I'm not a fan of Margaux at all, I prefer Margot just because it's really the only way I've seen it. Margo would be ok but for some reason I like the "t" at the end.
Margo is a variation, Margaux is a town in France. And honestly, makes me think of faux, which is unfortunate for a name to begin with, but even moreso for a gem name.
I like Margaux because I have a thing for the Hemingways, but I get that it's maybe a bit pretentious/random (as French spellings tend to be, generally, if there's no real reason for an English-speaker to use it). I love the name and wouldn't side eye Margot or Margaux, personally.
I think I read once that the Hemingways made up the "Margaux" spelling, after some wine - if that bothers you. Margot is adorable.

Edited: I'd read she was trying to be exotic but Wikipedia said it was to change it to the wine that she was named after. I don't defend my Hemingway infatuation, I just try to name it and move along
