Here's one that is too awesome. "Caramel" dip: 1 - 2 cups of dates 1/2 - 1 cup of cashews 1 tsp vanilla 1/4 cup(ish) maple syrup Soak the dates and cashews for a while. A few hours or overnight. Blend in a food processor with the vanilla and maple syrup. Blend it until super dooper smooth. Add a bit of salt to taste. You can leave out the cashews if you want. You can add coconut if you want. I don't follow recipes so this is how I make it and that's why there are the ranges. You can find all different kinds of recipes for this online too.
Bonus: mix a tablespoon or two with soy sauce to taste (probably 2-3 tblsp for every 1 of the dip) = instant teriyaki sauce. I just did this for lunch with broccoli and a salmon fillet. OMG. I added a bit of sriracha too.

Today's dinner is not for everyone, but it is so easy, and DH and I love it! The amount of ingredients I put in depends entirely on how I'm feeling that day (for example, tonight is an "ALL THE POTATOES" night)
"Porkchops and Kraut" Fingerling potatoes or red/yellow potatoes quartered 1/4 to 1/2 of an onion Sauerkraut Carrots, chopped 1 package of porkchops, preferably bone-in Salt and pepper to taste
Put chopped onion, carrots, and potatoes into crockpot. Add as much shredded sauerkraut as you like (I like more, DH likes less). Salt and stir. Season porkchops with salt and pepper. Brown porkchops in oil. Put porkchops in crockpot on top of kraut and potatoes. Cook for 4 to 6 hours. Receive hearty meat, potato, and kraut goodness!
Today I had no motivation to cook.....so I got a stuffed crust deep dish from Little Ceasars LOL Being on my own for dinners the past few weeks and for the following few weeks has made it hard to want to cook meals for just myself (well and Baby H I guess ) so I try to do a single chicken breast with a baked potato or steamed veggies...but I would LOVE to make shepherd pie this week!!!!!! (its not that I cant make meals that involve leftovers, it's just that I would have to eat ALL the leftovers for the next 4 days which gets boring very quickly)
I had an epic soup fail last week though, Butternut Squash Apple soup...somehow turned into thick baby food like mash *covers face with hands* I know I could have thinned it out but I had already used 2 extra cups of chicken stock...*shrugs* It probably wasn't the best recipe lol
