What's cooking?

We had a boss thread about this when we were all pregnant. (Nawww, being pregnant...)

Have things changed? Does everyone still get time to cook now our LO's are here? 

If so, post recipes! Love food, nice and healthy (loosing baby weight, but still have a bit of a tummy)

  • We are also Paleo in this house. As of Aug 1st. We love it. I feel really good. We don't own a scale but we do use measuring tape to track. I'm down 7 inches over all my body!!!!! Yay!! I actually hardy gained 21 pounds total while pregnant, lost it all easy after baby. Then, in January of this year, months of no sleeping and poopy eating I gained a little over 20 pounds. It just crept on due to stress and shit eating. I'm talking hot pockets, crackers, quick frozen meals. I was exhausted and eating anything easy. Not anymore. Fresh fruits, veggies. Cut out all dairy and sugars. Not even in my coffee/ espresso. I had an awesome workout two days ago, so sore and it feels GREAT. Need to keep it up. 

    Another thing, I try to eat two raw veggies with every meal. Sub in lean ground turkey for beef anywhere I can. Push water with fresh lemon and lime all day and night!!! 

    A new thing I would have never tried before Paleo is spaghetti squash!! Yummy. Used lean turkey as meat.  Avocado and sauce. Healthy and yummy. 
  • Yes, I make every meal, breakfast, lunch and dinner, every day. Sometimes I try to pre make things, like today I meal prepped for the week for breakfast and dinners. We have food allergies so I have to make almost everything from scratch. 

    We love spaghetti squash too! One of the kids' favorites is homemade sloppy joes. 

  • Food/Recipe thread, yassss!!! With a family of 5, I have to do a great deal of cooking. With the chaos of picking up my boys from school, helping with homework, tending to Piper, etc, I try to make dinner as easy as possible. I use the crockpot often, but recently I've been into chicken "bakes". Basically salt & pepper however many chicken breasts you need, and lay them in your baking dish. Then get creative! Examples:

    *coat with BBQ sauce, top with red onion and bacon (I always buy the pre-cooked bacon so that it gets nice & crispy). 

    *add extra pepper, lemon juice & zest, top with lemon slices

    *coat with ranch, top with sliced onion, tomato, and bacon

    *coat with marinara, top with pepperoni and mozzarella cheese, sprinkle of Italian seasoning. 

    They all go in the oven at 400 degrees for 35-40 minutes. Add veggies on the side & done. 

    I'm making chicken fajitas in the crockpot today. Chicken, assorted colored peppers, red onion, garlic, taco seasoning (the kind made for chicken, or the regular works fine too), juice of 2 limes, splash of EVOO, cilantro & a can of Rotel (tomatoes with chile peppers). Cook on low for 5 hours. Serve on warm tortillas with avocado, sour cream, cheese, etc. Yummers! 




  • Clean eating household here! At least 5 days a week, because Panera, and other places...

    I'm prepping mango chicken bowls for lunches, which is chicken breast in the slow cooker with chicken broth; shred when done; serve with 1/3 cup brown rice, 1/3 cup pinto beans, 1/2 cup homemade mango salsa (mango, Roma tomato, jalapeño, cilantro, red onion, lime),  and cilantro avocado dressing (Greek yogurt, avocado, cilantro, lime). Mmmmmm it is so good!
  • I've always found the time to cook (even if we don't eat until LO is in bed at 8!). In the summer we bbq more as we don't have AC and using the oven gets hot. But with little guy eating what we eat we keep things simple and clean. Chicken with rice. Steaks and sweet potatoe fries (home made). Homemade hamburgers. Crock Pot Chicken Fajitas. There's alot more we cook. 
  • Totally not weight loss friendly but I splurged last night and made fresh pasta with my mushroom smoked Gouda sauce... It was my anniversary, I can cheat!  I've put up with the man for 7 years, I need all the calories! But usually yes I try to focus towards meat and veggies and I cook everything from scratch, my house may be a disaster but there's no processed crap in this house! Also my baby will eat raw veggies like they're candy, we've been snacking on cucumbers and green beans straight from the garden. If anyone else gardens I tried the heirloom lemon cucumbers this year and they are awesome! They out performed the market mores and they look so cool! Oh and baked zucchini fries are an awesome baby (and husband) treat...
  • We are mostly paleo, though I still eat bread and cheese occasionally, we try to eat healthy and fresh if we can. I have been into Mexican lately, and baby is loving it. Chicken tortilla soup, or two salad bowls with cilantro/lime rice, beans, corn, tomatoes, avocado, and romaine. Also using the crock pot a lot for things like bourbon chicken with broccoli or roast beef with potatoes and veg. LO loves fruit so we always have lots of fresh fruit around too for snacks, and we eat eggs every morning and he LOVES them! I get most of my recipes from Pinterest.

