Freezer Meals:

@ladysaceb I saw that you asked about freezer meals and I think they deserve their own thread. There was one a couple months ago but the title was ambiguous enough that I we should start a big one. 

So, what are you guys making and freezing? Have you gotten started? Any tips or tricks you care to share?

  • I always have a few on hand for days when I'm lazy or run out of time. I love lasagnas and stuffed shells because they freeze and re-heat really well. Soup is a good one too

    1. Breaded chicken breasts. 

    2. Lasagna 

    3. Shredded beef. Chuck roast in crockpot on low for 7-10 hours with some beef broth. I used to seer it first. I don't anymore and I don't notice a difference. Freeze in small portions. 

    4. Chicken and wild rice soup- my toddler calls it "shtoop". Super filling and delicious. Oh and she eats it. I add noodles when I reheat it.

    I'll add to this.  What containers do you freeze in?  I have used zip locks for soup or crock pot meals but the containers I tried to use for lasagnas and casseroles the lids tend to not stay on and I also have trouble with them getting freezer burnt. I want to have a good selection of meals available.

  • -lasagna
    -chicken enchiladas
    -slow cooker chili 
    -spaghetti sauce (homemade)
    -Swiss chicken (Pinterest it, does require a bag of stove top stuffing and a stick of butter but oh so good and my son loves it)
    -marinated chicken breasts (not a meal per se but just to have on hand to use as quick starters)
    -beef noodle casserole (ground turkey or ground chuck if you prefer browned/drained, 1 can golden cream of mushroom soup, 1 can mushrooms, 1 C shredded cheddar cheese, some milk, mix all together until cheese is melted, add in 1/2 pkg cooked egg noodles put in casserole dish cover with more cheddar cheese--again, toddler approved)--this is a comfort food one! 

    And now I want to eat...again. Dollar store is where I pick up foil pans with lids. 

  • I'm so excited this is a thread. I have been wanting to start testing some freezer meals and setting aside a weekend in third tri to stock the freezer!
  • I do a lot of soup- potato, kale, chicken sausage; chicken and wild rice; turkey and veggie chili. I've also done chicken enchiladas; chicken, bean, rice burritos (make chicken in crockpot with salsa and shred); and lasagne. Looking forward to getting meow inspiration!

    So far I've been making use of the ridiculous amount of zucchini my garden is producing and making/freezing zucchini breads.

    I know I'm going to make a freeze chicken fingers and pulled pork in 1lb packages.  I'm going to ask my mom to make and freeze soup because hers is, of course, much better than mine.

    I need new crock pot freezer meals this time.  We only loved 1 of the ones I did last time.  Will check back for ideas and post more if I find anything good.

  • @cjs260 I used that same recipe this weekend with a little tweaking since I didn't have Italian dressing (I used beer instead).  It is SO good.  I never thought to make extra and freeze it.

    RE freezing: I put sauces and chili in gallon ziplock bags when cool, squeeze the air out and lay flat to freeze.  For casserole-type containers, I put seran wrap then foil.  You can write the re-heat directions directly on the foil too.  I can get 4-6 months out of them.  Anything I put in a container I wait until cool and then make sure I fill the container to almost full so there is minimal air but so that it doesn't push the lid off when it expands.  This takes some familiarity with what you're freezing.

    @colleenkevin I hear you with all the zucchini! So far, I've made lots of zucchini bread and muffins too. I also just made zucchini tots and my toddler loved them! We also liked zucchini lasagna roll ups. I put zucchini in soups, on homemade pizza, in spaghetti sauce. Mt new favorite trick is to put some shredded in my DDs grilled cheese. 
  • I like to freeze:

    -lasagna and pasta shells - any baked pasta usually freezes pretty well
    -enchiladas or all the prepped parts so assembly is easy
    -marinated pork loin and pork chops
    -shredded chicken (I usually make a big batch in the crockpot and then freeze it)
    -spaghetti sauce
    -meatballs in sauce
    -pot pie filling and crust (separately)
    -chicken noodle soup

  • I have done a few of those freezer meal parties by Wildtree- they have great crockpot and skillet meals. In my experience the double-bag is key for freezer burn.

    So along the lines of freezer meals- anyone stocking up on mixes/ pre made stuff? 

    Tastefully simple just had a sale on beer bread so I bought the big box, and there are a couple of soup mixes (Frontier Soups, specifically the corn chowder- I die for that stuff) that I'll have on hand. Definitely interested in any other quasi-healthy, tried and true mixes/ pre-made stuff you guys might know of?
  • I stock up on muffin mixes pretty much constantly and have a ton frozen in the freezer pretty often too- DD never turns down a muffin. I've never found a soup mix I like, I'll have to give those a try @TinaBelcher, where do you find them?!
  • @katesmama0706 I first found the brand at Whole Foods but you can get them on Amazon too (YEAY delivery!)
  • @underthesea zucchini tots and zucchini grilled cheese are genius toddler food!  I'm going to be trying these with my toddler this weekend.

