas take a few mins. Pour a can of black beans and a can of corn into a pot and voila.
We had veggie burgers with spinach salad last night. I buy the Morning Star black bean ones. They are really good and take like 5 mins to cook.
Tonight it's just me and DD so I will either make breakfast or a frozen pizza...and then we are out at dinner time the rest of the week.
One easy meal that I always make is:
Crockpot chicken with pasta. I just throw a jar of sauce, a pack of chicken breasts, whatever Italian spices I have, and a bag of shredded mozzarella cheese in the crock pot and I swear it comes out SO good. I serve that with pasta and a bagged Caesar salad.
I love cooking but can't handle the planning part right now.
One thing I always do is a big meal on Sundays that I can re-use for Monday night dinner + some lunches. But that's about as organized as I get these days. We are currently doing Plated on Tuesday, Wednesday and Thursdays which has been amazing. Fridays and Saturdays we freestyle. I usually cook but don't decide on what until the day. Sometimes we just raid the supermarket deli. We're lucky where we are in Seattle and have some incredible supermarkets within walking distance.
Monday: Leftover roast veggies from Sunday turned into soup w/ sausage crumbles and creme fraiche Tuesday: Gnocchi in parmesan broth w/ swiss chard and spinach Wednesday: Pan roasted chicken w/ crispy brussles sprouts home fries Thursday: Salmon w/ dill sauce, kale and roasted fingerling potatoes Friday: First date night in months!

Yesterday (Monday) we did- marinated flank steak, red potatoes and steamed asperagus
Tuesday- Potatoe, spinach, corn "chowder"...I threw some chicken sausage in there too. Bread and salad
Wednesday- Left over soup and salad
Thursday- ground turkey tacos, beans and rice
Friday- Taco salad or whatever we feel like
Saturday- Dinner at friends house
Sunday- Doing Xmas with my in laws so traditional Xmas dinner...Ham, potatoes, salad...etc.