    @PinkPrincessPiper those fajitas look delish! Fab idea too with the chicken. 
    We're having fajitas done in the crock pot tonight. Recipe slightly differs to yours.

    4 slice chicken breast
    1 cup of chicken stock
    2 packets of BBQ fajita mix (yes, I cheated there, lol)
    2 red peppers
    1 yellow pepper 
    1 green pepper
    1 & 1/2 white onion sliced

    Cook on high for 3/4 hours.

    Serving them with large wraps, sour cream, salsa & guacamole.

  • Made Crock Pot Shredded Chicken Tacos tonight! So delicious! Made LO his own chicken and veggies in the oven though! 

    Here is my recipe:
    Ingredients:
    -3 or 4 chicken breasts (boneless, skinless)
    -2 Green Bell Peppers
    -2 Red Bell Peppers
    -2 Yellow Bell Peppers
    -2 Orange Bell Peppers
    -1 medium sized onion
    -chicken broth 2 cups
    -taco seasoning packs (2)
    -minced garlic

    -Put chicken in Crock Pot with two cups chicken broth and taco seasoning
    -Cook on high for 3 hours
    (You may need to drain a bit of liquid after the 3 hours but make sure to leave a cup in the crock pot)
    -take forks and shred up chicken in crock pot
    -slice up peppers and onion add to crock Pot with extra taco seasoning
    -cook on high for 2 hours
    -add minced garlic cook on low for one hour

    Serve with tortillas and your favorite toppings!

    @BabyBugutsy that sound delish! I've taken a screen shot. 

    Love the crock pot (crocky I call her, haha) I love to slow cook joints of meat. My fave has to be beef. You can also throw some potatoes in an hour and a half or so before serving. They turn out lovely, as they soak up all the juices. Steamed veggies on the side, and yum! Nice and tasty meal. I have to stop Liam from helping himself to the gravy, lol. He just loves it! 

    2 cups of beef stock 
    2 large white onions
    Joint of beef (I like to use a 28 day matured joint of beef, lots of flavour) 
    gravy granuals/corn flower 

    Chop onions, place beef (after sealing in a small amount of oil) on top on the onions, and pour in the stock. Leave on medium for 6-7 hours. I also add gravy granuals or corn flour to  thicken the gravy in the last couple of hours. It comes out beautiful, all ready for shredding. I've found also if I take it out an hour earlier, it slices perfectly. 

    @LoveLee85 that spaghetti squash sounds really tasty. Liam LOVES spaghetti. Would you mind posting the recipe?
    Does feel good to ache the next day doesn't it? I have no one to have Jake, so I can't go the gym. I've been using this 'Instant Abs' machine. It's good, works your bum, upper thighs and your abs, obvs. I did over do it a little too much a few weeks ago, and could bearly move. Lesson learned! Lol. Also, a little yoga when I can. It's a great way to relax after a stressful day of legging round the house after this little Tarzan. Congrats on the weight loss! 

    @yellow1daisy Nice. Hope hubby enjoyed his steaks sounds like a lovely piece of rib eye. Also enjoy a chicken salad, I tend to use a vinagarette dressing. Never made my own Mayo before. Is it easy to make? I know normal Mayo is full of saturated fat. Is the one you make yourself healthier? Congrats on the weight loss too! 

    @booksandcleverness81 The more I read about the Paleo diet the more I like it. I would miss my bread & cheese though too! I could munch away at a block of cheese quite happily! 
    How are you finding it in general? Is your hubby ok with it? 
    The bourbon chicken with brocolli sounds lush! Brocolli is one of my fave veg. I'll have a nosey on Pinterest for the recipe on that. Thanks!

    @mrsmctaggart6 Happy belated Anniversary! We have cheat nights too, lol. The pasta sauce! My word, I'm salivating here, and it's 9:12am! Haha. You also made me chuckle with the "I've put up with this man for 7 years) lmao.

    @blizmark I wonder if I could try that minus the mango's? I don't like mango. Damn it. I reckon it could be done?? 

    @ForeverEverAfter haha! Yes, that counts *winks. Homemade tzatziki! Love it! So much nicer when you make it yourself.

    Never cooked fajitas in crocky before. I'd use less liquid next time.... So tasty though, much better than stir frying the chicken, much more tender and succulent.

    @RobsMrs77 I call mine Betty Crocker lol. I have two crock pot that's how much I use them. I also make pulled pork in the crock pot.

