Dd does not babyfood at all, period. Just table food.?
Most of the time she eats with us, but there are occasions such as tonight that we're not eating until very late and dd makes it quite clear to us that she is NOT going to wait to eat, LOL.
On nights like this I struggle to find something to feed her- something that's quick, easy, healthy, not overly processed (no Gerber Little Graduate meals, please), and isn't going to involve a lot of mess/preparation. She usually already has had yogurt at least once or twice by this time of day, so I generally don't want to have to repeat that again for dinner and whenever possible, I'd like dinner to include a veggie.
Tonight I opened a can of lima beans and warmed up some mixed frozen veggies.
Any other fast and healthy dinner ideas for a baby who refuses babyfood and only wants to self-feed finger foods? ?
Re: Fast meal ideas for baby?
My girls never eat what we eat at dinner time because they eat at 5:30 and the rest of us eat when they go to bed at 6:30. So either they eat leftovers from the night before or they eat something different. They also don't eat meat yet, so that makes it harder for them to eat our food, too.
At any rate, dinners always include both a fresh veggie that has been soft cooked and frozen in ziploc baggies until we need them (I usually have 2-3 kinds of veggies and 2-3 kinds of fruit in the freezer) and a fruit prepared the same way. They get cheese broken into chunks on their trays while I get the rest of their dinner ready. So, add cheese, veggies, and fruit to the below main course.
Main courses for dinner include:
- Spaghetti w/ gardenburger pieces mixed in (we keep cooked pasta in the fridge so it's very quick)
- Pasta alfredo w/ fake chicken nuggets (homemade alfredo sauce took me 5 mins to make)
- Macaroni and cheese (I make it with penne pasta, a scoop of ricotta, and sharp cheddar cheese and fresh shredded parm for them and they loooove it... it's also much less messy than traditional types since it's not a cream sauce)
- Grilled cheese (their favorite is mild organic white cheddar shredded cheese on whole wheat)
- Quesadillas (their favorite cheese is Sargento roasted garlic and asiago)
- Pizza quesadillas (cheese, spaghetti sauce, cooked in a tortilla)
- Soup with most of the broth drained out (they like pot roast with the meat pieces taken out)
- Gardenburger or fake chicken nuggets with risotto (another good one to keep in the fridge)
Those are our go-to quick and easy dinners!
I have started roasting vegetables in the oven, like sweet potatos or squash (make a big batch and you can freeze the rest). Just cut up into small chunks, toss in a little olive oil and throw in at 400 until they are soft. DS loves these and another way to serve a vegetable.
We also do toast sticks, chicken, applesauce, bagel pieces, fruit chunks, quesadillas, etc.

Beans from a can, rinsed and drained?
You can get puffed grains (rice, millet, wheat, and corn) at the local co-op -- and I also saw them at Kroger.
avocado
banana
ummmm...I'm drawing a blank. I'd also just pull out leftovers - and DS eats everything pretty cold anyway (because he plays with it for so long before eating it!), so I would necessarily re-heat much, if at all.
