What's For Lunch?!

OK I need ideas/inspiration...breakfast and dinner aren't issues for finding something that will fill me up, but I'm having a problem figuring out different options for lunch! I'd LOVE to just make deli sandwiches whenever I wanted to again but obviously that's out of the picture, and my only other go-to's I can come up with are: take-out ($$$), pb&j, pb&banana sandwich, and sometimes leftovers. What is everyone else eating for lunch?! I can cook/make things during the day so that's an option but need suggestions for still being quick and easy, and tasty! :smile:

    I'm currently obsessed with grilled cheese and ham sandwiches. And I don't feel guilty because the ham gets heated up in the process. SO GOOD.

  • I usually go to the grocery store before work on Monday and stock up on cheese and crackers, bread, almond butter, veggies and dip, fruit salad, and deli meat/cheese.  I usually get a container of soup too.  Friday is my cheat day and I order out.  I have a solid collection of cereal for breakfast too.

  • @LGW2015I've also been on a grilled cheese and ham sandwich kick lately. But other options that are quick and easy are rice and beans with melted cheese, avocado, and tomato, plus I usually add a bit of tamari(soy sauce). Also pasta and red sauce is pretty easy and quick. My other go to for quick and no cook is hummus wraps with cucumber, tomato, and sometimes avocado.

  • Tofu and greens (today it's spinach) stuffed shells with marinara and olives. Mmmm. I try to make a big pan of some type of pasta bake at the beginning of the week so I can split it between DH's and my lunches. Also having some Dreaming Cow strawberry pomegranate yogurt which is the best yogurt I have ever had.

    Today? Half a box of Kraft dinner.

    I did a much better job of eating lunch my last pregnancy, when I was working. I would go to the grocery store and get all the fixings for sandwiches or salads and keep them in my office (along with a box of cookies, of course). I don't consider the risks of deli meat high enough to worry about, since you're more likely to get listeria from bagged salad anyway, but if that's out for your own peace of mind, you could consider cheese sandwiches, tuna (safe to consume 1 can a week, I believe), egg salad, BLTs, hummus, avocado... If you have a full kitchen available to you, you may have even more options. I would often do wraps with chicken strips, lettuce, sliced pepper, cheese, and dressing.

  • I'm spending an exhorbitant amount of money and consuming disgusting amounts of carbs going out to eat lunch almost every day. Should probably pay attention to these suggestions. I'm also in the ever-craving never-eating lunch meat camp so alternatives are great to see, thanks!
  • I've been doing basically anything leftover in a wrap lol. We had kebabs recently, so I threw the meat in a wrap with some hummus and spinach and called it a day. We had spicy garlic shrimp the other day, so I threw that in a tortilla with some salsa and spinach and there you go lol. You could always cook chicken, save it for the week and reheat it for wraps each lunch too. I have GD though, so I'm limited and must say, I AM getting tired of wraps.

    In the same boat with the going out and carbs.

    I do always love some pasta with butter and Parmesan cheese. It's easy and inexpensive. Literally just ate that for lunch today.

  • I'm just going by your subject line.  I'm having a Chick-fil-A Chicken Sandwich, no pickle, light mayo with medium fries, and a medium unsweet tea.  It'll take me about 2 hours to eat it!

    When I'm really rushing I make a quick salmon salad from canned salmon (Costco sells a great canned wild caught one). Throw in a bit of mayo (must be Duke's!) and salt and pepper if I really need to be speedy. I add celery, bell pepper, whatever else I have around if I have more time. I like it on crackers or on whole wheat bread with some cucumber and spinach.

  • Ugh, I suck at lunch. I usually have leftovers from dinner or a PBJ sandwich. 
  • I'm a terrible person to ask. I work at the mall. I try to avoid McDonald's and usually end up at Panda Express or CPK.

  • Yesterday was a giant salad. Normally it's leftovers or whatever of quick to cook when DS is down for a nap.

    I basically don't eat until like 11am then snack and graze until dinner instead of breakfast and lunch. It's not the best but it's working.

    You can have all the deli meat you want guilt-free if you microwave it before you put it on the sandwich.

  • I usually make a container of chicken salad at the beginning of the week and that makes a few sandwiches through the week. Add some chips and fruit and i'm good to go. I have also been on a carrot and hummus kick so sometimes I will just pack that along with some sugar free Apple sauce, cheese and crackers or peanut butter pretzels and some trail mix and that along with a banana and yogurt for breakfast typically get me through the work day.

    I eat tuna and crackers at work a lot. Taco salads are delicious and easy to make ahead