    We just tried lasagna rollups with zucchini and LOVED them.  My mom sent me a recipe for summer squash and corn chowder that I'm going to try too.  I've never had so much squash and zucchini before, but I like that it's forcing me to be creative and try new things :)

  • I think I am going to do just soups this time for the freezer.  Perfect for winter.  I usually make chicken noodle, vegetable, and ham and white bean soups.  I will probably add a chicken tortilla soup to the mix.  Otherwise, I usually do a lot of salad with baked chicken sliced on top.  If I can use my oven to make dinner it is a life saver.  I am not a huge crock pot fan for some reason, but might give a few recipes a try.

  • I love cooking a giant spaghetti squash, either in the oven or the crockpot and then freezing that in smaller portions. It's great with shredded chicken and veggies on top, parmesan cheese olive oil and some fresh herbs, sauce and meatballs (which I also freeze a lot) and it's healthy! I'll usually freeze 2 servings in a bag and if I'm making something and my husband wants pasta, I'll just sub in my squash!

  • I haven't really had a need before to cook/freeze meals in large portions, but will be following this thread for ideas. 

    I do often freeze soups, stews, and chili in the fall and winter. I prefer to freeze them in mason jars - the wide mouth pint-sized jars are perfect for individual servings. The jars should not be more than 3/4 full, and everything should be fully cooled before going in the freezer. Then I take them out to defrost the night before or first thing in the morning, and as long as they are mostly thawed they can be reheated directly in the jars in the microwave. 

    Will definitely be making and freezing lots of soup this fall, as it will be handy to have on hand for lunch/snacking. 
  • @Krb22 I love the mason jar idea, I need to start doing that. Plus they are uniform so would be easier to store in the freezer too. 

    I usually use foil pans for casseroles and plastic containers for soups, but lately the plastic has been cracking so that sucks...I sometimes use ziploc bags too and they work the best I think. 

    I do "big cooks" every couple months and fill my freezer. I usually do it with a friend to make the time pass by fast and to fill their freezers as well. You can usually make 20+ meals for $100-150. I run a carehome so I need quick and easy meals for a large group and I plan on doing at least two more big cooks before baby because I know I won't be able to meal plan efficiently. 

  • I've been pinning freezer recipes. With DS only did chili, cookies, and muffins. I ended up wishing I had done way more like lasagna and such. I'll be doing at least a month worth of food if it fits this time.
  • Is anyone buying a new freezer? I think I am, there are pretty inexpensive chest freezers on Amazon that have great reviews and our side by side (KILL IT IN A FIRE I hate side by sides) is full to the brim already, always

    We ended up buying a chest freezer for our garage right before DD was born for the same reason you mentioned. It is also a deeper freeze for breastmilk and I had planned on keeping a big stash. 
  • I have had some down time at work, so I started making a list and pinning freezer meals that sound good. I'll probably start creating a grocery list based off of those things for when it's closer to winter.

  • I failed at doing this last time. The only thing I successfully froze were padsicles (helpful, but not tasty!). I need to start stocking up on tin containers so I can throw things in the oven.

  • Our deep freeze died a year ago (with 1000 ounces of frozen breastmilk in it :( ). We were thinking we would wait until we move to replace so we had room in our garage for it instead of having to move it to the basement. However we aren't going to be moving for at least a year and being able to stock up on food and have a place to store frozen breastmilk is great so we are looking for a chest freezer that takes up minimal space in the garage.

  • We have an extra fridge/freezer in the garage and a decent-sized freezer in the kitchen. Somehow both are usually pretty full (even though there's only 2 of us), so I started cleaning out the main freezer yesterday and will do the same in the garage. I'd think about getting a chest freezer instead of what we have in there but DH keeps all his craft beer in that fridge.

    we loved having an extra deep freezer! I used it solely for breast milk when I was pumping and it was incredible having the extra space!

    @TinaBelcher Yes! I talked to DH about scoping out the clearance/damage section at our local Lowes or Home Depot for a freezer. Maybe now I'll look on Amazon too. Our side by side (the worst) doesn't even fit an ice tray and a gallon of ice cream side by side on one shelf. I don't see how it can possibly fit freezer meals or breast milk. 

    ETA because I wrote milk instead of ice cream. Pretty sure you don't put gallons of milk in the freezer (except breast milk).
