One of my favorite that I make is a Cheesy Pork Bean stew.
1 pork roast, thawed and cubed
2 cans Ranch Style beans
1 can Black beans
1 can Kidney/White/pinto beans
1 bottle taco sauce
2 small cans enchilada sauce
1 can olives
1 can diced tomatoes
1 1/2 cup cheese diced
1 8oz block cream cheese
Avacado and Sour Cream to taste - if wanted
Pour the ranch beans into the crockpot. Layer the pork, tomatoes, and other beans (rinsed). Pour Taco sauce and Enchilada sauce over the top.
Set crockpot on low, leave alone 4-6 hrs.
Add in olives, cheese, and cream cheese in. stir until melted and mixed.
Top with Avacado or Sour Cream if wanted.
Serve over warm rice, pasta, or cut up kale. You can also cut out one can of E.S. and make a really thick dip for chips.

Step two - fill bowl with lucky charms
Step three - go upstairs, recline on bed
Step four - pour a few lucky charms on bump. Get a good mix of crappy cardboard pieces with the marshmellows.
Step five - eat them.
1/2 cup peanut butter
1/2 cup maple syrup
3 tbsp olive oil
4 cups regular rolled oats
2 cups other goodies (nuts, coconut, pumpkin seeds - not dried fruit)
1 tsp vanilla
1/2 tsp cinnamon (can throw in a dash of ginger & nutmeg too)
Mix PB, maple syrup, olive oil, vanilla & cinnamon. Add oats and mix thoroughly, then add in nuts/seeds/coconut and stir. Bake at 350 for 20-25 minutes, stirring halfway through. Add dried fruit after it cools.
You can bake it on cookie sheets but sometimes it burns, so I've started doing it in a large casserole dish. Doesn't get quite as crispy but doesn't burn.
Mm, gotta make a batch tonight...

French dip sandwiches
in crockpot: (I eyeball so these are approximate measurements)
beef chuck roast
2 cants beef broth
1/4 cup soy sauce
2 beef bullion cubes
garlic powder
montreal steak seasoning
a bay leaf
an onion
cook on low 6 hours
serve on French bread with provolone
I also topped with caramalized onions. PITA but worth it: 2 onions, 1 tbs butter, 1tbs olive oil, 1tsp sugar. Cooked on low for about an hour

Seriously, I feel like I could eat it everyday. I also put an extra tablespoon of mayo and an extra 1/2 tablespoon of lemon juice, extra dill, a clove of garlic and used garlic salt instead of regular salt. Play with spices to get the flavor you want. I served it on a pita cut into triangles and toasted.
