Whats for lunch?

Sorry if this has been discussed before.  I feel like it has but I did a search and couldn't find anything except the cravings thread. 

What are your go-to's for lunch? I am not doing deli meat and I'm at a complete loss on what to eat for lunch. So far I've just been eating leftovers, but I would love some different ideas.  (I can't really leave work for lunch so whatever it is I need to be able to keep it here in the fridge and warm it up in the microwave, or fix it at home before I come to work).

  • two days ago I had a toasted tomato, cheese, lettuce and mayo sandwich and it was the BEST thing I`ve eaten in a while so I had one last night at 11pm and brought one today for lunch.  I think I could eat 10 more of them. SO Goooooooood.

  • Totally thought this was a random like asking what are we all eating for lunch today...lol. I had a lunchable >.< totally bad at sticking with that no lunch meat thing...

    For the most part though I've been eating like Frozen burrito...or a pot pie...you know, the terrible for you convenience foods >.<

  • Lately I have been having avocado, tomato, and cheese sandwiches with either a little mayo or a little mustard on whole wheat bread. I eat a piece of fruit and a single serving cottage cheese with it. I'm the type of person that can eat the same thing over and over for a long time, so I'll probably do this for a while!

    I've been eating toast with peanut butter and an apple or some cucumber. I'm not usually very hungry for lunch lately; I have a bunch of plain Greek yogurt and fruit in the mornings, and it's incredibly filling.

  • My go to's are Amy's frozen burritos or a big batch of cold pasta salad with tomatoes and feta. Yum! Toss some berries and a banana in the bag and I'm good to go. Also I have been all about snacking on sliced cucumbers this week. So refreshing!

    My go-to for meal planning is seasoned quinoa, roasted chicken breast, great northern beans and steamed veggies (carrots/ kale/ spinach/ green beans/ asparagus, broccoli/ etc, whatever's in season and/or looking good that weekend) when I can cook I usually do variations of this 3x per week, mixing up my spice profiles and stuff each week. It's just so easy and like, the perfect balanced lunch. Lots of leftovers too, or salads with hard boiled eggs and/ or chicken or salmon. Most of the time lately I eat fries or mashed potatoes lol! Juuuust starting to be able to cook again

     And makes me cover my eyes in shame for all the totinos pizza rolls and fish sticks I've been eating. Sometimes I heat up some peas or green beans too if I have any.  These two things are also my pregnancy craving. I never eat them if I'm not pregnant.

    Seitan banh mi with jalapeños and avocado cream sauce with a kale salad on the side. First time eating kale in about a month without throwing it up, woo.

    Go-tos though: Greek yogurt with some berries on the side, smoothies, we get a bunch of Evol frozen foods--Sriracha chicken and vegetable bowls seem to be the winner lately :)

  • @scgirl6113 girl no, I have been eating like a toddler for 2 months! In the last couple of weeks I've had more fast food burgers and tacos than I care to admit, that's like my "perfect restraint, feeling fine and making time to meal plan" go to, none of which I'm feeling at this moment  :p
  • mixed veggies and grilled chicken. Finally eating healthy again :smiley: and getting back to my old self. That first trimester was rough!

    Was home for lunch today so I made a grilled cheese with cheddar and tomato and it was amazing. 

    Otherwise I've also been having a lot of cheese/avocado/tomato sandwiches. BLTs are another go-to. When I can stomach it I'll do salad with whatever veggies I have on hand, avocado and salmon, low mercury tuna, or hard boiled eggs. There's a Greek restaurant near me that does a salad with arugula, bulgur, a ton of diced veg, some dried fruits, and grilled prawns, and I'm obsessed with it. Haven't had the energy/wherewithal to try to replicate it at home yet. 

    Been trying to mix it up among these options so as not to have too much of the same thing (especially the bacon and tuna). 

    I'm a big soup person and am looking forward to making some hearty bean and lentil soups once fall rolls around. 
  • Seriously I had potato soup (leftovers) the other day and it was super yummy I also have a one year old so Mac and cheese lol 
  • Yum ladies. Great ideas! A couple times I week I will have a bagel with cream cheese, spinach or kale, fresh basil and tomato. I'll add avocado if I have it.

    This sounds good grilled together as a panini! Lol yes, I said panini! Holla 2005 and my college days!  :D
  • I brought ziploc bags full of salad mix,  tomato slices,  shredded carrots,  and sliced cucumbers for a salad for this week at work. So far,  delicious.

    Great thread!

    The easiest I find is making soups /chillies and freezing them into portion sizes. Grab and go they thaw in your thermo bag and you reheat in the micro.

    You can also do burritos or buy rice paper and make fresh rolls with cucumber, lettuce, cilantro, shredded carrots, bell peppers, tofu really anything you are craving. Then bring a sweet and sour or peanut butter+olive oil dip.

    Mostly I'm on the go so I fill my purse with peaches, apples, almonds, bananas (although these are tricky bc they ripped fast in the purse sometimes I'll cut up celery, throw a bread roll in there it's always funny being in a line somewhere and continuously be pulling out another piece of fruit lol that was me today (2hrs getting a copy of my marriage cert)
  • I used to live on jimmy john's, but i'm straying from deli meat too. DH usually gets home from work around....3ish and he starts work around 4 am so he is usually hungry for dinner when he's home, so I make a few portions of dinner, 2 for me and 2 for him, I have one for lunch, one for dinner. He has one for dinner and then takes leftovers for lunch. Usually works out pretty well :)

    As far as what I eat? I've been trying to do some paleo type things, so it's usually a meat and a veggie. Today was some steak and asparagus. The day before was chicken and broccoli. Easy things too, because I've been feeling SO tired and under motivated to make any food.

  • I'm just getting back into meal prepping.   I eat leftovers straight or re-purpose them into green salads or grain salads.  Veggies and proteins from dinner are good chopped up and thrown in with a grain (barley, quinoa, bulgar, etc.).  I had leftover fig pizza today and it was heavenly.  It's going to go into rotation once our tree is regularly producing.  Like @KRB22 I am really looking forward to soup.  It reheats so well and is one of my favorite foods because there is so much variety.

    @ashanne88 um I'm kind of jealous of your fig tree!

    and yeah, I could probably eat soup every day. Just not when it's 90 degrees out ;)
