What's for dinner this week?

Just got back from the grocery store so thought I would share my meal plans!  Here's what's on tap at my house this week. 

Pork chops and corn on the cob
Spanish chicken and rice
grilled ham and cheese sandwiches
burritos

  • Tonight - Shrimp Scampi 
    Taco Tuesday
    Wednesday - Burgers/steaks on the grill with corn on cob
    Thursday - BBQ chicken on grill with pasta salad 
    Friday is up in the air with my mom arriving so we might do pizza from her favorite place

    TTC only since Dec 2015. I had some weight to get off. Been working hard in the gym for over a year.

  • -Monday- Salmon fillets, brussel sprouts, and quinoa
    -Tuesday- Beef and broccoli with white rice
    -Wednesday- We eat at the church on Wednesday nights. This week they're serving fried chicken, mac and cheese, turnip greens, and cornbread (welcome to the South, y'all!)
    -Thursday- We're going out for my birthday dinner (the big 3-0!)
    -Friday- DH is working so I'm having a grilled cheese sandwich and probably ice cream... cuz healthy.

    Reading other people's meal plans does help inspire me for future weeks. Thanks, y'all! Here's our lineup...

    M-grilled chicken satay skewers with Asian cucumber salad and sticky rice
    T-salmon burgers with avocado salsa and coconut sweet potatoes
    W-ribs, grilled zucchini, cold peanut noodle salad
    R- beer can chicken, avocado & heart of palm salad, roasted squash with goat cheese
    F- I don't cook on Fridays. It's my rule. So out somewhere. 
    S-Lobster dinner!

    Saturday- Thai peanut chicken with rice and salad with balsamic vinaigrette

  • We're trying to save money right now, so I tried to really plan out our meals this week and use up some stuff we already have.  We're having ...

    Monday: Sundried tomato pesto chicken pasta and salad
    Tuesday: Chicken with quinoa mix and salad
    Wednesday: Curried peas & paneer and naan bread
    Thursday: Venison fajitas
    Friday: Spaghetti & turkey meatballs and Caesar salad
    Saturday: Turkey burgers or fish tacos 

    I also made pumpkin bread and chocolate chip pumpkin muffins today, so I'll be eating A LOT of those!

  • @Blonde1817 You have inspired me to make some pumpkin choc chip muffins tomorrow.  I think that my DD will love them.  

    We are doing our grocery shopping tomorrow, so thanks for all the ideas ladies!

  • Tonight- lemon herb salmon, mashed sweet potatoes, skillet corn

    Tuesday- Sheppard's pie, salad

    Wednesday- crockpot Zupa tuscana, grilled cheese

    Thursday- beef fajitas with peppers and onions (cheese and spinach quesadilla for the toddler)

    Friday- artichoke stuffed chicken, pesto pasta, roasted carrots

    Saturday- I'm not home


    I am also making veggie muffins for the toddler and banana oat muffins for my husband. I did really good at the grocery store and am using a lot of pantry and frezer items (saving money and trying to eat better)

  • Monday - grilled burgers, corn on the cob, Mac and cheese and green beans

    Tuesday - grilled chicken (I'm hoping I can get it down...), broccoli and rice 

    Wednesday - breakfast for dinner aka BRINNER  :)

    Thursday - switching it up and instead of pizza night were going to a pasta night 

    Friday - we have a party so whatever is there.

  • @Lauren0216 My favorite recipe for pumpkin bread/muffins is on allrecipes, it's called downeast maine pumpkin bread.  I usually use the modifications made in some of the comments to make it healthier (replace half the oil with applesauce, cut the sugar in half, use whole wheat flour), and it turns out great!  But then I add chocolate chips lol.

  • This is one of my favorite threads!!! 

    In no particular order...

     - Pastelon, which is like a Puerto Rican lasagna, with plantains instead of noodles. Usually it's made with ground beef, but I have pork that needs cookin' so I'm making some homemade carnitas and using that instead.
     - Chopped salad with chili lime grilled shrimp
     - Pulled pork and cole slaw arepas
     - Chicken enchilada casserole

    The rest of the nights we're going out... Sunday is our anniversary so we're gonna be fancy.

  • @Blonde1817   Thank you so much for the recipe for the muffins.  I didn't get to make them until Saturday (despite running out and getting all the ingredients for them right away), but they were SOOOOO good!  I couldn't believe how many muffins it made.  I had to give away half to family, but they were delicious!!!

    ummm... I can only plan day by day because... nausea. But tonight, I'm SUPER excited because I feel like I can eat chicken so for tonight:

    ETA: @agogo1 ... can I come live with you this week? Really just for dinner. All of that sounds amazing! Do you have a recipe for the squash with goat cheese?

  • Tonight I think it'll be a couple brownies, strawberry lemonade (current crave), and maybe an orange or celery & peanut butter to balance things out!
