I hate cooking for just myself, but DH works way too much and way to
random of hours for me to NOT cook for myself. If I don't I just
eat awful. Not a wise choice at this point in my life

I make myself lots of soups for lunches when dh is gone. Like a black bean sausage soup is my fav. Also, Teriyaki Chicken with brown rice I do a lot also. That way I can store the rice and have it a couple times that week.
personal pizzas on whole wheat pita bread with turkey pep, low fat cheese, veggies, bags of salad and add other veggies, the new healthy choice steamers are pretty good.
