Meal Plan Monday

Not sure how we want to treat this weekly thread, but when I was on TTGP two years ago, we all shared what we were having for dinner that day, week, or something really yummy we made recently.  I'm always looking for new and easy dinner ideas, so let's hear em, ladies. I'm HUNGRY!!!!!!

  • I had intended to cook a mississippi roast and taco meat last night, but obviously failed at that. Then I forgot to take out the chicken breast to thaw for tonight's dinner, so I'm thinking grilled cheese?

    Wednesday: Crockpot Chicken
    Thursday: Waffles
    Friday: Pizza
    Saturday: I'm working my one Saturday this weekend, so it's up to DH to figure it out.
    Sunday: I really feel like trying a very Pinteresty recipe so we shall see.

  • Made zucchini fritters topped with sour cream. yummo
  • I made spaghetti tonight to use up some sausage I had in the fridge (and had my first bouts of nausea thinking about it, but it ended up being pretty good). Tomorrow I plan to make a massive double batch of chicken tortilla soup to eat on for the next several days and freeze for lunches. DH says he's craving it and I can't argue with warm, savory, tomato-y, cheesy tortilla decked goodness.
  • We had buffalo chicken strips last night. Enchiladas tonight, I can't remember Wednesday, Thursday is spaghetti, and Friday we are having BLTs. Kinda a comfort food week, we usually try to eat lighter. 

    Each week we plan 1 meatless meal and at least 1 crock pot meal. 
  • Our meal prepped lunched for this week are Pineapple and mandarin marinated chicken breast with wild rice and a vegetable side.

  • Last night DH and I made our favorite salad: https://www.sugarandgrace.com/2013/05/02/kale-and-brussels-sprouts-salad-w-bacon-and-pecorino/#comment-301  (I don't usually put the bacon in it, but it's totally delicious if you do!)  I was supposed to eat it with tortilla soup, but that made me queasy so I had scrambled eggs instead.  :/
