@JustBored10 - What a diverse menu! Salmon with veggies sounds really delicious right now. I've been all about fish recently. Do you serve anything else with it? Rice? Pasta? a potato?

I'm not an adventurous cook, but DH seems to love my cooking. Since I work in the afternoon/evenings I am a huge crock pot user. DH isn't much of a cook but he helps out by making us subs 1-2 nights per week when I get home a little later.
Monday - crock pot chicken tacos Tuesday - tuna subs (made by DH) Wednesday - meatball subs Thursday - pasta with zucchini and meat sauce Friday & Saturday - out, or take out!

For lunch this week, I prepped a delicious healthier version of hot wings! I used my electric pressure cooker and cooked chicken thighs and breasts in celery tops, chicken broth, and garlic. When they were done cooking, I cut the chicken into bite sized pieces and tossed it in buffalo sauce. Then, I broiled the pieces, stirring and adding more sauce occassionally, until crispy.
For sides, I roasted Brussel sprouts and also have celery and homemade Greek yogurt ranch dresssing.
I don't have specific meals planned for each day but this week we are doing sloppy joes, garlic Parmesan chicken, orange chicken with rice, Mexican casserole, and then going out for hot garlic hot wings one night because I have been craving them something fierce!
Monday-Grilled Pork tenderloin with zucchini, squash and red potatoes Tuesday-Grilled Chicken (hopefully- with my last pregnancy I had an aversion to chicken) and green beans Wednesday- Turkey burgers and sweet potato fries Thursday- Tacos Friday- Jeffersons (a local resturant bc i dont cook on fridays!!)
Notice a theme?!?!?! GRILLED bc that means my DH gets most of the cooking while I chase our 2 1/2 year old around. lol
Mmmm yum. I only have a few things planned this week due to evening conflicts but...
Monday- Veggie quesadillas and seasoned black beans Tuesday- Grilled chicken thighs, grilled veggies from our garden, salad Wednesday- Crockpot potato-leek-kale soup, grilled cheese Thursday- Dinner at the in laws for MIL birthday. Likely Salmon, potatoes and salad Friday-Sunday out of town to my parents!
DH and I split the cooking since we both work full time. He is probably a better cook than I am but I am no slouch in the kitchen. We take turns shopping on Sunday and each cook 3 days during the week. Yesterday was DH's day and he made his famous roast chicken for his mom's b-day. Monday--Spaghetti--DD's request Tuesday--DH Wednesday--Seared Broccoli Soup-a new recipe! Thursday---DH Friday--Turkey, Feta and Spinach burgers with Baked French Fries Saturday--Out I do alot of slow cooker and freezer meals so that I can get dinner on the table by 6:30 at the latest.

We have fresh coho salmon in season right now so I get it at least two times a week! My husband is gluten free so we might do quinoa. I love to add curry to my quinoa while cooking so its not so bland tasting. Or I might cook up some Kale or spinach.
OMG you mean you don't decide what dinner is the day of? Haha I need to get better at this. I was happy with last night's dinner. I have been growing my own herbs recently so I made cilantro lime chicken that came out really good. But tonight is still a mystery
@email2ash _ LOL thats me. I'm horrible at planning meals but want to be better. Maybe a NY resolution especially since I'll have three crazy kids and DH to feed by late 2017 HAHA

@email2ash - I was just about to say the same thing! I have every intention of meal planning, but then it ends up being "idk, whatever we can think up with what we have"!
Busy week so not much cooking but I'll share a lazy girl cooking trick. Yesterday I grabbed a rotisserie chicken and we had that with quick cook cous cous and frozen broccoli. Tonight we had "chicken parm heroes" (leftover rotisserie chicken mixed with italian sauce, served on garlic bread with melted mozzarella). Love when I can get two different meals out of one thing.
All of these sound so good!!! Monday we had honey sesame chicken and roasted broccoli, Tuesday leftovers, tonight's is burgers and brussel sprouts and not sure on the rest of the week but this is good inspiration.
Re: Meal Plan Monday (10/3)
Monday- Black beans tacos with guacamole, cumin quinoa and cashew sour cream
Tuesday-Veggie Omelets
Wednesday- Salmon with veggies
Thursday- Mushroom burgers with sweet potato fries and sauerkraut
Friday- Out!
