  • @britters314 two shredding chicken suggestions for you. The first is expensive but a KitchenAid Mixer with the "normal" paddle shreds super fast. Or the cheap option of Bear Paws

  • @britters314 another shredded chicken option... have you ever done it in a crockpot? DH and I do 4-6 pounds of shredded chicken each Sunday and then use it throughout the week for quick meals and for lunch salads. Just put those huge boneless/skinless breasts in the crockpot, a half cup of apple cider vinegar (sometimes I do more), and about 8-12 ounces of chicken broth. add any other spices (sometimes i do basil or the pre mixed italian spices, keep it on high about 4-6 hours (more if its frozen)  and i swear it shreds with a wooden spoon!!! just poke at it and it falls apart! then as I use it I add spices (bbq, etc) by portion.

    @bumpybump I LOVE my calphalon unison pans as well!!!! Though DH managed to ruin one because he used forks to stir omelets grrrrrrrrr

    WAYDTGKU: all the stuff, not as much BD up to this point as I would like (read... once) but just got my first high reading on CBAD so hopefully we up this game.

    R/R: DH had a 101 fever yesterday and a 101.5 this morning but he has a big deal closing so he had to go into the office today and will probably not be back before midnight so there is no way he feels better by tomorrow when we are supposed to go away for the night. plus i woke up with my throat on fire sooooooo I am concerned about timing and getting through this work week fever free

    the spiralizer attachment for the kitchen aid! DH has celiac so we make a lot of veggie noodles so I can still eat red meat sauce. Crockpot is a close second (see comment above haha) it is a life saver that lets us keep food cost down and avoid takeout and stay on the healthier side

  • @kat0607 time away sounds so nice!  I miss when we could just pick up and go. 

    @kiki75 DH loves cast iron skillets/Dutch ovens. He used them on our smoker. I just got my first Joseph Joseph kitchen item yesterday. It's a rolling pin that gets you the correct thickness. I'm hoping it helps my pie crusts. 

    @WillRunForWine21 I didn't know there's a spiralizer for KitchenAids. I gotta check that out!  I was thinking of getting one from PC. It may be worth seeing if Calphalon would still honor the lifetime warranty on the pan DH ruined?

    @bmo88  I saw a story on FB about some football players kneeling. I wonder if it was about your school.

    @spk112 +1 for the Wusthof! It's so wonderful (and safer) to have great knives!

    eta: we also got an under cabinet mounted knife block for ours and it's so nice to have it off the counter.

  • @bumpybump  Thanks for the suggestions. H really wants to get a KitchenAid, but we'll probably try the Bear Paws in the meantime.

    @WillRunForWine21  We have done shredded chicken in the crockpot and it was great, but usually I'm shredding chicken for a specific chowder recipe that requires we cook the whole breast in the pot and then shred it at the end. I don't know if it would work well using pre-shredded chicken.

    @beachbunnyxo123  Oh, I'm probably going to call and complain, but I doubt they'll give me anything and there's nothing I can do about it because they basically have a monopoly of this area.

    R/R: rant: just spent the weekend for a wedding in VA with DL's family. It was a 9 hour drive and with a crabby 16 mo old and using my only vacation for the next 6 months SUCKS. It's not been a vacation. It's been nothing nothing but stress. We left a day early because of the threat of flooding from Matthew and honestly because I don't think I could've survived another day of DD being so wildly off schedule that she's a jerk like she has been. I absolutely love my inlaws it's just...this wasn't practical with DD being her age. Ugh. Ok we are 30 minutes into the 9 hour drive home. Pray for my soul. 

    CS/Q: my chart sucks and is invalid.

    WAYDTGKU: Trying to relax and enjoy the first month but bought OPKs and may try preseed. 

    R/R: Booked a weekend away next weekend to spend with DH. Alone and away from all of the things that need to be done. Haven't had a vacation all summer and fall being our favourite time of year seems like the perfect opportunity. A friend of ours is coming to stay at the farm and care for the animals !

    Our newly sharpened Grohman knives have made life easy. I have been chopping veggies daily and either roasting or throwing them in the slow cooker. I swear the slow cooker is a summertime life saver !

    R/R: Our car won't start. And we only have one, which means we're kind of stuck at home until the garage opens on Monday and they can *hopefully* fix it. Thankfully both H and I work at the hospital and we live right next door to it so at least getting to work is not an issue. But we had plans for our anniversary on Monday so we'll likely rent a car once one of those places open up on Monday as well.

    On the plus side, my mother in law just gave us the sweetest anniversary gift! She made a scrapbook with stuff from my med school graduation, our engagement, shower, rehearsal dinner, wedding, and honeymoon. It was really touching to see all the things she saved, including the invitation i sent them to my graduation and the tickets for my graduation. I teared up! 

    CS/Q: nothing yet, O is coming soon... I got ewcm (which i nearly shouted for joy about , haha) and my opk's are darkening

    I love my slow cooker... I don't use it nearly enough but I love throwing things in there and letting it cook. I need to find some more recipes and put that thing to good use!

    I went to a fall fair today and I saw a lot of women who had what looked like a 3 year old...maybe a 1 year old and was pregnant. And I got really bitter and was like...how can people be so fertile?? And there's a girl at my church like that too...she has 4 kids 5 and under. It makes me wonder how some people are like baby machines and I can't even make one. I know it's not a healthy attitude to have, and it isn't fair to them either...but it's how I feel.

  • @tripledaggerWed95976 Yeah, unfortunately Lyme has a ton of symptoms and can really mess with your body. Most of my family has gotten it because of where we live and it has affected us all differently. My twin was hospitalized due to the headaches and had nerve damage in her eyes. I was just totally off balance wise, got confused / forgetful easily, and slept for like 16 hours a day. If it is, PM me and we will talk.

    R/R: I don't have any, other than I'm over the moon that I'm finally trying clomid, hopeful for this cycle.

    WAYDTGKU: should probably start OPKs today

    R/R: I had my LASIK on Friday and it's been great. All I have as far as pain/discomfort is some eye strain.

    GTKY: What's your favorite kitchen utensil/gadget (excluding appliances)?  Why is it your favorite? I love our crock pot but I haven't used it too much over the summer. My LeCreuset dutch oven is my newest favorite. With the crockpot, I usually only use it on weekends because during the week I'm not home 8 hours before dinner to cook on low or even 4 hours for cooking on high (estimates of course). The dutch oven cooks in a similar fashion but I can do stews in 90 minutes or less, etc. I've used it on the stove to saute veggies and in the oven for pulled chicken, bread, and roasting chicken. 

    @pepper16 I love our LeCreuset! Ours is also blue and I just made pulled chicken last night and even dutch oven bread last weekend. 

    @vintageandrea90 We just got a spiralizer and I love it!

    @slavenski I haven't even tried it IN the oven yet - I must do that! Pulled chicken and bread are both great ideas.
