Meal Plan Monday

What are you making this week??

I need to get to the store today and need some ideas.  I'm thinking homemade pizza one night and maybe pork tenderloin another?

We're going back to Blue Apron next week because first tri and meal planing just didn't happen.

  • I have a crock pot meal going - chicken, enchilada sauce, salsa, corn, black beans, quinoa, taco seasoning and cumin.  Letting the crock pot do the rest and hopefully when I get home tonight my house smells amazing and I can just eat and fall into bed. :smiley:

    Papa ginos veggie pocket. That or nothing if I keep feeling the way I do now. I've never been a good meal planner.

    @JBing131 that sounds so similar to my husband's favorite meal! I don't love quinoa so I skip that and pair it with rice.
  • We're having steak & cupcakes tonight because it's my dog's birthday and that's the kind of person I am.

    In no particular order, the rest of the week includes ribs, chicken & rice, ravioli and tacos.

  • Tonight we're going out as we will be checking out our new place. The rest of the week is steak and potatoes, grilled cheese, smoked pork from Costco BBQ sandwiches. 

    Im feeling better and maybe food will start tasting better :) 
  • Usually we meal plan on Sundays but have been out of town all weekend so all we've got planned is today; Taco Monday. Rest of the week TBD...

  • Stuffed Quinoa Peppers
    Baked Tilapia and veggies
    Quesadillas
    and....no clue. I need to get my shit together this week

  • Tonight: Homemade "Salad Bar"

    Other plans for this week: Leftover homemade spaghetti sauce with side salad, Black bean & corn quesadillas, and a beef pot roast

    a massive loaded baked potato tonight.  Besides that I'm clueless. I made DH do the menu this week. I'm not sure that was such a good idea

  • I've got two "real" meals planned for this week: Pasta with meat sauce  and a side of green beans for tonight and later this week, eggs with a sweet potato hash. 

    Other nights this week DH is out of town, so we'll do PB&J and chicken nuggets :)

    those are some of my go-to meals that I generally always have ingredients for and require minimal effort. I'm usually more organized about putting together a shopping list and going to the grocery store on Mondays. Decided to nap today instead ;)

    I love doing this thread on my other BMB FB group. I've gotten so many new dinner ideas. 

    Here's my week:
    Monday: grilled chicken
    Tuesday: one skillet Italian sausage pasta
    Wednesday: cookout with friends
    Thursday: Italian layer bake

    and that's as far as I got this week. 
  • Monday - Panko crusted salmon, roasted potatoes and asparagus
    Tuesday - Whole wheat spaghetti with bolognese, roasted broccoli
    Wednesday - Turkey burgers, homemade sweet potato fries and salad

    Not sure about the rest of the week yet!

  • Meal planning is possibly the worst part of my week. Thank goodness the weather is getting better and i can talk my husband into grilling. Tonight was steak. Tomorrow is probably a one pot pasta meal. We bought these frozen broccoli/cheese stuffed chicken breasts and stuffing so that's my go to when its my turn to cook. So little effort and something that feels home cooked.

    I am so uninspired this week. 
    Tonight we'll be doing sesame chicken, rice and salad.  Tomorrow I'm out working so DH and the girls are on their own.  Wednesday is T-ball so something quick and easy.  Thursday DH and I are at a rehearsal dinner.  Friday I'm positive we'll do takeout.

  • My DH made that same exact recipe last week! (It was the meal I ruined because I forgot to turn on the crock pot, so we had to make a do over a few days later). At the time I couldn't eat it, I had a few bites and just couldn't handle the flavor. It wasn't bad, but very rich and for whatever reason my tastebuds couldn't tolerate it. I was sad because it looked so perfect.

    I have a meal plan this week! I'm starting to feel better and have more energy...I'm proud of myself for planning!

    Tonight was supposed to be chicken tortilla soup but we got home late from the children's hospital...DD was doing a food challenge for peanuts and had an anaphylactic reaction requiring epinephrine, multiple doses of Benadryl, oral steroids, and Zyrtec. So we had leftovers and fresh berries for dinner.

    Tuesday: Slow cooker chicken tortilla soup
    Wednesday: Chicken nachos
    Thursday: Chicken/cheddar/avocado paninis
    Friday: Baked cod, roasted red potatoes, broccoli
  • @shevaCC - can you share your slow cooker chicken tortilla soup recipe? I have a great one that I can do on the stove, but every time I've tried a slow cooker recipe it gets a really weird flavor.

  • For weeks I have been eating pasta with butter and parm cheese with a salad just about every night. The pasta is good but I have to force the salad. My husband has basically been on his own, eating salad with me and supplementing something a little more exciting than buttered pasta.

    This week I am going to try to have soup instead of pasta. We'll see how it goes tonight...

    @shevaCC I hope your little one is feeling better! DH has a lot of food allergies including peanuts and I'm nervous our kids will too. 
  • I use GatheredTable.com for meal planning. It's been working pretty well for me, it even generates a shopping list. You can use their recipes and add your own. 

    Dinner this week:
    Monday: rosemary salmon with asparagus
    Tuesday: Parmesan breaded pork chops with rosemary red potatoes
    Wed: beef barley stew in the slow cooker with cornbread
    Thurs: leftover pork chops with summer squash pasta
    Friday: leftover beef barley stew
    Saturday: going to a cookout
    Sunday: roast chicken with homemade rolls

    I think I need to plan a little more simple menu for next week, this one was a bit over budget.

  • We've been very lazy. This week, we're baking a bunch of marinated chicken and just having that with sautéed veggies every night. Now that I'm in the second trimester, I really want to start getting more variety, especially incorporating fish. Maybe next week.

    @lrg14, thank you. She woke up in a great mood and is doing much better today. I hope you don't end up dealing with food allergies in your kids -- they're scary! But I'm hopeful they're close to having real treatments in the next few years, in time to help my DD, and your kids if needed. There are several allergy moms on our board (me and @BmcD2016, maybe others?) if anyone ends up in our same boat.

    Except I put in raw frozen chicken breasts, a little less salt, and I buy tortilla chips at the store -- they recommend making your own, but I don't have time for that craziness. I really like this recipe and nearly everything comes from a can/the freezer (maybe that's a bad thing, but is great for convenience).

    Oh! It's not in the recipe but you'll want shredded cheese and maybe sliced avocado to garnish.
  • I am so proud that I actually planned and bought groceries this week!!! It's seriously been horrible eating out since the beginning of pregnancy because I've been so tired but finally got that 2nd trimester energy back! woop woop! this week is teriyaki salmon with rice and stir fry veggies, noodles with roasted red peppers Andouille sausage and alfredo sauce, crockpot buffalo shredded chicken to put on buns with slaw and bleu cheese, and I am trying out this Campbell's Hawaiian crockpot marinade with pork and pineapples to put on those sweet Hawaiian rolls.
