@RunRestRepeat that recipe sounds amazing! Brie is nectar of the gods IMO. Could you please PM the recipe to me?
@lulu1180 haha there's something so satisfying about a flaming assist!
1. My mom's visit was fun. It was her first time visiting us in the new house in ND. 2. I'm also glad that she left this morning so DH and I can just relax tonight. 3. We made her famous chocolate chip cookies. This is both good and bad because they're awesome, but I will eat far too many of them. 4. It's snowing! This makes for a nice cozy day in my office 5. I bought some not-at-all-environmentally-friendly fall scents for my office. I usually try to stick to essential oils or at least soy or beeswax candles..... but I couldn't resist. 6. I am taking my husband to get his first blood draw done in at least 10 if not more years. Because he has such a bad phobia he has to take valium. I can't lie I am excited to see my husband stoned on drugs.
My hands have been freezing today. I cannot keep them warm. Checking CP/CM was a little awful today.
I cheated and ate bad lunch for 2 days in a row, but after the house thing yesterday IDGAF
It feels really good to be back in this community after my break. I think just lurking with no ability to post (cancelled my account) really helped me in regards to my knowledge. I actually feel a part of this community not just on the outskirts
My mom is coming to visit this Saturday. I should be happy about it, I am not. Her birthday is Thursday so I guess I need to go get her something for when she comes down here...
The biggest reason I want to move is to have doggies. Right now we live in a dog free community.
I got a new planner yesterday! It's from MeandMyBigIdeas. I love it!
My boss will be out of the office for surgery from Thursday through the following week. I am pretty much in charge at our clinic while she is gone. We have resources for other real management staff but if it's a basic issue they will come to me. Makes me feel great that she has that trust, but nervous at the same time.
@LuND snowing?? It's 80 degrees here today... 1. It's my birthday! So blessed to see another year.

4. I didn't want to make a big deal of my birthday or spend a lot of money going out to eat for a fancy birthday dinner so DH is grilling steaks tonight. Yummmm!

1. Today is the first really cold, fall day here! I actually kinda love it. 2. I went grocery shopping without a list last night (MAJOR no-no for me) and it was not a disaster. 3. I'm excited to go to dinner with two of my girlfriends tonight. 4. I put together the CUTEST centerpiece last night with some cheap stuff from Target and I love how it turned out! It's so cozy and fall-like. 5. I'm not big into Halloween but the one thing I do look forward to is the Fear Fest on AMC, when they show all the old Halloween and Friday the 13th movies. Cook the shallots in some olive oil until translucent add in apples and squash then add just enough stock to cover and let simmer for 20 mins I used an immersion blender to puree everything after it cooks and is tender (if you don't have one you can transfer this to a blender and then put it back into the pot but I highly recommend getting one. Mine was $20 at target and it works great) Then add the coconut milk and season to taste.
If you make it, let me know how it turns out! Happy Cooking!
Eta: @kat0607 I think it is pretty mild in taste! Some other recipes spice it up with curry or red pepper flakes if that is your thing. I know what you mean about not wanting to make a whole batch.. I hate throwing away food but you never know until you try!

10. Work has been really slow recently, which has been a nice change, even though it sometimes makes the days go by slowly.
ETA: spacing
It is loosely based on these recipes:
https://www.cookinglight.com/food/recipe-finder/butternut-squash-soup-recipes/butternut-soup-coconut-milk
https://www.foodnetwork.com/recipes/ina-garten/roasted-butternut-squash-soup-and-curry-condiments-recipe.html
but this is what I ended up doing exactly:
2 shallots minced
2 small apples any kind peeled and chunked (I used honey crips because it is in season)
1 butternut squash peeled, seeded and chunked
Chicken stock about 2 cups
1/2 can of full fat coconut milk
pinch or two of ground nutmeg
salt and pepper to taste
Cook the shallots in some olive oil until translucent
add in apples and squash then add just enough stock to cover and let simmer for 20 mins
I used an immersion blender to puree everything after it cooks and is tender (if you don't have one you can transfer this to a blender and then put it back into the pot but I highly recommend getting one. Mine was $20 at target and it works great)
Then add the coconut milk and season to taste.
If you make it, let me know how it turns out! Happy Cooking!

3. Speaking of spoiled dogs, it's horrible but we let him sleep in the bed. As in, he likes to be under the covers. And I let it happen because I love the puppy snuggles.
4. I made some excellent guacamole this week and I'm going to have the last of it for afternoon snack.
5. I finally submitted an expense report that has some receipts going clear back to June. It had four round trip flights on it, a group meal, and a whole bunch of other stuff. It's a pretty big chunk of change. We switched to Concur last month so I had to figure that out in order to do it. I'm so glad to finally have the dang thing done.
6. ***TW - other person's birth/baby*** One of my best friends was due later this month. She has epilepsy and had one seizure earlier in her pregnancy. She had another one last Thursday and ended up having her baby Friday morning. I'm just so glad that both she and the baby are safe and sound.
7. My current gym show is the season 6 of The Walking Dead. I'm looking forward to watching some tonight.
8. I just found out that my taco wagon is now open for a short time on Sunday and they'll have tamales that day!
9. This cycle's pineapple is a really tasty one.
10. H refinished our deck this summer. It looks really nice and you can tell it's protected for the winter.
