Anyone else have to hide vegetables in their kids meals? I'm telling you, this is payback for my picky eating habits as a child! How are you doing it?
Ive been adding puréed cauliflower to his scrambled egg in the morning and mashed potatoes at night. I shave down carrots very fine into his Mac n cheese. Tonight I shaved down broccoli into his mashed potatoes and he seemed skeptical at first but plowed through them. I'm going to try sweet potato pancakes next but I would love to hear your suggestions!
LO has such a texture issue that he will only eat ground meat if it's mixed in something (hence the mashed potatoes/sweet potatoes).

DD won't let me spoon feed her anymore, and I don't have the stamina at the end of the day to let her try to feed herself things like mashed potatoes or mac n cheese, so you are my hero.
DD is absolutely obsessed with steamed veggies though, so I have that going for me. She will take down adult servings of steamed green beans or broccoli, any time they are fed to her. It is ridiculous. I do wish I could feed her mac n cheese or mashed potatoes though! She's iffy about eggs as well, and toast. And she will gladly eat banana bread off of my plate, but ignores it when it is on hers. Seriously.
Speaking of banana bread though...have you tried making something like zucchini bread? That's a good way to hide veggies. Or making spaghetti squash instead of using actual pasta noodles. Or pureeing veggies into a sauce for pasta. These are all things I used to do to try to fool DH into eating veggies. haha. :-)
He does love fruit, so we add spinach to smoothies. Spinach is also easy to add to eggs, without having to cook separately.
Peanut butter is a main source of protein here, too
I once read something that said whatever you eat while pregnant your baby will love so that may have something to do with it. I ate everything and lo is definitely not picky.
