Married 11-11-11 TTC only since Dec 2015. I had some weight to get off. Been working hard in the gym for over a year. BFP 02-15-16 with our first IT'S A BOY!!!
-Monday- Salmon fillets, brussel sprouts, and quinoa -Tuesday- Beef and broccoli with white rice -Wednesday- We eat at the church on Wednesday nights. This week they're serving fried chicken, mac and cheese, turnip greens, and cornbread (welcome to the South, y'all!) -Thursday- We're going out for my birthday dinner (the big 3-0!) -Friday- DH is working so I'm having a grilled cheese sandwich and probably ice cream... cuz healthy.

I am also making veggie muffins for the toddler and banana oat muffins for my husband. I did really good at the grocery store and am using a lot of pantry and frezer items (saving money and trying to eat better)
@Lauren0216 My favorite recipe for pumpkin bread/muffins is on allrecipes, it's called downeast maine pumpkin bread. I usually use the modifications made in some of the comments to make it healthier (replace half the oil with applesauce, cut the sugar in half, use whole wheat flour), and it turns out great! But then I add chocolate chips lol.
- Pastelon, which is like a Puerto Rican lasagna, with plantains instead of noodles. Usually it's made with ground beef, but I have pork that needs cookin' so I'm making some homemade carnitas and using that instead. - Chopped salad with chili lime grilled shrimp - Pulled pork and cole slaw arepas - Chicken enchilada casserole
The rest of the nights we're going out... Sunday is our anniversary so we're gonna be fancy.
@Blonde1817 Thank you so much for the recipe for the muffins. I didn't get to make them until Saturday (despite running out and getting all the ingredients for them right away), but they were SOOOOO good! I couldn't believe how many muffins it made. I had to give away half to family, but they were delicious!!!
ummm... I can only plan day by day because... nausea. But tonight, I'm SUPER excited because I feel like I can eat chicken so for tonight: Spicy Curry Chicken with yellow rice- yumm-o
