Freezer Meals

Freezer meals were discussed in a few places, let's share all of our favorites to stockpile this winter.

We have been freezing cooked scrabbled meat (pan fried) beef/turkey in dinner portions (About 1lb for us). We can make tacos or just add to rice or noodles!

I would love to figure out the best way to freeze chicken like this too!

  • My only experience in freezing stuff is fruits and veggies.  There's a great farmers market that comes to town in the summer over the weekend.  We buy the produce we plan to eat that week and I'll usually buy a few peppers, onions, and corn.  I'll chop/slice them up, put them in freezer bags, and then put them in the freezer.  This way we have "fresh" veggies throughout the winter.

    I use chicken that I cook myself instead of rotisserie chicken due to food allergies. Otherwise it's a great recipe! The same site also has a red enchilada sauce recipe that is very very easy and made with pantry staples;  if you hate red sauce, you can top with either heavy cream or salsa Verde  (or a combo) before baking.

    These go great with any sauce - Spaghetti, BBQ, or even stroganoff style with noodles.

    I've also been reading about freezing pancakes, but I haven't tried that yet!

  • @bumpasaurusrex to they defrost well?  What do you use the peppers in?


    My goal lately is to make one dinner that I can double and freeze.  Last week I made chili, I buy the chili packet from the spice isle and double and I add onion.  Today I am boiling chicken breasts and we are having chicken enchiladas for dinner and I am making a double portion and freezing.


    A couple other meals I like for freezer meals are:

    stirfry - cook the stir fry meat, frozen veggies and cooked rice in individual bags put into a large one. I put the meat and veggies in the same bag pour stir fry sauce and then add the rice bag

    Taco meat - make the taco mean and on the outside I add the stuff I would need to round out the bag, normally with my taco meat I mix in black beans cause they are delicious and bulk up the meal and sometimes rice.

    Ground beef with some Italian seasoning ready to add jar sauce and make spaghetti

    I need to make a better list, this is all I could come up with off the top of my head.

  • @FishyMom eh the onions usually defrost kind of soggy but the peppers hold up well.  I use them in stir fry and sausage and peppers.

  • I freeze uncooked food with ingredients and throw them in the crockpot. I found a bunch of websites on sixsisters.com that you can make several meals at once. I modified some for our tastes but I usually pre bag about 8 to 10 meals when I do them. For some reason cooking food and then freezing and recooking it skeeves me out.

    I put chicken breasts in the crock pot for the day, shred it, the baggy it up and freeze it!
  • I had these saved in my "Meal Prep Sites" folder because I always plan on prepping freezer meals over holiday break...  This year, I think I'll finally have the motivation to follow through.

  • Chicken Pot Pie. I am totally planning on making a few of these to freeze around December. It is one of my favorite recipes. Can be a labor of love but I buy a roasted chicken at the grocery store and just take the meat off. My favorite pie crust is Immaculate Baking Co but Pillsbury works too.
