This week is crazy for us- surgery for Dh later this week, so not much planning going on! But I will be making lasagna, his favorite, maybe tonight or tomorrow
I prepped a tasty summer veggie salad to have as an easy go-to lunch side for the week. I just chopped up cucumbers, sweet onion, and cherry tomatoes from a local produce stand and then seasoned it with fresh cilantro, garlic, cumin, chile pepper, and lime juice. So easy and tasty! Plus, it's one of those dishes that gets better after day one.
Turkey & biscon burgers. I'll eat it over a salad! I'm hoping this lasts most of the week (I'm so lazy during the week). Lunch all week is Sweet Italian chicken sausages with kale, mashed sweet potatoes, and Brussels Sprouts! Snacks are strawberries and tuna/kale mix.

I went to Costco on Friday and bought chicken wings because I really wanted chicken wings for dinner that night (I mix Sweet Baby Ray's Buffalo Sauce with ranch dressing as the sauce). The problem is you can't buy just one small thing of chicken wings at Costco and I didn't feel like going somewhere else to get them, so now I have 112 chicken wings left. So for dinner this week: chicken wings.

Love this thread. I need ideas!!! I made this last night since my chicken didn't defrost in time. (note to self... Take the chicken out of the freezer sooner than 1 pm... Duh). Eggs, spinach, sliced turkey, and cheese. Healthy and delicious. It has become my go to when I don't want to cook because it's easy and I always have these things on hand. Now to figure out the rest of the week.
Tonight is risotto with shrimp and asparagus. Tomorrow is buffalo chicken quinoa. Wednesday I'm attempting to make grilled pizza. If (when) that doesn't work, there is a good chance we will order pizza Then DH goes back to his crappy work schedule where he isn't ever home for dinner, so I'll probably eat veggie quesadillas for the rest of the week. They're easy, pretty yummy, and I only dirty one pan making them
Monday - Grilled chicken salads Tuesday - Beef tips with corn on the cob and grilled potatoes Wednesday and Thursday I will be at my grandmas to help her a few day; so I come home from work to a home cooked meal and my husband is left to fend for himself for a few days. Unless he is super nice then maybe I will make him something before I leave. Friday - We are camping so hot dogs and smores!
@marybpoppins That stuffed pepper recipe is one of my go to's!! So delicious and carb free so guilt free!

Monday: toasted ham and swiss english muffins with banana peppers. Tuesday: hamburgers, corn on the cob, watermelon. Wednesday: BBQ polish sausage and Mac and cheese. Thursday: Spaghetti and Meatballs Friday: dinner at the local classic car show Saturday and Sunday will probably consist of more hamburgers and whatever else I can find in the cupboard!
@Saralee797 I work at Safeway in the meat dept and we take green peppers and stuff them with a mix of lean ground beef mixed with the clubhouse dry meatloaf mix, bread crumbs and a can of tomato sauce, then sprinkle Parmesan cheese over top
Psssht. Monday, also known as IDGAF day, means takeout. Going back to work was traumatic enough without having to also cook dinner. What do I look like? Lol.

I love reading all your tasty ideas! I almost never meal prep, but it sounds like a great idea. I got lots of great deals on meat at the store yesterday and it is supposed to be crazy hot all week long, so my meal prep is basically throwing whatever we have out on the grill.
Tonight: Grilled chicken and veggie skewers. They turned out amazing!

I love this thread! Cooking is a huge hobby of mine and I'm always looking for new ideas...especially healthy ones.
Monday is DH's day off from the gym, so we have a little more time in the evenings and usually go out. Today we went to a local healthier-fare place that we frequent...it's whole appeal is that it's a paleo-friendly restaurant which is great since both of us are trying to drop a few pounds.
Tuesday- Baked salmon with this corn/green onion/zucchini side dish that I make a lot (kind of like a succotash I guess but I really just wing it) and a side salad.
Wednesday- chicken sausage cooked with Italian dressing, bell peppers, and onions.
Thursday- parents will be in town for a relative's birthday so we will likely go out to eat.
Friday- I haven't shopped for this far ahead yet but I'm leaning towards either a veggie lasagna or a beef and broccoli stir fry with brown rice.
@soemthingclever - LOL that was my exact thought. I was sitting there reading everyones responses thinking "damn everyone has their life together. I am just happy I made it through the day." As I munched on molten lava cake and smores cupcakes....
@soemthingclever@GrabberBlue2010 I started meal planning when I started commuting 1.5-2 hours each way because I just did not have the mental capacity to try to figure out what to cook once I got home from work. It also gave me motivation on the drive home - like, I know i'm having this really yummy chicken dish once I get home so I'll think about how delicious it's going to be instead of how much this traffic sucks
I know it's Tuesday already, but I like reading and sharing this kind of stuff. We are getting brand new windows this week and I'm heading out of town just me, my mom, and my 2 year old son. I would say that it makes things a bit different from the usual, but there's always SOMETHING that makes each week different from the usual. Here goes:
Monday - Yesterday we had stuffed mushrooms and red pepper fries (they are just lightly breaded with potato flakes because my 2 year old will actually eat them), plain salad Tuesday - Spinach and mushroom quesadillas (trying to use up the rest of the mushrooms), guacamole salad Wednesday - Spinach omelette (so easy I can make ahead and save for DH), BLT salad Thursday - DH is on his own. I'm crockpotting ribs with a raspberry chipotle sauce tonight for him to eat then. Friday - Baked potatoes with the leftover rib meat plus DH's own add-ons.
I won't be home until Sunday so DH is SOL on Saturday. He won't starve.
