What's for dinner?

im getting so bored with cooking and can't find anything I want, inspire me! ;)

Re: What's for dinner?

  • Cheese stuffed shells or chicken tacos.  I'm not sure which just yet.  I have requests for Tacos every Tuesday from my 10yr old.

  • This week were having lemon chicken, sloppy joes with sweet potatoe fries, pineapple salsa chicken and caprese pasta
  • Fish tacos, falafel, pasta Alfredo with shrimp. I like vegetarian/seafood dishes the best but my husband likes red meat so we'll have meatloaf or steaks and mashed potatoes one night too. @VexedMommy cheese stuffed shells sounds amazing!!

For lunch I had beef bulgogi, and for dinner we're having chicken caesar salad. I think I'll put celery, grapes and carrots in it, and either jicama or pears.

We had grilled pork chops, rice and veggies tonight. Tomorrow is Santa Fe Chicken and Thursday is enchiladas. Then Friday is pizza for lunch (becoming a tradition for DH and I to do pizza every other Friday)
  • Cauliflower Mac and cheese with pulled pork in it
  • Spaghetti. Really original, lol

    I'm having a brownie.....lol
Haha, the other night hubby and I rented movies and got candy, by the time dinner rolled around we had both filled up on chocolate. Nothing like having candy for dinner to make you feel like an adult!!!

Pinterest has been my BFF to find healthy recipes lately. I'm not eating dairy right now so that's adding some complexity to meal planning, but here's a few of the last recipes I cooked:

    asian chicken salad
    moo shoo pork
    southwestern lentil bake
    greek chicken salad
    Zoodle (zucchini "noodles") lo mein
  • So I ended up with tacos, because EVERYTHING IS AWESOME when you give in to your 10yr old's dreams of living in Lego World where every Tuesday is Taco Tuesday.  Stuffed shells are happening tonight.  Not coincidentally because I am bringing them to a work potluck on Thursday.  lol.

Some Lego Movie induced philosophy from the 10yr old.  How do we know we're not someone's lego or baby doll?  What if this whole world was designed by little kids to play with?  Luckily it was bed time and so I asked her to think about it some more and we'd discuss her thoughts on it tonight.  It's awesome to think that 10yrs ago my wild child philosopher was doing what Bridget is now.

Last night we had a quiche with ham and onions, and a side salad. Tonight we will have  Tian, which is basically just cooked rice spread on a 9x13 pan, a layer about 1/4 inch thick, topped with tomato, zucchini and onion slices then topped with olive oil, some herbs of your choice and baked at 400 for about 30-40 minutes.
  • Teriyaki salmon with broccoli and quinoa.  Tomorrow is vegetarian tacos for Cinco de Mayo.

Simple soy sauce chicken and rice! Chicken legs, salt and pepper, put em to cook on a skillet for 5 minutes each side, put soy sauce over each side, cook until chicken is peeling off the bone. Super yummy. Super easy. I'm all about that life these days lol.
  • My mother in law brought us huge prime rib steaks with mashed potatoes and veggies. I needed it. My husband loves chicken so steak is a nice treat for a change.
  • So, I only got about 3 hours of sleep last night?  LOL, so change of plans, DH is bringing home Qdoba instead!  I'm stumped for tomorrow (I baked some tasty banana bread yesterday, can I make that into a dinner?) but MIL is cooking a giant turkey with all the trimmings on Saturday, so that should put a ton of leftovers in the fridge.  I don't eat meat but it'll make DH happy.