    Here is the recipe:
    - 1 pork shoulder or pork butt
    - ground sage 1 tablespoon 
    - pepper 1 teaspoon
    - garlic powder 1 tablespoon
    - salt 1/2 teaspoon
    - 1 tablespoon  of oil
    - 1 cup water
    - 1/2 cup beef broth
    - 1 onion
    - bbq sauce of your choice
    - buns of your choice

    Mayo I serve with it:
    - 3 tablespoons mayo
    - 1/2 teaspoon paprika

    - Take skin and large pieces of fat off meat if there is any
    - Rub oil over meat
    - Mix sage, pepper, garlic powder and salt together in a bowl
    - Rub spice mix over meat
    - Put beef broth and water in crock pot
    - Place meat in crock pot
    - Slice up half the onion put in crock pot with meat
    - Cook on high for 3 hours then on low for 3 hours
    - Take meat out and shred
    - Mix with bbq sauce and heat in oven for 10 mins at 300

    Serve on your choice of bun, with your favorite toppings and sides and enjoy!!
  • The sauce is like my favorite thing ever and I would probably sit down and eat it with a spoon but I don't even want to know how many calories I'm dumping on top of starches, lol I made a loaf of Italian bread too...
  • @RobsMrs77 this time I actually ended up using a mayo by a brand called primal kitchen and it's made with avocado oil. I have made it myself in the past though with olive oil. Still very high in fat but we are actually on a high fat/ low carb sort of diet. Healthy fats of course. Saturated fats get a bad rep. Coconut oil, for example, is about 90% saturated fat but it's still just about the healthiest oil to cook with since it is not damaged by high heat. Whereas, olive oil, while a very healthy source of fats, oxidizes when heated and can do more damage than good.

    I usually cook with coconut oil or ghee and use other healthy oils in their raw form for dressings. 

    And now I've gone off on a tangent! Lol. Sorry.

  • Haha! @yellow1daisy no you didn't, lol. I've read about that regarding olive oil. Ghee is amazing stuff. I use it to make chappatis, but never as part of a dressing.... Very interesting. :)

    @mrsmctaggart16 Italian bread! Ohh, the memories. I used to bake bread all the time, got a little obsessed with baking it, my hubby used to laugh as the oven was constantly on; with different types of bread all over the kitchen.

    Tonight's dinner - teriyaki chicken (thanks "crocky") served with egg noodles, spring onion; purple sprouting brocolli, and toasted sesame seeds.... It was DELISH!! highly recommended.

    I'd like to think ill get that time back again. I really enjoyed it. Found it very therapeutic, loved the end results. My favourite was sour dough. So yummy!

  • Chilli... Served on potato wedges with melted cheese, and a big load of sour cream. LUSH!
  • My crockpot is my best friend haha. Today we're having pot roast for dinner since it's a bit chilly outside. I can't decide if I want to make a green bean casserole to go with it or not.. still have a few hours to decide so we'll see.
    Pot Roast Recipe
    2-3 lbs Chuck Roast
    2-3 cups beef broth
    2 medium onions
    4 small red potatoes
    2 cloves garlic
    Handful of baby carrots
    Rosemary sprigs
    Bay Leaves
    2-3 Tbsp Olive Oil
    Salt and pepper
    Add olive oil to large pan, let it get super hot, cut onions in half and sear in oil. Place in crock pot. Quarter potatoes and sear in oil. Place into pot. Sear carrots oil. Remove and place in pot. Rub chuck roast with salt and pepper. Sear in oil on all sides. Place into crock pot on top of veggies. Turn off heat from pan and pour in beef broth, scraping the pan with a whisk. Add broth to crock pot. Place a few rosemary springs and a few bay leaves into crockpot. Put on lid and turn on low. Heat on low for 8 hours or until roast pulls apart easily with fork.

    Found out i have celiac disease so dinners are such a PIA now. Half the time it is some sort of grilled meat (usually chicken made different ways) and a vegetable. I use spaghetti squash a lot. My new fave meal is spaghetti squash with Italian chicken sausage, spaghetti sauce and mozzarella. or I do stuffed peppers a lot as well. Super easy and yummy. If any other fellow celiacs have an EASY gluten free recipe, please let me know!

    No celiac disease but we are a gluten free household by choice. There's a lot of good brands of gluten free pasta (Andean dream a corn-free brand is my favorite), and you could always do rice to change things up a bit. I'm doing no grains until I lose hopefully 20 more lbs or get pregnant again whichever comes first (trying for baby 2 come December). And I sure miss some rice and curry or my vegan pesto pasta! Right not just mostly veggies and meat here too. 

    Last night I attempted to make a cauliflower fried 'rice'. Had cabbage baby broccoli carrots in there. Coconut aminos instead of soy sauce and some sesame oil with some eggs mixed in. It came out pretty good but doesn't hold a candle to the real thing unfortunate lol.

  • I just miss pizza and beer. When i found out i had it, I almost felt the need to hold a memorial service in their honor. lmao. But seriously, thanks for the tips!! That brand of pasta I have never heard of it. I notice a lot of gluten free pasta and breads have more carbs and sugar than regular pasta. So I tend to stay away from it. And you will lose a lot by going gluten free. I was diagnosed about 2 months ago and already went from a size 12 to 10! and from a 40 in bras to 38 and some 36!!
